BRAISED STUFFED BITTER MELON

Number Of Ingredients 15

1 tablespoon black beans fermented
1/2 pound lean pork
1/4 cup Chinese parsley
2 stalks scallion
1 clove garlic
1 tablespoon soy sauce
1 tablespoon oil
2 teaspoons cornstarch
1/2 teaspoon sugar
1/2 teaspoon salt
dash pepper
4 , medium bitter melon
4 tablespoons oils
1/2 clove garlic
1/2 cup water

Steps:

  • 1. Soak fermented black beans. 2. Mince pork, together with parsley, scallions and garlic. Then blend well with soy sauce, oil, cornstarch, sugar, salt and pepper. 3. Cut each bitter melon in 1 1/2-inch slices. With a sharp knife, scoop out the spongy white pulp and seeds at the center of each slice. 4. Stuff pork mixture into centers, letting meat bulge out slightly (it will shrink during cooking). 5. Heat remaining oil. Brown bitter melon slices lightly on both sides then remove from pan. 6. Mash soaked black beans crush remaining garlic. Add to pan add water, and bring to a boil, stirring. 7. Return stuffed bitter melon and bring to a boil again.   • Prepare shiitake. Soak dried shiitake mushrooms in 1 cup of hot water (~ 1 hour) or cold water (~ 8 hours) until soft and spongy, then squeeze, remove the stems, and chop into small pieces. Reserve the soaking liquid for the braising sauce.
  • Prepare bitter melons. Remove the ends from the bitter melon and cut into 1-inch slices. Remove the seeds with a spoon/knife to get bitter melon rounds. Sprinkle liberally with salt and let rest for 15 minutes. Wash under cold water and drain. Set aside.
  • Prepare the stuffing. In mixing bowl, combine all stuffing ingredients and let marinate for 15 minutes.
  • Stuff bitter melons. With a teaspoon, stuff the bitter melon rounds with stuffing mixture, taking care to ensure the bottom part will lay flat while the top part has a dome shape. Repeat until all bitter melon rounds have been stuffed.
