10 lbs pork ribs
1 1/2 tablespoons five-spice powder, divided
1 tablespoon sugar
1 tablespoon salt
1 tablespoon msg
1 cup water
1 tablespoon potato starch
3/4 cup white breadcrumb

Steps:

  • Cut short style pork ribs between bones into pieces.
  • Mix 1 tablespoon five-spice powder, sugar, salt, msg, water, and potato starch.
  • Let stand in refrigerator for 5 hours.
  • Add 2 eggs; mix.
  • Dip in more potato starch then bread crumbs.
  • Deep fry in older oil 375 degrees Fahrenheit (as told) until dark spots of blood seep out of bones or until golden.
  • Dry on paper towels.
  • Spritz with lemon juice.
  • This was given to me by a cook who only makes 10 pounds at a time so adjust as needed.

3 -4 eggs
1 teaspoon chinese allspice
1 1/2 teaspoons msg (accent)
1 1/2 teaspoons salt
1/2 teaspoon pepper
3 teaspoons dark soya sauce
1 dash garlic powder
fine cracker crumb
6 lbs ribs, cut into 1 inch pieces (approx)

Steps:

  • Stir first seven ingredients together and pour over ribs.
  • Marinate in fridge overnite mixing occasionally.
  • (adding more garlic is our personal preference) Dip in fine cracker crumbs.
  • Deep fry approx 5 minutes.
  • Prep time includes marinading overnite.
  • Time approximate- Probably few hours sufficient too!

This is my co-worker's recipe and I have added additional seasonings. Very restaurant quality. Prep time includes minimum marinade time and cook time is a guess depending on how you deepfry. We deepfried in 1/2" oil in cast iron pan.

6 lbs pork ribs, sweet and sour cut
2 eggs, beaten
2 teaspoons soya sauce
2 teaspoons Chinese wine, not rice wine vgr
2 teaspoons sugar
1/2-1 1/2 teaspoon chinese all spice also known as Chinese five spice powder
1 -1 1/2 teaspoon salt
1 teaspoon garlic powder (to taste)
1 cup flour
2 cups breadcrumbs

Steps:

  • Cut ribs into individual ribs. Mix next 7 ingredients, add ribs and marinade minimum 1/2 hour. Longer the better.
  • Remove ribs from marinade and toss in mixture of flour and breadcrumbs. Remove and deep fry til golden.
