8 chicken thighs, skin on, bone in (boneless or skinless okay)
8 red potatoes, scrubbed and cut into one-inch uniform pieces
5 medium carrots, peeled and cut into 2-inch uniform pieces
2 sweet potatoes, peeled and cut into one-inch uniform pieces
1 large onion, peeled and cut into 8 wedges
2 cloves minced garlic
3 tablespoons olive oil (or oil of choice)
1 large lemon, zested, then juiced
2 teaspoons Dijon mustard
kosher salt and pepper, to taste, about a teaspoon each

Steps:

  • 1. Pre-heat the oven to 425 degrees. I use a large stainless steel pan with a shallow rim, big enough to hold all the ingredients in a single layer. Grease the pan with kitchen spray.
  • 2. Zest the lemon and squeeze the juice. Place the lemon juice in a large bowl. Add the zest, garlic, Dijon mustard, olive oil, salt, and pepper. Whisk until well combined. Pat thighs dry and add to the mixture in the bowl. Coat the chicken thighs with the mixture and place them skin UP in the center of the baking pan.
  • 3. Add the vegetables to the bowl with your hands and toss the vegetables until they are coated. Place the vegetables around the chicken in the pan in a single layer.
  • 4. Roast in the oven at 425 degrees for about 45 minutes. Stir the vegetables halfway through the cooking process. Test the vegetables to see if they are done, if not, continue cooking. At this time, using tongs, flip the chicken thighs over to "baste" the top of the meat in the juices, and then flip it back over. (Sneaky way to baste.)
  • 5. The meat and vegetables will be golden brown. It may take a few minutes less or a few minutes more, depending on how big the pieces of meat are, and how big you slice the vegetables. If you like them more brown, turn on the broiler for a few minutes, but watch them carefully.
  • 6. Next time, after you have tried this dish, feel free to add anything else to it that you can't live without. Enjoy!

8 chicken tenders
salt and pepper to taste
just a pinch of chipotle dried pepper, more if you like it spicy hot
garlic powder to taste
1 bag Santitas white corn chips, yellow corn is okay or mix them. I prefer white corn chips.
16 ounces Tostitos salsa con queso, divided
1 9 ounce can of Fritos bean dip
2 cups sharp Tillamook grated cheese, divided
1 can or 3/4 cup sliced black olives, drained
1 cup sliced grape tomatoes
1/2 cup sour cream
1 avocado, chopped
1/2 cup jalapeno rings from jar
1/2 cup chopped green onion
1 pat of butter, about a tablespoon
2 tablespoons olive oil

Steps:

  • 1. Cook's note. Do the prep work first, and the dish will come together effortlessly. Assemble all ingredients before beginning. Preheat oven to 350 degrees. I cook my chicken tenders while my chips and cheeses are heating in the oven. With a little practice, they both get done at the same time.
  • 2. PREPARE CHICKEN TENDERS Remove any skin or fat from the tenders and blot dry with paper towels and set aside.
  • 3. PREPARE TOPPINGS Chop your tomatoes, green onions, olives and avocado. You will need sour cream and jalapeno rings or anything else you can't live without on a nacho. :)
  • 4. You will also need a jar of Tostitos salsa con queso, a salsa flavored cheese sauce/dip, and a can of Fritos bean dip. (The bean dip works better in this recipe than the traditional refried beans) Grate your Tillamook sharp cheddar cheese.
  • 5. PREPARE THE CHIPS, BEANS AND CHEESES You will need a medium size bag of Santitas white corn chips. You can use yellow, if you prefer, or mix white and yellow corn chips together. You will also need a 9 X 13 baking dish to build your Nachos.
  • 6. Place 3/4 of the bag of Santitas chips in the baking dish. Spoon dollops of Fritos bean dip over the first layer of chips, using all of the can of bean dip on this bottom layer.
  • 7. Spoon 1 cup of the salsa con queso and 1 cup of the Tillamook sharp grated cheese evenly over the chips. (This is to our preference, you can reduce the amount of cheese if you prefer. Avoid adding more because you don't want it to be soggy). Place the baking dish in the oven at 350 degrees for 10 minutes until salsa con queso and chips are hot.
  • 8. Remove baking dish from oven and add the remaining layer of chips and spoon on the salsa con queso and bake another 10 minutes. Turn off the oven, and sprinkle the remaining cup of Tillamook cheese on top. Leave dish in the oven to keep warm and melt the cheese.
  • 9. SEASONINGS FOR THE CHICKEN Sprinkle chicken tenders on both sides with salt and pepper, to your taste.
  • 10. Sprinkle with the remaining seasonings: garlic powder, and a pinch of chipotle pepper. If you like it spicy hot, season both sides with chipotle. (Don't forget there are jalapenos as a garnish for the top of the dish!:)
  • 11. HOW TO COOK THE CHICKEN Heat a couple of tablespoons olive oil in a nonstick skillet and a pat of butter until hot, but not smoking.
  • 12. Heat the oil in the skillet. Add the chicken tenders. When the chicken is nicely brown, turn it over. Adjust heat to medium. Fry the other side. Don't overcook the chicken, but do get a good sear on it.
  • 13. Remove chicken to a cutting board and cut into large chunks, set aside and tent the chicken to keep it warm.
  • 14. Remove the baking dish from the oven and add the toppings in the following order: tomatoes, olives, jalapeno, avocado and cooked chipotle chicken. Add sour cream and sprinkle with chopped green onions last.
  • 15. Serve immediately. Enjoy!

Fontina and heavy cream lend a richness to this baked penne with shredded rotisserie chicken and spinach.

Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
4 garlic cloves, thinly sliced
One 28-ounce can crushed tomatoes
One 15-ounce can crushed tomatoes
1/4 cup heavy cream
1 cup fresh ricotta
1 pound dried penne
10 ounces frozen chopped spinach, thawed and squeezed dry
2 cups shredded rotisserie chicken, skin and bones discarded
3 cups shredded Italian fontina cheese
1 cup grated pecorino
1 tablespoon chopped fresh basil

Steps:

  • Preheat oven to 450 degrees F. Bring a large pot of salted water to a boil.
  • Heat the oil in a medium saucepan over medium heat. Add the garlic and cook, stirring, until the golden, about 2 minutes. Add both cans of the tomatoes, the heavy cream and 3/4 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Stir in the ricotta and season with salt and pepper.
  • Cook the penne in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to a large bowl.
  • Add the tomato sauce, spinach, rotisserie chicken, half of the fontina and pecorino and all of the basil to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the remaining fontina and pecorino. Bake, uncovered, until browned, about 15 minutes. Let the pasta rest for about 10 minutes before serving.

LEMON BUTTER SAUCE:
24 jumbo shrimp, peeled & deveined, cut in half
3 cups mushrooms, sliced
1 1/2 tablespoons roasted pine nuts
6 handfuls fresh spinach leaves
6 cups cooked vermicelli pasta
4 tablespoons butter
2 tablespoons fresh garlic, minced
1 tablespoon shallots, minced
1 tablespoon fresh garlic, minced
1/2 cup dry white wine
1 cup heavy cream
1/2 cup lemon juice
1/8 teaspoon white pepper
2 sticks salted butter, cut in tablespoons

Steps:

  • Preheat oven to 350°F. Wash spinach and remove stems before drying leaves between paper towels. Set aside. Spread pine nuts over bottom of sheet pan and place pan in oven on top rack. Roast until golden brown, approximately 2 to 4 min. Remove from oven and set aside. Prepare pasta according to package directions, drain and set aside. Prepare lemon butter sauce. Melt 1 tablespoon butter in large skillet over med-high heat. Saute shallots and garlic until translucent. Add white wine and reduce slightly more than 1/2, whisking occasionally. Add cream and reduce by 1/2. Add lemon juice and reduce by 1/2. Add white pepper. Reduce heat to low. Add remaining butter 2 tablespoons at a time, whisking continuously after each addition to completely incorporate butter. Continue to simmer, whisking until sauce just coats spoon. In large skillet over med-high heat, melt the 4 tablespoons of butter. Add garlic and saute until garlic is translucent. Stir in mushrooms, shrimp, and pine nuts. Saute several minutes or until shrimp are done and show color. Remove skillet from heat and gently stir in spinach. Place warm pasta on plate with shrimp mixture to the side. Pour lemon sauce over pasta, permitting a bit of sauce onto shrimp. Enjoy!

She had no children and she always said my mother had me for her......She was the best cook in the world.....always comfort food and always so good...This Chicken and Rice recipe is so simple, but oh so good.......Aunt Bonnie has gone to be with the Lord, but I am sure she is cooking her great dishes in heaven!!!!!!

4 -5 chicken breasts (bone in)
2 cups long grain rice
4 -5 cups chicken broth
1/2 cup real butter
salt and pepper, be sure and use enough salt and pepper

Steps:

  • Boil chicken with 1/2 stick butter, salt and pepper --
  • After chicken is completely done, drain broth and keep.
  • Debone chicken and shred or cut in chunks.
  • Butter a 3 quart oven safe casserole, put rice in bottom of dish, lay chicken on top of rice (I always add more salt and pepper at this time) and pour your reserved broth (I even use canned broth if I need more) over rice and chicken -- cut the remaining stick of butter and put on top and put casserole in a 350 to 400 degree oven and cook until rice is done -- if mixture looks dry, pour in more broth and continue to cook. I usually leave in oven for an hour -- Enjoy!

2 ounces butter
2 ounces yellow onions, 1/4-inch dice
2 ounces roux (*try Gumbo Base (Aka Roux), or see below)
8 fluid ounces milk
1/2 pint heavy cream
1 ounce shrimp stock (try Shrimp Stock)
1 teaspoon Old Bay Seasoning
8 fluid ounces white wine
10 garlic cloves, minced
3 tablespoons olive oil
1 lb mushroom
1 lb linguine, precooked (hot)
fresh parsley
2 lbs shrimp
1 lb crawfish
1 lb scallops
60 mussels

Steps:

  • PORTOFINO SAUCE:.
  • Start by getting your ingredients ready. Dice the onion.
  • *Make the roux (heat vegetable oil on medium/high, add flour, stir continuously until oil flour mixture browns). The amount of oil is about equal to the amount of roux required by the recipe. For instance, the original recipe calls for 2 oz of roux. So 4 tbsp oil and 4 tbsp white flour. Set aside.
  • Melt Butter on medium heat. Add diced onion and garlic, stirring frequently, about 5 minutes.
  • Add white wine. Turn up heat to high until boiling then back down to medium. Cook 5 minutes on medium.
  • Stir in roux, shrimp stock, and Old Bay Seasoning. Cook 3 minutes.
  • Add milk and heavy cream. Turn heat on high just until mixture starts to boil. Turn to medium/low, cover, and stir occasionally for 5 minutes. The sauce is now ready! It can be store for up to one week in the regrigerator.
  • Seafood Portofino:.
  • Heat oil in saute pan over medium flame. Put mushrooms inches Cook 2 minutes.
  • Add mussels, and cook 30 seconds.
  • Add shrimp, crawfish, and scallops. Cook until heated through, stirring.
  • Add portofino sauce; cook until bubbling throughout.
  • Move mushrooms and seafood to one side of pan. Add linguine to other side. Using tongs,coat pasta with sauce. (mussels should be open).

Steps:

  • To make the sauce:.
  • Heat the lemon juice and white wine in a saucepan over medium heat.
  • Bring to a boil and reduce by one-third.
  • Add cream and simmer until mixture thickens (3 to 4 minutes).
  • Slowly add butter until completely incorporated.
  • Season with salt and pepper.
  • Remove from heat and keep warm.
  • To make chicken and pasta:.
  • Cook pasta and drain.
  • Heat a small amount of oil and two tablespoons butter in a large skillet.
  • Dredge chicken in flour and saute in pan, turning once, until brown and cooked through.
  • Remove chicken from pan.
  • Add remaining ingredients to pan.
  • Heat until mushrooms soften and are cooked. Add chicken back to pan.
  • To serve:.
  • Place cooked pasta on each plate.
  • Add half of butter sauce to chicken mixture and toss.
  • Taste and adjust. Add more sauce if needed.
  • Place chicken mixture over pasta.
  • Add a little more sauce to each.
  • Garnish with parsley.
