This is a delicious, moist and flavorful meatloaf, definitely company worthy, and it is our very favorite meatloaf recipe. Sandwiches made the next day are just awesome! My friend, Pattycake, shared this recipe with me, and now I am happy to share it with my JAP friends. Enjoy! Photos are my own.

Number Of Ingredients 15

1 pound lean ground beef
1 pound jimmy dean sage sausage
2 eggs beaten
1/4 cup tomato paste (use rest on top of meatloaf
2 teaspoons kitchen bouquet
1 1/4 teaspoon seasoned salt
1/2 teaspoon black pepper
a few sprinkles garlic powder
a few sprinkles onion powder
1 teaspoon thyme leaf crushed
1/2 red bell pepper chopped fine
1/2 cup celery chopped fine
1/2 cup onions chopped fine
1 1/2 cups freshly toasted plain croutons from french bread, cooled.
spritz of butter spray for top of cooked meatloaf

Steps:

  • 1. In a large mixing bowl, combine eggs, tomato paste, kitchen bouquet.
  • 2. Add all the seasonings and spices.
  • 3. Stir in peppers, onions and celery.
  • 4. Add the ground meat and sage sausage. Mix well. Best mixed with your hands.
  • 5. Stir in the croutons and mix well.
  • 6. Form the loaf and place in a meatloaf pan.
  • 7. "Frost" the top of the meatloaf with the leftover tomato paste as depicted in the photo.
  • 8. Tent the meatloaf loosely. Bake meatloaf in a 350 degree, pre-heated oven for 1 1/2 hours or until it reaches an internal temperature of 175 degrees. (I use a meat thermometer.) Remove tin foil the last 15 minutes. Let meatloaf stand covered loosely for 15 minutes. Spritz with a couple of sprays of butter flavored kitchen spray to give it a glossy appearance, and this is how it looks.
  • 9. Place the meatloaf on a platter and slice it to serve. You can serve it without gravy because it is so moist. That is the way I like it. The guys, of course, have to have their gravy! Enjoy!

I never met Bonnie but I've been making her meatloaf for years! Serve with her glaze on top - or your favourite tomato or mushroom sauce. Add some garlic mashed potatoes & a green vegetable for a great weeknight family dinner. Leftovers (if there are any) make a good sandwich.

2 tablespoons vegetable oil
2 onions, chopped
3 cloves garlic, minced
2 eggs
1 cup milk
1 1/2 cups breadcrumbs
2 lbs lean ground beef
1/4 cup ketchup
1 tablespoon Dijon mustard
2 teaspoons salt
1/2 teaspoon pepper
1 tablespoon Worcestershire sauce
2 tablespoons chopped fresh parsley
2 tablespoons ketchup
1 teaspoon Dijon mustard

Steps:

  • Heat oil in a medium skillet.
  • Cook onions& garlic until tender; reserve.
  • Combine eggs with milk& bread crumbs.
  • Add onion mixture& remaining ingredients and mix well.
  • Press into a 9" x 5" loaf pan& cover with foil.
  • Bake in a preheated 375F oven for an hour.
  • Combine glaze ingredients in a small bowl.
  • Drain off any fat from meatloaf& brush glaze on top.
  • Bake for an additional 30 minutes, uncovered.

An amazing blend of flavors-including prosciutto, sun-dried tomatoes, fresh basil and cheese-make this rolled loaf something special.

1 cup finely chopped red onion
1 tablespoon olive oil
1 tablespoon butter
2 garlic cloves, minced
1/2 pound whole fresh mushrooms, coarsely chopped
3/4 teaspoon salt
1/2 teaspoon pepper
2 eggs, lightly beaten
1-3/4 cups soft sourdough bread crumbs
3/4 cup grated Parmesan cheese
1/3 cup minced fresh parsley
1 teaspoon minced fresh thyme
1-1/2 pounds lean ground beef
3/4 pound bulk Italian sausage
FILLING:
3 ounces thinly sliced prosciutto
5 ounces thinly sliced Havarti cheese
1-1/4 cups loosely packed basil leaves, cut into thin strips
1/3 cup oil-packed sun-dried tomatoes, drained and cut into strips

Steps:

  • In a large skillet, saute onion in oil and butter for 2 minutes. Add garlic; cook 1 minute longer. Add mushrooms; cook 6-8 minutes longer or until mushrooms are tender and no liquid remains. Stir in salt and pepper. , In a large bowl, combine the eggs, bread crumbs, Parmesan cheese, parsley, thyme and mushroom mixture. Crumble beef and sausage over mixture; mix well., On a large piece of heavy-duty foil, pat beef mixture into a 15x10-in. rectangle. Layer the prosciutto, Havarti, basil and tomatoes to within 1 in. of edges. Roll up jelly-roll style, starting with a short side and peeling foil away while rolling. Seal seams and ends. , Place seam side down in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 75-85 minutes or until no pink remains and a thermometer reads 160°. Let stand for 5 minutes. Using two large spatulas, carefully transfer meat loaf to a serving platter.

  • First, make the pesto sauce. Set up a food processor and combine the sun-dried tomatoes with the oil they were packed in, pine nuts, parmesan and garlic in its bowl. Puree the mixture until it is a thick paste. Set it aside. Then make the meatloaf. Combine the garlic, rosemary, basil, salt, dried onion, crushed red pepper, parmesan and egg in a large bowl. Stir it all together to mix it. Then add in the beef and mush it all together with clean hands. Set the mixture aside.
  • Pre-heat the oven to 375 and get out a sheet tray. Line the sheet tray with a silicone mat or aluminum foil. Lay out the prosciutto in a single layer on the pan with the long edges hanging over the width of the pan. Spread half of the sun-dried tomato pesto on the prosciutto, then form the meat mixture into a loaf down the length of the prosciutto bed. Spread the remaining pesto sauce on top of the meatloaf, then gently roll up the loaf in the prosciutto so that it is wrapped in it. Bake the meatloaf for 40-50 minutes.
  • The prosciutto will get wonderfully crispy and the meat will absorb the flavors of the pesto sauce. When it is done, let the meatloaf rest for 5-10 minutes. Then slice and serve it immediately with your favorite sides! It also makes an amazing sandwich the next day.
