- Coloca el aderezo y el chipotle en la licuadora; pon la tapa. Lícualos hasta obtener una mezcla homogénea. Combina el pollo y la mezcla de aderezo en un recipiente pequeño.
- Combina el queso crema y el mango en un recipiente pequeño aparte hasta que estén bien mezclados.
- Cubre cada galleta con alrededor de 1 cucharadita de la mezcla de queso crema y alrededor de 1 cucharada de la mezcla de pollo. Espolvorea las galletas con el cilantro.

Found in response to a request on the boards and posted b/c I would like to try this... sounds yummy! I am probably going to omit the cheese and shred the chicken after baking and use it as a taco filling with cheese, lettuce, and tomatoes at toppings! Will be back with update after trying.

Steps:
- Put breasts in baking dish and season with salt and pepper.
- Put a slice of cheese on top of each breast.
- Blend together remaining ingredients and pour over breasts and cheese.
- Cover and bake 45 minutes in a medium 350 degree oven until chicken is done.
- To serve, remove chicken, stir residual sauce in baking dish until smooth, and spoon over breasts.
- Ideal for buffets or large groups.
- Can substitute low-cholesterol sour cream and cheese.
- If canned chipotle is unavailable, dried chipotle will do.
- Altering amount of chipotle will alter spiciness of dish.
- Can add sauteed mushrooms before baking.

POLLO CHIPOTLE
This is my version of a dish I loved from Cafe Mexico in Victoria, BC. Use more peppers if you like. Quantities are approximate, play with them as you like. If you can't grill go skewerless and just throw everything in a roasting pan (mushrooms and onions in the bottom). Cook in a 450F oven stirring every 5 minutes until meat is done and veggies are tender (about 20 - 30 minutes).

Steps:
- Combine marinade ingredients and marinate chicken for at least two hours; 4 hours seems best.
- Skewer alternating chicken, zucchini, red onion, red pepper, and mushrooms.
- Grill skewers and baste with remaining marinade.
- Make cream sauce by combining all ingredients and chilling until ready to use.
- Serve skewers over rice, with a sprinkling of cheese and cream sauce.

- Remove 1 chile and 1 teaspoon adobo sauce from can; reserve remaining chiles and sauce for another use. Finely chop chile; set chile and sauce aside separately.
- Heat oil in a large Dutch oven over medium heat. Add chopped chile, onion, and next 6 ingredients (through garlic); cook 7 minutes or until onion is tender, stirring frequently. Stir in broth; bring to a boil. Add chicken; cover, reduce heat to medium-low, and simmer 30 minutes or until chicken is tender. Remove chicken with a slotted spoon, and cool slightly. Shred chicken with 2 forks; cover and keep warm.
- Remove pan from heat; let stand 5 minutes. Place one-third of broth mixture in a blender; process until smooth. Pour pureed broth mixture into a large bowl. Repeat procedure in two more batches with remaining broth mixture. Return pureed broth mixture to pan. Stir in potatoes and hominy; bring to a simmer over medium heat. Cook, uncovered, 20 minutes or until potatoes are tender. Stir in chicken and cream; simmer 5 minutes. Remove from heat, and stir in reserved adobo sauce, tomato, cilantro, and salt. Serve with lime wedges.
