SPICE CAKE BARS WITH SALTED CARAMEL ICING

Steps:
- Preheat oven to 350°. Grease a 13x9-in. baking pan. In a large bowl, combine cake mix, butter, milk and egg; beat on low speed 30 seconds. Beat on medium 2 minutes (batter will be thick)., Transfer to prepared pan. Bake 15-20 minutes or until a toothpick inserted in center comes out clean. Cool in pan on a wire rack., For frosting, in a large saucepan, combine brown sugar, milk and butter over medium heat; bring to a boil, stirring occasionally. Reduce heat; simmer, uncovered, 3 minutes., Remove from heat. Stir in confectioners' sugar and vanilla. Immediately spread icing over cake; sprinkle with salt. Cool completely. Cut into bars. Store in airtight containers.

GAMMA D'S BOILED SPICE CAKE
My next door neighbors mother gave me this recipe. It was one of her mothers little cakes she often made to go along with tea or coffee. Very easy to make and very, very tasty.

Steps:
- Preheat oven to 350 degrees.
- Place sugar, raisins, water, shortening, cinnamon, and cloves in a saucepan and bring to a boil.
- Boil for 5 minutes and remove from heat.
- Immediately add flour, baking soda, salt and stir in.
- Pour into a 8"x8" pan.
- Bake at 350 degrees for 30 minutes.
- Prep time includes the boiling.

Whenever I went to Grandmother's, she served these flavorful bars, topped with creamy frosting. Today, I do the same for our grandchildren, who like the little treats just as much.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Beat in molasses and water until blended. Combine the flour, ginger, allspice, baking soda and cloves; gradually add to the creamed mixture. , Pour into a greased 15x10x1-in. baking pan. Bake at 375° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack. , Meanwhile, in a small bowl, beat shortening, butter and lemon juice until smooth. Beat in sugar until light and fluffy. Frost bars.

BOILED SPICE CAKE
From the November 2005 issue of Vegetarian Times. Their note: Boiling the sugar, raisins and spices produces a wonderfully flavored cake that's bound to become a holiday favorite. Dress it up with the lemony glaze just before serving for the perfect finish to this festive dinner.

- To make Cake: Preheat oven to 350°F Sift together flour, baking powder and baking soda in bowl. Spray 12-cup Bundt pan with cooking spray, and set aside.
- Combine sugar, raisins, cinnamon, nutmeg, cloves, 1/2 teaspoons salt and 1 1/2 cups water in large saucepan. Bring to boil, and cook 5 minutes, or until raisins plump up. Remove from heat, and stir in margarine.
- When margarine has melted, add flour mixture and pecans to saucepan. Blend well, and pour into pan. Bake 35 to 45 minutes, or until toothpick inserted in cake comes out clean. Cool 10 minutes in pan, then invert onto wire rack and cool completely.
- To make Glaze: Whisk lemon juice into confectioners' sugar. Pour over cooled cake. Decorate with whole pecans, if desired.

- Boil raisins in 2 cups of water for 15 minutes. Remove from heat.
- Add vegetable oil and cold water to the raisins.
- Mix sugar, flour, spices, baking soda, and salt in a large bowl.
- Add the raisin mixture, and stir till just mixed.
- Pour into a greased and floured 9 x 13 inch baking pan, and bake for one hour in a preheated 350 degrees F (175 degrees C) oven. It is done if a toothpick comes out clean.
