GRILLED BOURBON ONIONS

Number Of Ingredients 8

2 large sweet onions, such as Vidalia, sliced into 1/2- to 3/4-inch-thick rounds
Vegetable oil, for brushing
Kosher salt and freshly ground pepper
1/2 cup bourbon
2 tablespoons ketchup
1 tablespoon packed dark brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar

Steps:

  • Preheat a grill to medium. Brush the onions with vegetable oil on both sides and season with salt and pepper. Grill, covered and turning occasionally, until tender and charred, 15 to 20 minutes; roughly chop.
  • Combine the bourbon, ketchup, brown sugar and Worcestershire sauce in a large skillet. Simmer over medium-high heat until the sauce has thickened and the alcohol has burned off, about 3 minutes. Stir in the balsamic vinegar and add the onions. Season with salt and pepper. Serve warm or at room temperature.

3 large white onions, julienne
1/2 cup olive oil
1/2 cup balsamic vinegar
3 pounds sour cream
5 ounces herb flavored cheese (recommended: Boursin)
1/2 cup chopped chives
1 lemon, juiced
Salt and freshly ground black pepper

Steps:

  • In a thick bottomed pan over medium-low heat caramelize the onions with the olive oil, stirring often (saute for a long period of time to release the natural sugars). This will take about 15 to 20 minutes so be patient. Use small amount of water to help release the sugars that will stick to the bottom of the pan. Add all other ingredients and bring up to a warm temperature*. Remove from the stove and puree with a hand blender or food processor. Season with salt and pepper.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

¼ cup bourbon
1 (.87 ounce) package McCormick® Onion Gravy Mix
2 tablespoons butter
1 ½ cups finely chopped red onions
1 cup sour cream
½ cup mayonnaise
2 tablespoons chopped green onions

Steps:

  • Mix water, bourbon and Gravy Mix in small bowl until well blended. Set aside.
  • Melt butter in large skillet on medium heat. Add onions; cook and stir 10 minutes or until softened and golden brown. Stir gravy mixture into skillet. Bring to boil. Reduce heat and simmer 5 minutes or until thickened. Remove from heat. Let cool.
  • Mix sour cream and mayonnaise in medium bowl. Stir in cooled onion mixture. Sprinkle with green onions. Refrigerate at least 1 hour. Serve with chicken fries or chips.

Once the onions have cooled, rough chop them briefly. Fold into the mixture and add the lemon juice and sugar. Season with salt and pepper, to taste. Serve the dip cold with crudité and chips.
