Pork Chops braised with tomatoes, anchovies and rosemary. Don't worry, the anchovies will disintegrate and are only for flavoring the sauce.

1 1/2 lbs pork chops (2 bone-in pork loin chops about 1 1/2 inch thick)
3/4 teaspoon kosher salt, more for seasoning pork
1/2 teaspoon fresh ground black pepper, more for seasoning pork
2 tablespoons extra virgin olive oil
1 red onion, halved and thinly sliced
3 large fresh rosemary sprigs
2 garlic cloves, minced
2 lbs plum tomatoes, roughly chopped (preferably a mix of red and yellow)
6 anchovy fillets
polenta, egg noodles (optional) or rice, for serving (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Pat pork chops dry with paper towels and generously season with salt and pepper.
  • Heat a large ovenproof skillet over medium high heat; sear chops in 1 tablespoon of oil until well browned, about 3 to 4 minutes per side; transfer to a plate.
  • Add remaining tablespoon of oil to skillet and cook onion and rosemary, stirring occasionally, until onions begin to caramelize and turn golden, about 5 minutes; add garlic and cook another minute.
  • Stir in tomatoes, anchovies, remaining salt and pepper and cook, stirring occasionally, until tomatoes break down, about 8 minutes.
  • Return pork chops to skillet and spoon sauce over chops.
  • Cover skillet and place in preheated oven and cook until internal meat thermometer reads 145 degrees F, about 15 minutes.
  • Serve over polenta, egg noodles, or rice.

This is the sort of thing to make when you long for a satisfying, braised beef pot roast, but you don't have the several hours required. Here, pork chops are seared until they're mahogany in color, then tossed in with a quick sauce of tomatoes, garlic, rosemary and anchovies. The whole mess goes in to the oven for about 15 minutes until the chops are cooked through. Don't be put off by the anchovies; they will magically melt into the sauce.

Six 6-ounce boneless center-cut pork chops, trimmed of any fat
1 teaspoon Dijon mustard
1 tablespoon red-wine vinegar
2 tablespoons light-brown sugar
1 tablespoon Worcestershire or soy sauce
1 teaspoon garlic salt
Sprigs fresh parsley, for garnish

Steps:

  • Heat oil in a large heavy-bottomed skillet over medium-high heat. Brown pork chops on all sides, 2 to 3 minutes per side.
  • Meanwhile, in a medium bowl, stir together mustard, vinegar, sugar, Worcestershire sauce, and garlic salt with 1/3 cup water. Pour over pork chops. Reduce heat, cover, and cook until tender, about 1 hour.

2 tablespoons olive oil
1/2 cup water
1 tablespoon Worcestershire sauce
2 teaspoons dried parsley flakes

Steps:

  • In a large skillet, over medium-high heat, brown pork chops in olive oil, turning to brown on both sides.

1 teaspoon dried thyme

  • In a large resealable plastic bag, combine flour, salt and pepper. Spiced Butter-Basted Pork Chops image

These pork chops are juicy inside, crusty outside and draped in a smoky butter sauce, but they won't set off your fire alarm. They're cooked low and slow with a few key ingredients. First, thick chops are coated with salt and sugar, which promotes browning, then they're cooked over moderate heat. Smoked paprika and fennel seeds season the butter that's added, but feel free to swap in dried herbs or other ground or whole spices. Basting the chops with this infused butter creates a rich crust quickly so that the interior stays tender. The key is to watch the temperature of your skillet: Lower the heat if things are moving along too quickly, and the chops will achieve what you're after in time.

2 teaspoons light brown sugar
Kosher salt (Diamond Crystal)
1 tablespoon neutral oil (such as canola or grapeseed)

1 1/2 teaspoons smoked paprika
1 teaspoon fennel, cumin or coriander seeds, crushed

Steps:

  • Pat the pork dry and season all over with the sugar and 1 teaspoon salt. In a large (12-inch) cast-iron skillet, heat the oil over medium. Add the pork chops, cover with a lid or baking sheet, and cook until browned on the outside and the internal temperature is between 110 and 120 degrees, 4 to 5 minutes per side. Reduce the heat if burning or sizzling wildly.
  • Using tongs, stack both chops on top of one another, then grab both chops together and hold upright to sear the fat caps until crisp, about 1 minute. Lay the chops back down in one layer and add the butter, paprika and fennel seeds. Season the butter with salt and pepper. Tilt the skillet and baste the pork by spooning the melting butter and drippings over the pork until the internal temperature registers 130 degrees, 1 to 2 minutes per side.
  • Transfer the pork chops to a lipped plate and pour the butter over top. Let rest for 5 minutes before slicing and serving with a spoonful of the butter.
