Hawaiian-Style Braised Pork with Stir-Fried Cabbage image

3 1/2 pounds boneless country-style pork spareribs, cut into 1 1/2-inch cubes
3 tablespoons vegetable oil
6 garlic cloves, chopped
4 green onions, chopped
2 tablespoons chopped peeled fresh ginger
1 14-ounce can low-salt chicken broth
1/3 cup soy sauce
1 tablespoon dark brown sugar
1/4 teaspoon dried crushed red pepper
1/4 teaspoon Chinese five-spice powder
1 1/2 tablespoons cornstarch
Stir-fried Cabbage

Steps:

  • Sprinkle pork with salt and pepper. Heat oil in heavy large pot over medium-high heat. Add 1/3 of pork to pot and sauté until brown, about 6 minutes; transfer to bowl. Repeat with remaining pork. Add garlic, green onions, and ginger to pot; sauté 1 minute. Return pork and any juices to pot. Add 1 1/2 cups broth, soy sauce, sugar, crushed red pepper, and five-spice powder; bring to boil. Reduce heat to medium-low, cover and simmer until pork is very tender, about 1 hour 15 minutes. Stir remaining broth and cornstarch in cup to dissolve; mix into pork. Simmer until gravy thickens, stirring occasionally, about 3 minutes. Season with pepper. (Can be made 1 day ahead. Cool slightly and chill. Rewarm over low heat.) Serve pork with cabbage.

This can be served with mashed parsnips and celery root, or it's also good served this over rice, quinoa, or risotto, all with good results.

1 Tbsp brown sugar
2 tsp red hawaiian sea salt (or kosher salt)
2 tsp paprika
1 tsp black pepper
1/2 tsp ground cumin
1/2 tsp ground coriander
1 1/2 lb pork shoulder or boston pork butt
1/4 c canola oil, divided
1 small onion, chopped
3-inch fresh ginger, sliced
4 clove garlic, crushed
1 c pineapple juice
2 c low-sodium chicken broth or stock
SPECIAL EQUIPMENT NEEDED
butcher's twine

Steps:

  • 1. In a small bowl, combine the brown sugar, Hawaiian salt, paprika, cumin, coriander and black pepper.
  • 2. Cut the pork into 4 equal portions, then tie each cut with some butcher's twine. Lightly sprinkle each piece with 1 1/2 teaspoons of the spice mixture.
  • 3. Preheat the oven to 300°F.
  • 4. Heat 3 tablespoons canola oil in a large onen-proof Dutch oven or stockpot over medium heat. Sear each cut of pork on all sides, then transfer them to a plate. Add the remaining 1 tablespoon canola oil to the same pot along with the onions, ginger, and garlic. Sauté for 2 minutes. Add the pineapple juice and chicken stock, and return the pork to the pot. Cover put the pot into the oven to braise until the pork is fork tender, about for 2 1/2 hours.
  • 5. Remove the pork from the pot, and arrange the pieces on a baking sheet. Sprinkle each piece with the remaining 1/2 teaspoon of the spice mixture and put them under a low broiler until their tops are brown and crisp but not burned, about 2 minutes. Transfer the pork to a serving platter and serve with a drizzle of braising liquid.

2 tablespoons coriander seeds, toasted
2 tablespoons cumin seeds, toasted
One 4-pound boneless pork picnic shoulder, sliced in half along the grain
Kosher salt
Extra-virgin olive oil
1 fennel bulb, sliced
1 large onion, sliced
Pinch crushed red pepper
4 cloves garlic, smashed and finely chopped
2-inch piece fresh ginger, peeled and finely grated
2 cups dry white wine
1/4 cup Dijon mustard
3 bay leaves
1 bundle fresh thyme
3 to 4 cups chicken stock

Steps:

  • Using a spice grinder, grind the coriander and cumin seeds until they are a fine powder.
  • Preheat the oven to 375 degrees F.
  • Sprinkle the pork shoulder with the ground spices and salt, then tie each piece so they cook evenly.
  • Coat a Dutch oven with olive oil and bring to a high heat. Brown the first pork on all sides. Remove the pork from the pan and reserve. Ditch the fat in the pan and give a few drops of new oil. Repeat with the second pork and remove.
  • Lower the heat to medium and toss in the fennel and onions and season them with salt and a sprinkle of crushed red pepper. Cook the onions and fennel until they are soft and very aromatic, 7 to 8 minutes. Add the garlic and ginger and cook 2 to 3 minutes longer.
  • Add the wine and reduce by half. Stir in the mustard and add the bay leaves and thyme. Return the pork to the Dutch oven and add stock to the pan until it comes halfway up the side of the pork. Add salt if needed. Bring the liquid to a boil, cover and put the Dutch oven in the preheated oven.
  • After 1 hour, turn the pork over and add more liquid to the pan if the liquid level has gone down. Cover and return to the oven for 1 hour.
  • Turn the pork back over and return to the oven without the lid and cook for 45 more minutes. The liquid should concentrate.
  • Remove the pan from the oven, remove the pork and reserve for 15 minutes, tented with aluminum foil. Skim any excess fat from the pan and reduce the pan juices, if needed.
  • Slice the pork and serve with onions, fennel and juices.

CAUCASUS-STYLE BRAISED PORK SHOULDER

4 large garlic cloves
3 teaspoons kosher salt
2 teaspoons coriander seeds
1 teaspoon fenugreek seeds
3/4 teaspoon dried hot red-pepper flakes
4 tablespoons olive oil
1 (5-pound) bone-in pork shoulder roast (also called picnic roast), trimmed of excess fat and skin discarded
1 large red onion, chopped
2 cups water
1/2 cup chopped fresh cilantro
1 tablespoon red-wine vinegar
Special Equipment
an electric coffee/spice grinder

Steps:

  • Mince garlic, then mash to a paste with 2 teaspoons kosher salt using a heavy knife. Grind coriander and fenugreek seeds and red-pepper flakes to a powder in grinder, then stir together with garlic and 2 tablespoons oil in a small bowl. Make 2-inch-deep slits all over meat with a small sharp knife and push some of paste into slits. Rub remaining paste all over meat. Put pork in a bowl and marinate, covered and chilled, at least 8 hours.
  • Bring meat to room temperature, about 1 hour.
  • Put oven rack in lower third of oven and preheat oven to 350°F.
  • Heat remaining 2 tablespoons oil in a wide 5- to 6-quart heavy pot over moderately high heat until hot but not smoking, then brown pork on all sides, turning with tongs and a large kitchen fork, about 8 minutes total. Transfer pork to a large plate and cook onion in fat remaining in pot, stirring occasionally and scraping up brown bits, until beginning to brown, 7 to 8 minutes. Return pork to pot and add water and remaining teaspoon kosher salt. Bring to a boil, then cover tightly with lid and transfer to oven. Braise, turning meat once, until very tender, about 3 hours. Cool pork in pan juices completely, uncovered, about 1 1/2 hours, then chill, covered, at least 8 hours.
  • Put oven rack in lower third of oven and preheat oven to 350°F.
  • Remove fat from surface of pan juices and reheat pork (with pan juices), covered, in oven 1 hour. Transfer pork to a platter using cleaned tongs and large fork. Stir cilantro, vinegar, and table salt and pepper to taste into pan juices and serve with pork.

You can use any cut of pork you desire. I like pork shoulder because it has more flavor. This cooks slowly and does not require a lot of attention,it's easy to make, and even better if you prepare this a day ahead, the flavors really intensify, just rewarm over low heat. Because of the soy sauce, add the salt in at the end of cooking. If possible make this with only green onions. Serve this with rice, this is a wonderful pork dish!

4 lbs pork shoulder, cut into about 1-inch cubes
salt and pepper
1 teaspoon garlic powder (can use more)
1/4 cup vegetable oil (more as needed)
1 -2 tablespoon chopped fresh garlic
10 green onions, chopped
2 tablespoons minced fresh ginger
1 (14 ounce) can chicken broth
1/3 cup soy sauce (can use more)
1 -2 tablespoon dark brown sugar
1 teaspoon crushed red pepper flakes (or to taste)
1/4 teaspoon five-spice powder
2 tablespoons cornstarch (for a thinner texture use only 1-1/2 tablespoons cornstarch)

Steps:

  • Season the pork with salt, pepper and garlic powder (season the pork cubes with a small amount of salt or omit the salt and just season with pepper and garlic powder).
  • Heat oil in a large heavy pot over medium-high heat.
  • Add in about 1/3 of the pork and saute until brown (about 6-7 minutes) transfer to a bowl and continue with the remaining pork.
  • Add in the fresh garlic, green onions and ginger; saute for 1 minute.
  • Return the pork to the pot along with any juices from the bowl or plate.
  • Add in 1-1/2 cups broth, soy sauce, brown sugar, crushed red pepper flakes and five-spice powder; bring to a boil.
  • Reduce heat to medium-low; cover and simmer until the pork is very tender (about 90 minutes or more or less).
  • Stir/whisk in remaining broth and cornstarch together in a small cup; mix into simmering sauce.
  • Simmer until the gravy thickens, stirring occasionally (about 3-4 minutes).
  • Season with salt and pepper.
