Beef short ribs are an easy cut of beef to work with if you aren't too experienced with working with beef. It's a "set it and forget" dinner that is perfect for Sunday dinner or when company comes over.

Number Of Ingredients 10

2 pounds Certified Angus Beef ® brand beef short ribs
1 teaspoon salt
1 teaspoon pepper
1/4 cup yellow mustard
1 tablespoon honey
1 cup beef broth
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 tablespoons corn starch
2 tablespoons bourbon

Steps:

  • Season beef ribs with salt and pepper. In a cast iron skillet with a bit of grape seed or avocado oil spray, sear both sides of the beef.
  • Place in a Dutch oven. Mix the mustard through bourbon ingredients, and pour over ribs.
  • Light coals in a charcoal chimney and add to the pit barrel. Place rack in pit barrel and place Dutch oven on rack. Put lid on pit barrel and cook for 2 1/2 hours, or until it reaches an internal temperature of 195.
  • To plate: I made mashed potatoes, garlic pea pods and corn on the cob. The corn starch thickens the gravy as it cooks, so generously pour gravy over the short ribs and mashed potatoes and enjoy!

beef short ribs, preferably from the chuck or plate
Traeger Prime Rib Rub
beef broth
soy sauce or Bragg Liquid Aminos

Steps:

  • When ready to cook, set Traeger temperature to 250°F and preheat with the lid closed for 15 minutes.
  • In a small bowl, whisk together the mustard, Worcestershire sauce, and molasses.
  • Coat each rib on all sides with the mustard slather sauce. Season with Traeger Prime Rib Rub.
  • Make the mop sauce: In a food-safe spray bottle, combine the beef broth, soy sauce, and bourbon.
  • Insert the probe into the thickest part of a short rib, avoiding the bone and any large pockets of fat. Place the short ribs, bone-side down, directly on the grill grates. Close the lid and cook, spraying with the mop sauce every 30 minutes, until the internal temperature reaches 165°F, 2-2 1/2 hours.
  • Transfer the ribs to a large sheet of heavy-duty aluminum foil. Bring up the edges of the foil and spray the ribs with the remaining mop sauce. Bring the opposite sides of the foil together and fold several times, tightly encasing the ribs.
  • Return the ribs to the grill grates. Continue to cook the ribs until the internal temperature reaches 195°F, about 1 hour more.
  • Let the ribs rest in the foil for 15 minutes, then open the packet carefully, letting the hot steam release. Transfer the ribs to a platter, drizzle with the accumulated juices from the packet, and serve.

1 tablespoon black peppercorns, coarsely ground
2 tablespoons dry mustard
1 tablespoon paprika
1 tablespoon onion powder
1 tablespoon garlic powder
1/2 tablespoon red pepper
3 tablespoons vegetable oil
2 lbs beef back ribs, bone-in
1 large onion, minced
3 garlic cloves, minced
1/4 cup Bourbon
2 cups baby carrots
3 cups beef stock
1/8 cup sugar
2 tablespoons red wine vinegar
salt and pepper

Steps:

  • In small bowl or tray, mix rub ingredients thoroughly.
  • Rub onto beef back ribs.
  • In a large hot skillet, heat oil.
  • Brown ribs for several minutes on each side in batches.
  • Transfer ribs to slow cooker insert.
  • Add remaining meal ingredients into slow cooker insert and mix thoroughly.
  • Cover and cook for 4-6 hours.
  • Serve over rice.
