When life calls for cake pops, let this be your go-to recipe. Feel free to change the cake and frosting flavors to whatever is your favorite. Just follow this easy technique and you will have perfect cake pops for a crowd (or the next bake sale).

One 15.25-ounce box yellow cake mix, plus required ingredients
1 cup vanilla frosting, plus more as needed
20 ounces white candy melting wafers
Sprinkles or cookie crumbles, for decorating, optional

Steps:

  • Prepare and bake the cake according to the package directions for a 9-by-13-inch pan. Let cool completely.
  • Break the cake into pieces and place it in a food processor. Add the frosting and process until the mixture forms a ball and pulls away from the sides of the bowl, about 30 seconds. If the mixture doesn't come together, add more frosting 1 tablespoon at a time until it holds its shape.
  • Using a 3/4-ounce scoop, form the mixture into 46 balls and put them on a baking sheet. Refrigerate until firm, about 30 minutes.
  • Meanwhile, place the candy wafers in a microwave-safe bowl and melt according to package directions. Dip a half inch of the tip of a lollipop stick into the candy and then stick the tip halfway into a cake ball. Repeat with the remaining balls and sticks. Refrigerate the cake pops until completely chilled, about 1 hour.
  • Microwave the candy again until melted and pour it into a tall narrow glass. Dip each cake pop into the candy and let any excess run off. If decorating, turn the cake pop upright and sprinkle with sprinkles while the coating is still wet. Stick the finished pops in two 9.8-by-11.8-inch Styrofoam blocks block and let set completely.

Water, vegetable oil and eggs called for on cake mix box

1 can (8.4 oz) Betty Crocker™ Cupcake Icing petal pink
White decorating decors, as desired
1 can (6.4 oz) Betty Crocker™ Easy Flow black decorating icing
1 can (6.4 oz) Betty Crocker™ Easy Flow white decorating icing
1 can (6.4 oz) Betty Crocker™ Easy Flow red decorating icing

Steps:

  • Heat oven to 350°F. Grease bottom of 2 (8-inch) heart-shaped foil pans. Make cake batter as directed on box. Pour into pans. Bake as directed on box for 2 (8-inch) rounds.
  • Cool 10 minutes. Run knife around sides of pans to loosen cakes; remove cakes to cooling racks. Cool completely, about 1 hour.
  • For bride cake, place 1 cake layer on serving plate. Frost cake with white cupcake icing, leaving V-shaped area at top of cake. Frost V-shaped area with pink cupcake icing. Pipe lace design on dress and V-shaped edge of dress with white cupcake icing, using writing tip. Use white decorating decors to make pearl necklace.
  • For groom cake, place remaining cake layer on another serving plate. Frost cake with black decorating icing, leaving V-shaped area at top of cake. Frost V-shaped area with white decorating icing. Pipe black buttons and lapels with black decorating icing. Pipe red bow tie on shirt with red decorating icing. Store loosely covered at room temperature.

Everyone loves cake pops! They are simple to make, and you can create anything for any occasion. They are also nice small bites of dessert instead of large slices of cake or pie. Can be made up in partial batches and the remaining ingredients stored for a few weeks.

1 (15.25 ounce) package yellow cake mix (such as Betty Crocker®)
1 cup water
3 eggs
½ cup vegetable oil
1 (16 ounce) package prepared chocolate frosting
18 lollipop sticks
1 (14 ounce) bag chocolate candy melts
1 (.75 ounce) tube decorating icing

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat cake mix, water, eggs, and oil in a bowl using an electric mixer on low speed for 30 seconds. Increase speed to medium and beat for 2 minutes more. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 28 to 33 minutes. Cool completely, at least 1 hour.
  • Crumble cake into a large bowl. Stir frosting into cake crumbles until mixture is sticky but not too smooth. Chill in refrigerator, at least 30 minutes.
  • Roll cake mixture into 1 1/2-inch balls and arrange on a baking sheet. Place 1 lollipop stick into each ball.
  • Melt about 1/4 cup chocolate candy melts in a microwave-safe bowl in the microwave, about 20 seconds. Dip each cake pop in the melted chocolate. Repeat melting chocolate and dipping remaining cake pops. Decorate pops with decorating icing.

1 package strawberry or yellow cake mix (regular size)
FROSTING:
1 cup shortening
1 cup butter, softened
8 cups confectioners' sugar
7 to 8 tablespoons 2% milk, divided
2 teaspoons clear vanilla extract
1/2 cup baking cocoa
2 teaspoons grated lemon zest
1/2 teaspoon lemon extract
DECORATIONS:
1 cup dark chocolate candy coating disks, melted
1/2 cup vanilla candy coating disks, melted
1 large marshmallow
1/2 cup green candy coating disks, melted
White pearl dragees, flower sprinkles, white edible glitter and colored sugar
Small piece of tulle

Steps:

  • Prepare and bake cake batter according to package directions for cupcakes. Cool completely., In a large bowl, beat shortening and butter until light and fluffy. Add the confectioners' sugar, 6 tablespoons milk and vanilla; beat until smooth., Transfer half of the frosting to another bowl. Add baking cocoa and 1-2 tablespoons remaining milk to achieve desired consistency. Add lemon zest and extract to remaining frosting., Using melted chocolate, pipe 12 bow ties onto waxed paper. For bride's crown, pipe a 1-1/4-in. ring with melted vanilla coating. Immediately arrange dragees onto ring., For groom's hat, spoon a 1/2-teaspoon round of melted chocolate onto waxed paper into a 1-3/4 inch circle. Cut a 1/4-in. slice from the top of marshmallow. Steps:

  • 1. Bake cake as directed on box for a 9 X 13 cake. Cool completely and crumble into a large bowl. 2. Mix up to 3/4 of a recipe of frosting into the cake crumbs using a large spoon. You won't need the rest of the icing. 3. Roll mixture into 1.25-inch balls and place on a wax paper covered baking sheet. You can also use an ice cream scoop and then roll the balls. 4. Place cake balls in the freezer for about 15 minutes so they will firm up. Then transfer them to the refrigerator to remain chilled and avoid freezing. 5. Melt white candy coating in a heatproof plastic bowl so that the coating is at least three to four inches deep for easier dipping. Melt in the microwave in 30-second intervals on low, stirring in between. Repeat until melted and smooth. 6. Dip the tip of a lollipop stick into the melted white candy coating and insert stick into the cake ball. Dip the entire cake pop into the bowl of melted candy coating. Dip and remove in one motion without stirring. Make sure the entire cake ball is covered. If your coating is too thick, you can add a little vegetable oil to help thin it and make it easier to work with. 7. Remove and allow any excess coating to fall off the pop and back in the bowl. 8. Place in a Styrofoam block to dry (grooms). Place (brides) on a cookie sheet with the stick up to dry. 9. For grooms, melt dark chocolate candy coating in microwave, as above. Dip at an angle to make "tuxedo jacket". Allow any excess coating to fall off the pop. Place on a cookie sheet with the stick up to dry. 10. Decorate brides with remaining white coating to make bridal gown look. Decorate groom with a bow tie to match wedding colors. Tie ribbon bow to the end of each pop.

1 (8 ounce) package cream cheese, softened
2 (8 ounce) packages white candy melts
24 lollipop sticks
1 tablespoon multicolored candy sprinkles, or to taste

Steps:

  • Line a baking sheet with parchment paper.
  • Combine cookies and cream cheese in the bowl of a stand mixer and mix until well blended.
  • Form mixture into twenty four 1 1/2-inch balls. Place on the prepared baking sheet and secure a lollipop stick in each one. Chill in the refrigerator for 10 minutes.
  • While the cake pops are chilling, place candy melts in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until melted, 3 to 5 minutes.
  • Remove cake pops from the refrigerator. Dip each one in the melted candy coating, allowing any excess to drip off. Return to the lined baking sheet and sprinkle immediately with sprinkles. Let sit until coating has completely set, about 10 minutes.
