Seared Strip Steaks with Braised Peppers and Onion image

Lean cuts of meat like strip steak are best cooked with a brief sear; they stay tender while taking on a crisp, smoky exterior. Here, you saute a few peppers and onions, then braise them in tomato sauce to make a rich ragu, sopping up all the flavor left in the pan from the beef.

2 boneless New York strip steaks (each 1 inch thick; about 1 1/2 pounds total)
Kosher salt and freshly ground pepper
2 teaspoons dried oregano
1 1/2 teaspoons ground coriander
3 tablespoons extra-virgin olive oil
2 red, orange, or yellow bell peppers (stems, ribs, and seeds removed), thinly sliced lengthwise (3 cups)
1 large onion, halved and thinly sliced (3 cups)
2 basil sprigs, plus fresh leaves, sliced if large, for serving
1/4 cup white balsamic vinegar
1 can (6 ounces) tomato sauce (3/4 cup)
Steamed rice, for serving (optional)

Steps:

  • Pat steaks dry. Generously season with salt and pepper; sprinkle with oregano and coriander. Let stand 5 minutes.
  • Heat a large cast-iron skillet over high. Swirl in 1 tablespoon oil. Add steaks in a single layer. Cook, undisturbed, until a brown crust forms on bottoms, about 4 minutes. Flip and cook, undisturbed, until a crust forms on other sides and a thermometer inserted into thickest parts reads 125 degrees for medium-rare, about 3 minutes more. Transfer to a plate.
  • Reduce heat to medium; wipe any blackened bits from bottom of skillet with a paper towel. Add remaining 2 tablespoons oil, bell peppers, onion, and basil sprigs; season with salt and pepper. Cook, stirring occasionally, until vegetables are golden and tender, 18 to 20 minutes. Add vinegar; cook until reduced by half, about 30 seconds. Add tomato sauce, accumulated juices from steak, and 1/3 cup water. Simmer, stirring a few times, until reduced and thickened slightly, about 2 minutes. Remove and discard basil.
  • Thinly slice steak against the grain. Serve over rice, with braised vegetables and basil leaves.

A delicious side dish to accompany roasted chicken, pork or fish. It also works well as a vegetarian entree with whipped potatoes. The original recipe is from Cooking Light and appeared in 1995. This is my tweaked version. Fennel, for those less familiar, is a bulb shaped vegetable that lots a little bit like a fat celery, with dill-type fronds, and a anise-licorice flavor.

2 teaspoons olive oil
4 cups thinly sliced fennel bulbs (about 1/4-3/8 inch thick)
2 1/2 cups sliced onions (half moons)
1 cup red bell pepper, strips
3/4 cup fat free chicken broth or 3/4 cup water
1/4 teaspoon salt
1/4 teaspoon fennel seed
1/8 teaspoon fresh coarse ground black pepper
1 -2 garlic clove, minced
2 -3 tablespoons thinly sliced basil
1 1/2 tablespoons chopped fennel leaves

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat. Add fennel, onion, and bell pepper and saute 6 minutes, stirring occasionally. You want to make sure all of the veggies get a chance to be on the bottom of the pan. At this stage, you will have a little bit of caramelization, but if you see too much browning your heat is probably too high.
  • Place the fennel seeds on a cutting board and gently press on them with the back of a chef's knife or rolling pin. You want to lightly break the seeds to release their flavor but not break them to bits or powder. Add broth and next four ingredients (broth through garlic).
  • Cover, reduce heat, and simmer 15-20 minutes or until vegetables are tender. Stir in basil and fennel fronds.

This base of slowly stewed peppers and onions can serve as the foundation for a wide variety of dishes: Add seared flank steak or pork butt, capers, olives, raisins and canned tomatoes, and simmer it into deliciously shreddable Cuban ropa vieja, to enjoy with black beans, rice and braised greens. Slice Italian sausage, sear it along with chicken legs, then add 1/2 cup each of brown sugar and apple cider vinegar, plus a couple of cups of these peppers and onions, and cook until the sauce reduces to a sweet-tart glaze as the meat slowly braises. (Try that on top of boiled yellow potatoes.) Bloom freshly ground ancho, pasilla or other dried chile in oil, then add this sauté, a few cups of cooked black beans and chickpeas, plenty of Mexican oregano and some canned tomatoes to simmer into a rich vegan chili, garnished with roasted sweet potato. But for the simplest use, just slather these peppers on top of a hot dog in a buttered, toasted bun.

Steps:

  • Heat oil in a large Dutch oven over medium until shimmering. Add peppers, onion, garlic, cumin, bay leaves, a large pinch of salt and a few grinds of black pepper. Cook, stirring occasionally, until vegetables are completely tender and the mixture is not runny or watery, about 30 minutes. Adjust heat as necessary to prevent any browning.
  • Allow mixture to cool, then store in sealed containers in the refrigerator for up to 1 week.

This is so tasty and healthy, and perfect for a Fall day. I have seen this recipe numerous places, including Vegetarian Times and a cook book I own. Not sure where it originated. I usually serve it with bread, but it would also be good with pasta, rice, or polenta.

1 lb firm tofu
1 tablespoon olive oil
2 medium onions, thinly sliced
3 medium bell peppers, 1 each red, yellow and green, thinly sliced
3 ounces mushrooms, thinly sliced
1 medium garlic clove, minced
1/4 cup fresh flat-leaf parsley, chopped
1 tablespoon fresh marjoram or 1 tablespoon basil, chopped
1 teaspoon fresh thyme, chopped or 1/2 teaspoon dried thyme
1/2 cup dry white wine
20 nicoise olives, halved and pitted
1 teaspoon salt
1/2 teaspoon fresh ground pepper
2 tablespoons sherry wine vinegar or 2 tablespoons red wine vinegar
1 tablespoon olive oil
1 tablespoon tomato paste
1 teaspoon Dijon mustard
2 medium garlic cloves, minced
1/4 teaspoon fresh ground pepper
1/2 teaspoon soy sauce or 1/2 teaspoon tamari

Steps:

  • Preheat oven to 375°F
  • Drain tofu very well and cut into triangles or slabs about 11/2 inches wide. Place in ungreased pie plate and bake until slightly firm and liquid is released, about 20 minutes. Pour off any liquid. Set tofu aside; maintain oven temperature at 375°F
  • In large skillet, heat oil over high heat. Add onions and cook, stirring often, 2 to 3 minutes.
  • Add bell peppers, mushrooms, 1 clove garlic, parsley, marjoram and thyme and cook, stirring often, 2 to 3 minutes.
  • Reduce heat to medium and cook, stirring occasionally, until onions are tender, about 6 minutes.
  • Stir in wine, olives, salt and pepper and cook, until vegetables are tender and coated with syrupy sauce, about 8 minutes.
  • Coat 8 x 8-inch square or 2-quart casserole with cooking spray. Add vegetable mixture, then gently arrange tofu pieces in mixture.
  • Make sauce: In small bowl, whisk together vinegar, oil, tomato paste, mustard, garlic, pepper and soy sauce or tamari.
  • Pour sauce over vegetables and tofu.
  • Cover and bake until heated through, about 25 minutes. Serve hot.

I was making a pizza crust with beer and our son dumped the beer in the frying pan with the green peppers and onions, instead of the bowl with the pizza dough makings and a recipe was born!

2 green sweet peppers, seeded and diced
1 large white onion, peeled and diced
4 tablespoons olive oil
1 (12 ounce) can beer
1 teaspoon salt or 1 teaspoon salt substitute
1 teaspoon white pepper
6 potatoes, peeled and shredded
1/4 cup shredded parmesan cheese (optional)
1 tablespoon lemon juice (see note) (optional)

Steps:

  • In large frying pan, add green peppers, onions and 2 tblsp olive oil. Heat to moderate heat. Stir a few times until onions and peppers are starting to get transparent. Add 6 oz of beer and cover, turn heat down and simmer about 10 minutes.
  • Take out of pan and set aside in a bowl.
  • To dry frying pan add 2 tblsp olive oil. Heat to moderate high, add shredded potatoes. Note: You may squeeze the potatoes to release and drain the starch and then add 1 tblsp lemon juice to potatoes so they do not turn as brown before cooking.
  • Fry without turning. Use spatula to raise edges and raise slightly towards the middle.
  • Turn heat down after the underside starts to turn medium brown. It is best to use non stick or heavy commercial skillet.
  • Add the other 6 oz of beer, tip the pan and raise the edges so the beer goes on the underside of the potatoes.
  • Add the salt and pepper sprinkling on the top of the potatoes.
  • Add the reserved cooked peppers and onion mixture. Cover,cook low heat 10 to 15 minutes.
  • Take frying pan to the table and cut in wedges and serve with spatula. Sprinkle with cheese for individual taste only.
  • Note: My family used ketchup as a condiment for this recipe. Use a very mild mellow lite beer.

I love this recipe and have made it many times. I'm not sure where it came from but it has a heavenly Italian flavour and is very easy to prepare. I have made it for company and have had rave reviews.

1 tablespoon olive oil
1 medium red pepper, seeded and quartered
1 medium green pepper, seeded and quartered
1 small onion, diced large
1 garlic clove, finely chopped
salt
fresh ground black pepper
1/3 cup tomato sauce
1/4 cup of coarsely grated parmesan cheese

Steps:

  • Preheat oven to 400 degrees.
  • In a medium size skillet saute the peppers and onion in the oil over medium heat for 4- 5 minutes.
  • Season with salt and pepper to taste.
  • Transfer the peppers and onion to an ovenproof casserole dish and sprinkle with the garlic.
  • Pour tomato sauce over and sprinkle with the parmesan cheese.
  • Place the casserole dish, uncovered, in the preheated oven and bake for 15 minutes.
  • This is lovely served with grilled steak.

12 ounces whole onion or 11 ounces sliced, ready-cut onions (2 to 2 1/2 cups)
1 teaspoon olive oil
1 1/2 pounds red, yellow, orange and/ or purple peppers or 18 ounces sliced, ready-cut peppers (4 1/2 to 5 cups)
3 tablespoons sherry vinegar
1/4 teaspoon salt
Freshly ground black pepper

Steps:

  • Slice whole onion in processor.
  • Heat nonstick skillet until it is very hot; reduce heat to medium high and add oil. When it is hot, add onions and saute while preparing peppers.
  • Wash, trim and seed peppers; slice in food processor and add to onions, cooking for a couple of minutes until they begin to soften.
  • Add vinegar, salt and pepper; cover and continue cooking over medium-low heat for about 10 minutes, until peppers are soft.

1 1/2 lbs lean round steak, cut into strips
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper

1 3/4 cups reduced-sodium beef broth
1 cup canned tomato (with juice)
1 medium onion
1 clove garlic, smashed

  • Coat strips of meat with flour mixed with salt and pepper.

2 quarts water
2 carrots, chopped coarse

1 teaspoon ground cumin

1/4 teaspoon whole black peppercorn

Steps:

  • To braise beef: In a 5-quart kettle combine all braising ingredients and simmer, uncovered, 1 1/2 hours, or until beef is tender. Remove kettle from heat and cool meat in liquid 30 minutes. Transfer meat to a platter and cover. Strain braising liquid through a colander, pressing on solids, into a bowl. Return braising liquid to kettle and boil until reduced to 3 cups, about 30 minutes. Stew may be made up to this point 1 day ahead. Cool braising liquid completely and chill it and the beef separately, covered.
  • In kettle cook green bell peppers and onion in 2 tablespoons oil over moderate heat, stirring, until softened.
  • While vegetables are cooking, pull meat into shreds about 3 by 1/2 inches. To onion mixture add shredded meat, 2 cups braising liquid, tomatoes with juice, tomato paste, garlic, cumin, oregano, and salt and pepper to taste and simmer, uncovered, 20 minutes.
  • While stew is simmering, in a large skillet cook red and yellow bell peppers in remaining 2 tablespoons oil over moderate heat, stirring occasionally, until softened. Stir peppers into stew with enough additional braising liquid to thin to desired consistency and simmer, uncovered, 5 minutes. Stir in peas and olives and simmer, uncovered, 5 minutes.
  • Serve ropa vieja with yellow rice.
  • To make the yellow rice: In a heavy 3-quart saucepan heat oil over moderately high heat until hot but not smoking and sauté cuminseed 10 seconds, or until it turns a few shades darker and is fragrant. Stir in saffron and rice and sauté, stirring, 1 to 2 minutes, or until rice is coated well. Stir in water and salt and boil rice, uncovered and without stirring, until surface of rice is covered with steam holes and grains on top appear dry, 8 to 10 minutes more. Remove pan from heat and let rice stand, covered, 5 minutes. Fluff rice with a fork.
