WHOLE BONELESS LAMB LOIN

1/4 cup olive oil
Pistachio-Mint Couscous, recipe follows
1 boneless lamb loin, split lengthwise (about 2 pounds)
Salt
Essence, recipe follows
2 long sprigs fresh rosemary
1/2 teaspoon ground coriander
2 teaspoons ground cumin
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
1 (10-ounce) box couscous
1/2 teaspoon salt
2 1/4 cups boiling water
3 tablespoons roughly chopped shelled pistachios, plus 2 tablespoons whole, lightly toasted
1/4 cup chopped packed fresh mint leaves
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • On a large cutting surface, lay out lamb, cut side up so that it folds open. Sprinkle the inside with salt and Essence. Place a rosemary stalk inside. Tie lamb up with another rosemary stalk so that it is rolled and secure. Season the outside of the lamb with more salt, and the coriander and cumin.
  • In large saute pan over high heat, add olive oil and heat until hot, but not smoking. Add lamb and sear, on all sides until golden brown, about 5 minutes, being careful not to let the rosemary burn. Transfer to oven and continue cooking for another 20 minutes, or until medium rare. Remove from oven and set aside for 10 minutes while preparing couscous.
  • Slice into 1-inch pieces. Serve atop couscous.
  • Combine all ingredients thoroughly.
  • Recipe from "New New Orleans Cooking", by Emeril Lagasse and Jessie Tirsch, published by William Morrow, 1993.
  • In a large bowl, combine the couscous and salt. Pour the boiling water over the mixture, cover, and let stand until the water is absorbed and the couscous is puffed, about 6 minutes. Uncover and fluff with a fork. Add the pistachios, mint, and oil. Adjust seasoning, to taste. Serve hot.

Crab Cakes with Creole Mustard Aioli and Grilled Corn, Red Onion & Red Pepper Salad image

1/4 cup mayonnaise
1 tablespoon Creole mustard
2 teaspoons Worcestershire sauce
1 1/2 teaspoons seafood seasoning, such as Old Bay
1 large egg
Juice and zest of 1/2 lemon
1 small bunch chives, thinly sliced
2/3 cup saltine cracker crumbs
1 pound jumbo lump crabmeat, picked over for shells and cartilage
Canola oil, for cooking
2 ears corn, husked
1 red onion, peeled and sliced into rounds
1 red bell pepper
1 cup cilantro leaves, chopped
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 tablespoons red wine vinegar
Pinch crushed red pepper flakes
Kosher salt
1 cup arugula
1/2 lemon, juiced
1/2 cup mayonnaise
2 tablespoons Creole mustard
10 cornichons, finely diced plus 2 tablespoons cornichon juice
1/2 shallot, finely diced
Kosher salt

Steps:

  • For the crab cakes: To a large bowl, add the mayonnaise, Creole mustard, Worcestershire sauce, seafood seasoning, egg, lemon zest and juice and chives. Mix thoroughly to combine. Add the saltine cracker crumbs. Add the crabmeat. Gently fold the crab into the mixture, being careful not to break up the meat too much.
  • Form the mixture into four equal-sized crab cakes. Preheat a large saute pan over medium-high heat with some canola oil until it shimmers. Gently place the crab cakes into the pan and cook until golden brown, 3 to 4 minutes. Flip, and cook until golden, 2 to 3 minutes.
  • For the salad: Preheat a grill pan over high heat. Place the corn and onions onto the grill pan and grill until charred, 5 to 6 minutes. Flip, then cook until charred and the onions are softened, another 4 to 5 minutes. Remove the corn kernels from the cobs and dice the grilled onions. Set aside.
  • Place the red bell pepper onto an open flame on your stovetop. Cook, flipping occasionally, until completely black and charred, about 5 minutes. (If you don't have a gas stovetop, you can broil the pepper in the oven on high, turning occasionally, until charred.) Transfer to a bowl and cover with plastic wrap to steam until the skin pulls away, about 10 minutes. Remove the skin from the bell pepper and rinse under water to ensure all of the black char is removed. Remove the stem, ribs and seeds from the roasted pepper and dice.
  • To a large bowl, add the corn kernels, onions, roasted peppers, cilantro, 2 tablespoons of olive oil, red wine vinegar, red pepper flakes and kosher salt to taste. Toss to combine. In a separate bowl, add the arugula, lemon juice, a drizzle of olive oil and kosher salt to taste. Toss to combine.
  • For the aioli: To a bowl, add the mayonnaise, Creole mustard, cornichons, cornichon juice, shallots and kosher salt to taste. Mix to combine.
  • To serve, place the arugula onto each plate and nestle some of the corn, red onion and red pepper salad next to it. Top with a crab cake and drizzle some of the aioli around the crab cake. Enjoy!

Boxty is essentially potato cakes using both grated and mashed potatoes. The word comes from the Irish bac-stai, for the traditional cooking of potatoes on the hob (bac) over an open fire (stai.) Margaret Johnson ("The New Irish Table") gives this recipe for a boxty from a restaurant in Killarney, County Kerry, using only grated potatoes. She recommends serving it with bacon and cabbage or Irish stew.

1 lb boiling potato, peeled
1 large onion, finely chopped
2 eggs, beaten
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
1/4 teaspoon nutmeg, freshly grated
2 tablespoons flour
2 -4 tablespoons unsalted butter

Steps:

  • Line a large bowl with a piece of muslin or cheesecloth, or a clean linen towel.
  • Using the large holes of a box grater, grate the potatoes into the bowl.
  • Squeeze the cloth to extract as much of the starchy liquid as possible.
  • Discard the starchy liquid, return the potatoes to the bowl, and stir in the onion, eggs, salt, pepper, and nutmeg.
  • Add the flour and mix well.
  • In a large skillet, melt 2 tablespoons of the butter over medium heat.
  • Drop the potato mixture, 1 tablespoonful at a time, into the skillet; do not crowd the pan.
  • Flatten each cake with a spatula and cook for 3 to 4 minutes on each side, or until lightly browned and crisp.
  • Transfer the cakes to a baking sheet and keep warm in a 200-degree oven.
  • Repeat until all the mixture is used, adding more butter as necessary.
  • Serve immediately.

1 cup all-purpose flour
1 cup leftover mashed potatoes
1 egg
1 tablespoon skim milk
salt and pepper to taste
¼ cup olive oil

Steps:

  • Toss the grated potatoes with flour in a large bowl. Stir in mashed potatoes until combined. In a separate bowl, whisk together the egg and skim milk; mix into the potatoes. Season to taste with salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat. Drop in the potato mixture, forming patties about 2 inches in diameter. Fry on both sides until golden brown, 3 to 4 minutes per side. Drain on a paper towel-lined plate. Serve warm.

½ pound potatoes, peeled and grated
1 ¾ cups all-purpose flour
1 teaspoon baking soda

  • Preheat oven to 450 degrees F (230 degrees C). Scrub the unpeeled potatoes and prick them several times with a fork; place onto a baking sheet.
