Bow Ties with Sausage, Tomatoes and Cream image

A friend gave this recipe to me a few years back, and my family can't seem to get enough of it. It sounds strange with cream in it, but that just enhances the flavor and texture. This is a very easy recipe.

1 (12 ounce) package bow tie pasta
2 tablespoons olive oil
1 pound sweet Italian sausage, casings removed and crumbled
½ teaspoon red pepper flakes
½ cup diced onion
3 cloves garlic, minced
1 (28 ounce) can Italian-style plum tomatoes, drained and coarsely chopped
1 ½ cups heavy cream
½ teaspoon salt
3 tablespoons minced fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Stir in onion and garlic, and cook until onion is tender. Stir in tomatoes, cream, and salt. Simmer until mixture thickens, 8 to 10 minutes.
  • Stir cooked pasta into sauce, and heat through. Sprinkle with parsley.

We like things a bit spicy at our house, but if you prefer something a bit milder, you can always use mild or sweet Italian sausage as I'm sure the dish will turn out just as good.

8 ounces dried bow tie pasta
3/4 lb fresh hot Italian sausage
1 medium sweet pepper, cut into bite-size pieces
1/2 cup vegetable broth (beef or chicken broth works too)
1/4 teaspoon coarse black pepper

Steps:

  • Cook pasta according to package directions.
  • Meanwhile, cut sausage into bite-size pieces.
  • In a large skillet cook sausage and peppers over med-high heat until sausage is brown.
  • Drain off fat.
  • Add broth & pepper to skillet.
  • Bring to a boil.
  • Reduce heat and simmer uncovered for 5 minutes.
  • Remove from heat.
  • Drain pasta and toss with sausage mixture.

1/2 c vegetable or beef broth
1/4 tsp coarsley ground black pepper
1/4 cup snipped fesh flat-leaf parsley

Steps:

  • Cook pasta according to package directions; drain. Return pasta to saucepan Meanwhile, cut the sausage into 1-in pieces. in a large skillet, cook sausage and sweet peppers over medium-high heat until sausage is brown. Drain fat Stir the broth and pepper into skillet. Bring to boiling. Reduce heat and simmer, uncovered, for 5 min. Remove from heat. Pour over pasta; add parsley. Toss gently to coat. Transfer to a warm serving dish.

2 green bell peppers, chopped
8 ounces farfalle pasta
½ cup beef broth
¼ teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
