BOB'S DARING BEER AND WINE STEW
Found this in Bills ChuckWagon cook Book. Made a few changes to make this better.

Steps:
- In a large papper bag add flour,salt & pepper,and Mrs dash. Add chunks of meet.Shake to coat... In a large cast iron skillet fry bacon till all most chrisp. Remove,drain on a papper towl and cut into chunks...
- Into the bacon drippings add meat. Brown on all sides...Now add seasonings,beer,wine.. Partially cover and simmer for abought 1 1/2 hours..
- Uncover. Remove bay leaf. Add carrots,onion,and potatoes..Partially cover and simmer for abought 1 1/2 hours. You may need add a little more beer or wine... Serve over egg noodles.
TRADITIONAL IRISH BEEF AND GUINNESS STEW

Steps:
- Cut the beef across the grain into into 1-inch pieces. Sprinkle with some salt, pepper and the flour and toss to coat the pieces. Set aside.
- Fry the bacon in a Dutch oven or heavy pot until done then remove it with a slotted spoon, leaving the bacon drippings in the pan.
- Working in batches and being careful not to overcrowd the pieces, generously brown the beef on all sides. Transfer the beef to a plate and repeat until all the beef is browned.
- Add the onions and fry them, adding more oil if necessary, until lightly browned, about 10 minutes. Add the garlic and cook for another minute. Add the vegetables and cook for another 5 minutes. Add the Guinness and bring it to a rapid boil, deglazing the bottom of the pot (scraping up the browned bits on the bottom). Boil for 2 minutes. Return the beef and bacon to the pot along with the remaining ingredients and stir to combine. (**At this point you can transfer everything to a slow cooker if you prefer. Follow the remaining steps and then cook on LOW for 6-8 hours or on HIGH for 3-4 hours.)Bring it to a boil. Reduce the heat to low, cover and simmer for 2 hours. Add salt and pepper to taste.
- Serve with some crusty country bread or Irish soda bread. This soup is even better the next day.

Cousin Bill Bob could fix anything. He'll tell you -- "It ain't broke it just needs some more duck tape and a splash of WD40." He fixed this up -- Right Good. Over an Open Fire.

- 1. If the woods are too far away a nicely veined 3 to 4 pound Chuck Roast will do. "Choice or Prime" preferred.
- 2. Cube the meat to 1/4 the size of you Bull Durham tobacco pouch or to size of thumb from tip to first knuckle joint.
- 3. Git the Dutch Oven jist as hot as ye can git it. Put the Bay Leafs in the bottom (Keep count of Bay Leafs so you can retrieve and remove before serving, They can be a choke hazard). Dump the chunked meat in, sprinkle with 1/2 cup Flour, the Dry Onion Soup mix, and 1/2 teaspoon Garlic Powder or three minced cloves, and a dash of salt and pepper.
- 4. Give everything a good mixin' and cook on high heat for 10 or 15 minutes, while stirring.
- 5. Now back the Dutch oven off the fire a bit and add the Potatoes (quartered), Carrots, Celery and Onions. Don't forget the two cans of Beer. Dump 'em in. Put the lid on the dutch oven, set it on the hot "Coals", scoop a few coals on top of lid, and allow to cook.
- 6. Sit back and enjoy about three rounds of Euchre. Tend the oven with a little gentle stirring every 1/2 hour or so. Should be done in 2 to 2 1/2 hours. If the gravy inside looks a little thin sprinkle on 1/4 cup additional Flour, and give a gentle stir. Cook at 350 degrees if cooking in oven.
- 7. Spoon it up and serve with Corn Bread or Biscuits.
- 8. Do your best to retrieve the Bay Leafs so your pals don't choke and commence a law suit. Hey! Is there any Beer left?

- In a hot dutch oven cook bacon with oil till almost crisp. Put flour in a bag, add meat and shake to coat meat.. Remove bacon from oven with slotted spoon, cut up bacon and set a side.. Brown beef chuck in bacon drippings on all sides..
- Now add garlic and onion cook 4-5 minutes.. Add beer, wine, bay leaf parsley, and thyme.. Partially cover and cook over med heat for 1 1/2 hours.. Remove bay leaf and add carrots. You may need to add more beer, cook for about one hour more... Serve over cooked noodles..

Traditional beef stew with a twist of beer, chili sauce, and brown sugar.

Steps:
- Heat the oil in a skillet over medium heat. Place the beef stew meat and flour in a large resealable plastic bag, and shake to coat. Transfer coated meat to the skillet, and cook about 1 minute, until browned.
- Mix the potatoes, carrots, celery, onion, and garlic in a slow cooker. Place browned beef over the vegetables, and season with basil and thyme.
- In a bowl, mix the chili sauce, beer, and brown sugar, and pour over meat in the slow cooker.
- Cover slow cooker, and cook 8 hours on Low or 2 hours on High.

- In a large Dutch oven cook bacon till crisp. Put flour salt and pepper and dried thyme in a pepper bag. add cubed meat. Shake till meat is covered. Remove cooked bacon from Dutch oven and drain on papper towel Brown beef in bacon grease on all sides.
- Once meat has been browned. Add beer, wine, tomato paste, parsley, onion, bay leaf and what is left in the bag of flour mix.. Bring to a boil. then reduce heat and simmer for 1 1/2 hours, partially covered.
- Remove bay leaf. Then add potatoes, garlic, and carrots. At this point I add 1 teaspoon of hot sauce, you can leave it out. I like my stew with a bite. Partially cover and simmer for one hour more. Serve over cooked egg noodles
