Steps:
- Mix ingredients together until well blended.
- Hand form into small balls.
- Bake at 300° up to 15 minutes. (These will not brown).
- While balls are still warm, roll into powdered sugar.

Pecans, graham crackers, brown sugar, maple syrup, butter, vanilla, and chocolate candy coating. Can add bourbon to the pecan mixture for a boozy treat. Steps:
- Combine chopped pecans, graham cracker crumbs, brown sugar, vanilla, and maple syrup. Stir to combine. Add melted butter only until the mixture comes together and can be easily shaped into balls. (Depending on how you chopped your ingredients, you may have some leftover butter.)
- Shape pecan mixture into 1-inch balls.
- Place balls on a parchment-lined baking sheet and place in the refrigerator or freezer for an hour.
- Melt almond bark according to package directions.
- Remove balls from refrigerator and dip into the chocolate almond bark.
- Place dipped balls on parchment or wax paper and let sit until set.
GRANDMA'S PECAN BALLS (FROM AUNT KATIE)
I always thought the origin of these cookies was Germany, and my paternal Grandmother set me straight when I asked for the recipe today - it came from Aunt Katie (who isn't really my Aunt, she's my godmother). In any case, here are my most favourite cookies that Grandma makes - I'll have to post the rest of the authentic German recipes she gave me years ago as well... she's been making these since I was kneehigh to a grasshopper!

- Preheat oven to 350.
- Cream butter with sugar.
- Add flour and pecans, mix well.
- Roll into balls, about the size of a large gumball, and place on a cookie sheet (I prefer to line mine with parchment, but I'm sure cooking spray would do.).
- Bake at 350 for 20 minutes, or until very lightly browned.
- While still warm, roll in superfine sugar - this is important because the dough does not have much sugar.

- 1. for the bread balls: whisk the water, egg, garlic, parsley, basil, and pepper together in a large bowl. Add the bread and cheese and mix with your hands until well combined. With wet hands, form the mixture into 1 1/2 inch bread balls. You should have about 30 bread balls.
- 2. Heat 1/4 cup of the oil in a Dutch oven over medium-high heat until shimmering. Add half of the bread balls and cook until well browned on the first side, two to four minutes. Do not move the bread balls until they are well browned on the first side. Continue to cook until they are well browned on all sides, about five minutes longer, turning as needed. Transfer the bread balls to a bowl. Add the remaining 2 tablespoons oil to the pot and return it to medium heat until the oil is shimmering. Repeat with remaining bread balls.
- 3. For the sauce: pour off all but 1 tablespoon of the oil from the pot and return to medium heat until shimmering. Add the onion and 1/2 teaspoons salt and cook, stirring occasionally, until softened 5 to 7 minutes. Stir in the tomato paste, sugar, garlic, oregano, red pepper flakes, and 1/4 teaspoon pepper and cook until the tomato paste begins to Brown, 2 to 4 minutes. Add the water, tomatoes, and tomato sauce. Bring to a simmer, cover and cook, stirring occasionally, for one hour.
- 4. Return the bread balls to the pot, cover and continue to simmer until the sauce is thickened slightly and the bread balls are tender, about 30 minutes longer. Off the heat, stir in the parsley and season with salt and pepper to taste. Serve, sprinkling each portion with Parmesan and basil.

- Add flour, mix to a stiff paste.
- Add processed pecans.
- Roll into 30 small balls.
- bake at 180 degrees C (350 F) for 10 minutes.
- Dust cooled balls with icing sugar.
BREAD CRUMB PECAN BALLS
This is a recipe I have not tried but found in an old (1950) cookbook called "500 Delicious Dishes From Leftovers" in response to a reques for healthy type recipes that use bread crumbs. This one sounds good and easy!

- Add the sugar and the extract and mix well.
- Mix the nuts and breadcrumbs together and fold them into the eggs/sugar mixture.
