This is a delicious combo of about five recipes I found while researching for my first Thanksgiving ham. The empty baking pan afterwards was my best compliment!

1 (5 pound) boneless ham
⅓ cup bourbon whiskey
½ cup packed brown sugar
1 (8 ounce) can crushed pineapple in juice
½ cup honey
3 cloves garlic, minced
1 ½ cups water
1 (8 ounce) can pineapple rings

Steps:

  • Score the surface of the ham, making diamond shapes about 1/2-inch deep. Place the ham in a large, resealable bag. Add the bourbon, brown sugar, crushed pineapple, honey, and garlic to the bag; refrigerate at least 8 hours, turning the bag over several times while marinating.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Transfer the ham and marinade to a large baking dish; pour the water into the dish. Attach the pineapple rings around the surface of the ham with toothpicks.
  • Bake in preheated oven until the internal temperature reaches 165 degrees F (95 degrees C), basting occasionally with the sauce in the pan, 90 to 105 minutes.

1 fully cooked bone-in ham (8 to 10 pounds)
3/4 cup bourbon, divided
2 cups packed brown sugar
1 tablespoon ground mustard
1 tablespoon orange marmalade
1/8 teaspoon ground coriander

Steps:

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Brush with 2 tablespoons bourbon. Bake, uncovered, at 325° for 2 hours. , In a small bowl, combine the brown sugar, mustard, marmalade, coriander and remaining bourbon; spoon over ham. Bake 30 minutes longer or until a thermometer reads 140°. Let stand for 15 minutes before slicing.

2 cups freshly squeezed orange juice
1/2 cup freshly squeezed lime juice
1/2 cup dark brown sugar
1/4 cup smoked maple bourbon, such as Knob Creek
1/4 cup pure maple syrup
1/4 cup apple cider vinegar
1 large habanero, 3 slits cut into it
One 3- to 4-pound spiral ham

Steps:

  • Combine the orange juice, lime juice, brown sugar, bourbon, maple syrup, vinegar and habanero in a large saucepot. Bring to a boil then reduce to a simmer. Simmer until reduced and slightly thickened, about 30 minutes. Remove from the heat and cool completely (the mixture will thicken as it cools). Remove the habanero and set aside until ready to use. This can be done ahead of time.
  • Preheat the oven to 425 degrees F.
  • Put your ham in a roasting pan and cook until gently warmed through, about 45 minutes. Then begin basting it was the glaze until it's nicely caramelized, another 20 minutes. Remove the ham, tent with foil and let rest for 10 minutes before slicing. Serve with any remaining glaze.

Using a bone-in ham is important because bone intensifies the flavor of the meat. A bourbon-glazed ham is an Easter dinner classic. Each serving should include a bit of crust; its sweetness complements the saltiness of the meat.

1/2 fully cooked smoked bone-in ham (about 7 pounds), not spiral cut
3/4 cup packed light-brown sugar
1/4 cup Dijon mustard
2 tablespoons bourbon, cider, or water

Steps:

  • Preheat oven to 350 degrees. Trim all but 1/4 inch fat from the ham, and score remaining fat in 3/4-inch diamonds, just deep enough to reach the meat without cutting into it. Place ham, fat side up, on a rack in a roasting pan.
  • In a small bowl, mix together brown sugar, mustard, and bourbon. Brush 1/4 of the glaze over the ham. Bake the ham, brushing with remaining glaze every 30 minutes, until heated through (140 degrees on a meat thermometer), about 2 hours.
  • Let ham stand about 15 minutes before carving. Using a knife with a long blade, carve downward to the bone. Run the knife horizontally through the ham, along the top of the bone, to release the slices.

2/3 cup bourbon or whiskey
1 cup clover honey
1/3 cup molasses
1/2 cup 100 percent fruit orange marmalade
Nonstick cooking spray
1 (5-pound) whole bone-in smoked ham, fully cooked, unsliced
1/8 cup whole cloves

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium saucepan, heat bourbon, honey, molasses, and marmalade over low heat for 15 minutes or until reduced by half, stirring occasionally. (When measuring honey and molasses, spray measuring cup with nonstick cooking spray to keep measurements accurate.) Set aside.
  • With a sharp knife, cut a diamond pattern on the fatty part of the ham. Stud whole cloves in each diamond, at points where lines cross. Spread half of the bourbon glaze over the ham and roast for 30 minutes, uncovered. Baste occasionally with remaining glaze and continue to roast for another 15 minutes. Let ham stand for 20 minutes before slicing.

A wonderful Sunday or holiday dinner. Served with scalloped potatoes and homemade applesauce, this has to be one of the best meals in the world.

1 fresh ham, about 10 pounds
1 cup Bourbon
1 cup firmly packed brown sugar
1/2 teaspoon ground cloves
1 grated orange, rind of
1/3 cup steak sauce

Steps:

  • Trim rind from ham and score fat into diamonds.
  • Mix remaining ingredients in a bowl.
  • Tie ham every 2 inches with string.
  • Spear ham on rotisserie rod and fasten ends.
  • If desired, insert a meat thermometer in the center of the thickest part of the ham, not touching a bone.
  • Make a drip pan and place it in grill and arrange coals around it.
  • Place ham 8 inches above gray coals and grill for 4 to 5 hours, adding more coals when needed.
  • During the last hour of grilling, brush glaze over all sides of ham.
  • Brush with glaze every 10 minutes.
  • Remove from rod and cut into thin slices.
  • Note: If using a meat thermometer, allow the ham to cook until it registers 170 degrees.

MAPLE ORANGE BOURBON GLAZED HAM

One 7- to 8-pound bone-in spiral cut ham
1 cup orange marmalade
1/2 cup bourbon
1/2 cup maple syrup
2 tablespoons unsalted butter
Pinch ground cinnamon
Pinch ground cloves
Nonstick cooking spray, for the foil

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the ham on a roasting rack in a roasting pan with the fat-side up. Use a small knife to lightly score the fat in a crosshatch pattern, taking care not to cut into the meat. Add about 1 cup of water to the bottom of the pan. Bake the ham for 45 minutes.
  • Meanwhile, make the glaze. Combine the marmalade, bourbon, maple syrup, butter, cinnamon and cloves in a small saucepan over medium-low heat. Cook, stirring often, until the glaze is thick and syrupy, 20 to 25 minutes.
  • Brush the ham with about half of the glaze and return to the oven. Roast, glazing the ham every 15 to 20 minutes, until the internal temperature reaches about 130 degrees F, 45 minutes to 1 hour more. (The ham will get very brown, but if the glaze starts to burn, tent with a piece of foil greased with cooking spray. Let rest, tented with a piece of greased foil, for about 10 minutes before carving.

This is a classic Southern recipe for Easter or Christmas. The sweetness of the honey and molasses is cut by the bourbon and orange juice, making for a perfect glaze. Once the ham is cool and chilled, be sure to remove the fat from the drippings to save and serve with the leftovers...that is one of the best parts of the recipe!

1 cup honey
1/2 cup molasses
1/2 cup Bourbon
1/4 cup orange juice
2 tablespoons Dijon mustard
1 half ham, smoked, 6-8 lbs

Steps:

  • Microwave honey and molasses in a 1 quart glass dish at high 1 minute. Whisk to blend. Whisk in bourbon, juice, and mustard.
  • Remove the skin and fat from the ham. Place ham in a lightly greased 13x9 inch pan. Make 1/4 inch cuts in ham in a diamond pattern. Pour glaze over ham.
  • Bake on the lower oven rack at 350° for 2 to 2 1/2 hours or until a meat thermometer inserted into thickest portion registers 140°, basting every 15 minutes with glaze.
  • Remove from pan, reserving drippings. Cover ham, and chill, if desired. Chill reserved drippings.
  • Remove and discard fat from the drippings. Bring drippings to a boil in a small saucepan. Serve warm with the ham.

ROSEMARY-BOURBON GLAZED HAM

One 10-lb bone-in, fully cooked, spiral-sliced ham
1 cup brown sugar
¼ cup bourbon or other whiskey
2 Tbsp. apple cider vinegar
2 Tbsp. Dijon mustard
1 orange, zested and juiced
1 Tbsp. chopped fresh rosemary
½ tsp. garlic powder
½ tsp. onion powder
½ tsp. ground cinnamon
Freshly ground black pepper

Steps:

  • Remove ham from packaging and bring to room temperature for up to 2 hours before baking.
  • Preheat oven to 325ºF. Arrange a rack in the lower third of the oven and remove upper racks.
  • In a small pot over medium heat, whisk together brown sugar, bourbon, apple cider vinegar, Dijon mustard, orange zest and juice, rosemary, garlic powder, onion powder, cinnamon, and a few turns of the pepper mill. Bring to a low simmer and cook for 5-6 minutes, stirring frequently, until the sugar has dissolved. Remove from heat and set aside.
  • Place ham in a large roasting pan, face down. Brush half the glaze over the surface of the ham. Loosely cover ham with foil and bake for 1 hour and 30 minutes. During cooking, brush with remaining glaze mixture every 30 minutes. For the last 15 minutes of cooking, remove foil. Let stand up to 30 minutes before transferring to a serving platter.

This recipe is from Favorite Lake City Recipes, a cookbook from the Army ammunition plant my husband works for. It was submitted by Mrs. Charles P. Longgood, Bldg. 1. It's become a family favorite and has been requested for Christmas dinner for several years now. I prefer using a spiral-cut ham as the flavor really gets into it better. Southern Comfort is my whiskey of choice, and I use either sliced or chunk pineapple.

12 -14 lbs ham (precooked variety)
3/4 cup bourbon whiskey
2 cups dark brown sugar
1 tablespoon dry mustard
whole cloves
2 oranges, peeled and sectioned (or pineapple chunks)

Steps:

  • Preheat oven to 325 degrees F.
  • Place ham fat side down on rack in shallow roasting pan.
  • Bake for 2 hours, without basting, or until meat can be pierced easily with a fork.
  • Remove ham from oven and let cool.
