1 pound dried Great Northern beans
1 pound bacon, chopped
1 onion, chopped
2 jalapenos, chopped
1/4 cup tomato paste
1/4 cup dark brown sugar
1/4 cup molasses
Vegetable broth
1/4 teaspoon cayenne pepper
1 teaspoon black pepper
2 teaspoons kosher salt

Steps:

  • Heat oven to 250 degrees F.
  • Soak beans in a plastic container overnight in just enough cold water to submerge them completely.
  • Place a cast iron Dutch oven over medium heat and stir in the bacon, onion, and jalapenos until enough fat has rendered from the bacon to soften the onions, about 5 minutes. Stir in the tomato paste, dark brown sugar, and molasses.
  • Drain the beans and reserve the soaking liquid. Add the drained beans to the Dutch oven. Place the soaking liquid in a measuring cup and add enough vegetable broth to equal 4 cups of liquid. Add the liquid to the Dutch oven and bring to a boil over high heat. Add in cayenne, black pepper and salt. Give them a stir and cover with the lid. Place the Dutch oven in the oven for 6 to 8 hours, or until the beans are tender.

1 1/2 t. garlic cloves, minced
1/2 cup barbecue sauce
1/2 cup brown sugar, packed
1 (15 ounce) can chili beans, do not drain
1 (15 1/2 ounce) can dark red chili beans, do not drain
1 (15 1/2 ounce) can dark red kidney beans, do not drain
1 (15 ounce) can black-eyed peas, do not drain
1 (15 ounce) can pinto beans, do not drain
1 (16 ounce) can great northern beans, do not drain
to taste salt
to taste pepper
1 pod jalapeno pepper, seeded, minced (optional)
to taste sweet pepper, chopped green chilies (optional)

Steps:

  • Mix. Cook in Crock Pot for 3 to 4 hrs. on low.

This is a very popular recipe (as the name implies) The Boy Scouts. I had it at least a couple if times as a teen and finally saw and episode on PBS about comfort foods that had this recipe. It's easy to make and feeds a bunch. It is way up there on the comfort food list. Enjoy! Note: The Scout leader usually prepares this recipe for The Boy Scouts at camp in a Dutch oven but they found the slow cooker works just as well at home. Even though this dish is mostly beans, the boys love them and always eat as much as is made. This is a true Boy Scout classic - easy and delicious.

2 lbs Italian sausage or 2 lbs tofu
2 cups sweet onions, diced
3 -6 garlic cloves, minced
1 cup barbecue sauce
1/2 cup brown sugar or 1/2 cup brown sugar substitute, packed
1 (15 ounce) can chili beans, do not drain
1 (15 ounce) can yellow wax beans, do not drain
1 (15 1/2 ounce) can dark red chili beans, do not drain
15 1/2 ounces dark red kidney beans, do not drain
1 (15 ounce) can lima beans, do not drain (your choice)
1 (15 ounce) can black-eyed peas, do not drain
1 (15 ounce) can pinto beans, do not drain
1 (16 ounce) can great northern beans, do not drain
1 (14 ounce) can green beans, do not drain
to taste salt
to taste pepper
1 -2 pod jalapeno pepper, seeded, minced (optional)
to taste sweet pepper, chopped green chilies (optional)

Steps:

  • In a large skillet, brown the sausage/tofu/or meat of your choice, onion and garlic. Place this mixture, the barbecue sauce, sugar and all the beans WITHOUT draining their liquid into the slow cooker/dutch oven. Season with salt and pepper and optional ingredients of your choice . Cover and simmer for 1 hour on high or 3 hours on low.
  • Note: Low is best! You can scorch the beans on the bottom when cooked on high.
  • This is always better the next day when the flavors have had a chance to blend. This can be canned, frozen or refrigerated for days.

I learned this recipe in the Boy Scouts and it is the perfect recipe for guys living on their own. It's quick and easy and very difficult to mess up. If you have a slow cooker, let it stew for a day or so. You'll be ready to go out and herd cattle after eating this! Serve with large pieces of crusty white bread.

1 pound ground beef
1 (28 ounce) can stewed tomatoes
2 (15.25 ounce) cans whole kernel corn
2 (15 ounce) cans whole green beans
1 (15.5 ounce) can canned red beans, drained and rinsed
1 onion, chopped
½ teaspoon dried oregano
¼ teaspoon cayenne pepper
salt and pepper to taste

Steps:

  • Brown the ground beef in a skillet over medium heat until no longer pink. Drain off any excess grease.
  • In a stock pot or Dutch oven, combine the ground beef, tomatoes, corn, green beans, red beans, and onion. Season with oregano, cayenne pepper, and salt and pepper to taste. Cover and simmer for at least 50 minutes over medium to low heat. The longer it cooks, the better it gets!
