SIMPLE MUSHROOMS ON TOAST
Buttery fried mushrooms with crispy bacon and poached eggs on toast. The simple things are sometimes the best!

Steps:
- Put a pan of water on to boil for your poached eggs - How to poach the perfect egg
- Heat your frying pan to a medium heat and add your butter
- Slice your mushrooms
- Once the butter is melted and sizzling, add the mushrooms and make sure they're all coated in butter
- Cut the bacon rashers in to small pieces
- Put your eggs in the pan to poach
- While the eggs are cooking, fry the mushrooms until they're tender and fully cooked, and then add the bacon to the pan with the mushrooms. The bacon will cook very fast in the butter as the bacon fat melts. Cook the bacon until it's crispy enough for your tastes
- Toast your bread
- Add your mushrooms and bacon on top of the toast, add your poached eggs and sprinkle with parsley
EASY CREAMY MUSHROOM TOAST
Easy creamy mushroom toast is perfect for breakfast, lunch and dinner and can be made in no time at all for a delicious, easy vegetarian meal.

- Heat a large frying pan over high heat then add a tablespoon or two of olive oil.
- Fry the mushrooms in batches, until well-browned all over.
- Add all the mushrooms back to the pan with their resting juices and add the garlic, herbs and chilli flakes. Cook for 1-2 minutes.
- Add the butter and lemon juice and stir well while the butter is melting to create a creamy sauce then take off the heat. Season to taste.
- Serve the creamy mushrooms on toast smeared with cream cheese (optional).

I came up with this recipe while trying to decide what to serve for breakfast. I was going to do mushroom and cheese omelets, and then changed my mind. This recipe has a lot going for it... It's easy to make, tastes great, and has beautiful presentation. So, you ready... Let's get into the kitchen.

Steps:
- PREP/PREPARE
- Gather your Ingredients (mise en place).
- Add the butter and oil to a small sauté pan over medium heat.
- When the foaming subsides, add the mushrooms.
- Allow them to cook until they begin to soften and brown, about 6 - 8 minutes.
- Chef's Note: While the mushrooms are cooking, season with some salt, pepper, and the optional cayenne (if using).
- Use a slotted spoon and place the mushrooms on a piece of toast.
- Immediately, return the sauté pan to heat, and add the egg.
- Chef's Note: There should be plenty of oil in the pan from cooking the mushrooms. Plus by using the same pan it will add a bit of flavor to the egg.
- Cook until the white is fully set, and the yolk is still runny about 2 - 3 minutes.
- Add the egg to the top of the mushrooms.
- PLATE/PRESENT
- Drizzle with some hollandaise sauce (if using), and maybe a bit of chopped dill. Enjoy.
- Keep the faith, and keep cooking.

One of my Grams favorite ways of serving poached eggs. I love this easy, delicious recipe and serve on special occasions, such as Christmas. I hope you try it sometime, it sure beats just plain old poached eggs. Enjoy!

- Saute mushrooms in 2 tablespoons of butter, until tender.
- Sprinkle with flour and seasonings, stirring constantly for 1 minute. Add milk & Worcestershire sauce and cook, stirring constantly. Boil for a couple minutes or until thickened.
- Poach eggs.
- Place egg on slice of hot toast.
- Cover over with sauce. Enjoy, it's delicious!
