You'll often find one-pot meals in Gullah cuisine, and this fish stew is definitely that! Creamy, smoky, and slightly sweet, it's packed with corn, potatoes, bacon and cod. It also feeds a crowd as an appetizer or main dish.

Number Of Ingredients 14

8 slices thick-cut applewood-smoked bacon, diced, plus more cooked, crumbled bacon for garnish, optional
3 stalks celery, sliced
1 large yellow onion, diced
3 cloves garlic, minced
4 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups seafood or vegetable stock
2 cups heavy cream
2 cups fresh or frozen corn kernels
1 pound russet potatoes, peeled and cut into large chunks
2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper
2 pounds cod or other firm white fish, cut into bite-size pieces
Chopped fresh dill and chives, for garnish

Steps:

  • Place a large Dutch oven over medium heat. Add the bacon and cook until the fat begins to render but the bacon is still soft, about 5 minutes. Add the celery and onion and cook until the bacon is crisp and the vegetables are tender, about 5 minutes. Stir in the garlic.
  • Add the butter and flour and stir until combined. Cook until the flour is bubbly, about 2 minutes. Slowly add the stock and whisk until combined. Whisk in the heavy cream.
  • Add the corn, potatoes and paprika. Season with salt and pepper. Cover and cook over medium heat, stirring occasionally, until the potatoes are tender, about 15 minutes.
  • Add the fish to the Dutch oven. Reduce the heat to low, cover, and simmer until the fish flakes with a fork, 5 to 7 more minutes. Season with salt and pepper. Spoon into serving bowls and garnish with dill and chives. Sprinkle with additional crumbled bacon, if desired.

1 lb fish fillet
1/4 lb pork fat, diced
1/3 cup onion, chopped
2 cups potatoes, diced
2 teaspoons salt
1/4 teaspoon pepper
2 cups milk, room temperature

Steps:

  • Cut fresh fillets into 3 to 4 pieces.
  • In a heavy saucepan, fry pork fat until crisp.
  • Remove scraps and reserve for garnish.
  • Drain off fat except for 2 tbsp and cook onion until tender.
  • Add potatoes, 2 cups water and seasonings.
  • Cover and simmer for 10 minutes or until potatoes are almost tender.
  • Add fish; cover and simmer 5 to 8 minutes or until fish is cooked.
  • Add milk slowly and heat gently but do not boil.
  • Garnish with pork scraps.

The fishermen of Bodega Bay, California shared this favorite, quick and easy recipe with my sister during a Fish Festival. It is one of the best chowders I've had, and my kids love it too! We top with bacon bits and a few shakes of hot sauce for a little spice. Enjoy!

2 tablespoons butter
2 cups chopped onion
4 fresh mushrooms, sliced
1 stalk celery, chopped
4 cups chicken stock
4 cups diced potatoes
2 pounds cod, diced into 1/2 inch cubes
1 cup clam juice
½ cup all-purpose flour
⅛ teaspoon Old Bay Seasoning TM, or to taste
salt to taste
ground black pepper to taste
2 (12 fluid ounce) cans evaporated milk
¼ cup cooked crumbled bacon

Steps:

  • In a large stockpot, melt 2 tablespoons butter over medium heat. Saute onions, mushrooms and celery in butter until tender.
  • Add chicken stock and potatoes; simmer for 10 minutes.
  • Add fish, and simmer another 10 minutes.
  • Mix together clam juice and flour until smooth; stir into soup and simmer for 1 minute more. Season to taste with Old Bay seasoning, salt, and pepper. Remove from heat, and stir in evaporated milk. Top each bowl with crumbled bacon, if desired.

1/4 lb salt pork, diced (use bacon if you can't find salt pork)
2 onions, peeled and sliced
3 cups potatoes, peeled and cut into 1/2 inch cubes
4 cups boiling water
3 lbs cod or 3 lbs haddock, cut into small pieces
1 3/4 cups evaporated milk
1 tablespoon salt
1/8 teaspoon pepper
1 tablespoon minced parsley
1 tablespoon butter
1 tablespoon flour

Steps:

  • Fry salt pork slowly in soup pot.
  • Add sliced onions and cook five minutes.
  • Add cubed potatoes, boiling water, and fish.
  • Simmer slowly until potatoes are soft.
  • Add evaporated milk, salt, pepper, and minced parsley.
  • In a small skillet, melt butter.
  • Add flour, blend thoroughly and cook.
  • Add slowly to chowder, stirring until slightly thickened.
  • Heat for another five minutes.
  • Serve with pilot crackers.

1/4 cup minced peeled onion
3 garlic cloves, peeled and mashed
2 tablespoons finely cut green peppers
2 tablespoons olive oil
1/4 cup flour
2 cups water
4 cups canned tomatoes, chopped
1 tablespoon tomato paste
3 teaspoons salt, to taste
1/4 teaspoon cayenne or 1/4 teaspoon chili powder
1/2 teaspoon beau monde seasoning
1 cup white wine
2 lbs white fish fillets
1 lb fresh or quick-frozen haddock or 1 lb cod, cleaned and cubed
3 tablespoons finely cut parsley

Steps:

  • Cook onion, garlic, and green pepper in oil in heavy 3quart pot or Dutch oven until onions are golden.
  • Sprinkle with flour.
  • Stir and cook 2 or 3 minutes.
  • Add water, tomatoes and paste, seasonings and wine.
  • Stir and bring to boiling point.
  • Add fish.
  • Lower heat and let simmer 1 hour or until fish is done but still firm.
  • Serve in warmed chowder bowls, topped with parsley.
  • Makes 6 or more servings.
  • Garlic French bread goes well with this chowder.
  • Actually it's essential!
  • People who imagine they don't like fish love this soup.
  • It makes a hearty one-dish meal.
  • In fact, that's the only way I ever serve it.
  • The"makings" are always on hand.
  • Sometimes I dress it up by serving it in a treasured Meissen tureen (I first warm it carefully with warm water) with its six antique matching soup plates.
  • Fruit is the obvious finish for the meal-a big bowl of iced, assorted fruits.

4 tablespoons lemon juice

1 teaspoon black pepper
1/2 cup white wine
2 tablespoons Worcestershire sauce
2 stalks celery, chopped
yellow celery leaves (add any)
1 cup carrot, chopped
2 1/2 lbs fish fillets, cubed
2 cups water, you can add more
1 (14 ounce) can stewed tomatoes

Steps:

  • Chop up the fish and sprinkle with lemon juice, put in a bowl and refridgerate till needed.
  • Saute onion and garlic with butter till golden brown.
  • Add thyme, old bay, salt, pepper, potatoes, bay leaves and celery leaves, sauté for a minute.
  • Add carrots and tomatoes, sauté for a minute, then add the water.
  • Simmer for 20 minutes with cover on.
  • Add fish, Worcestershire, wine, celery and cover, simmering for 15 minutes or until fish is done.
  • Serve with garlic bread and salad.

2 lbs cusk (or other good chowder fish, if using Cusk cut into good bite size pieces) or 2 lbs haddock, cut in 1" cubes (or other good chowder fish, if using Cusk cut into good bite size pieces)
3 onions, diced
4 cups diced raw potatoes
1 can evaporated milk
3 cups fresh milk (1%, 2% or Whole)
1/4 lb butter
1/2 teaspoon ground pepper
1/2 teaspoon salt
1/4 teaspoon savory (optional)
2 cans clam broth or 2 cups water

Steps:

  • Cook onions and potatoes in broth or water until almost tender.
  • Add fish and complete cooking.
  • When fish flakes easily, add butter, salt, 1/2 the pepper, savory and all the milk.
  • Heat completely without boiling (very important, never boil any chowder).
  • Sprinkle with remaining pepper and serve with oyster crackers or saltines.
  • Note: If you want more potatoes or fish just add more broth and milk.

1 (16 ounce) can tomato paste
1 (16 ounce) can tomato puree
3 quarts fish bouillon cubes
2 large bermuda onions, minced
6 -8 stalks celery, minced
4 carrots, minced
6 ounces outerbridges sherry pepper sauce (or other good brand)
2 ounces goslings black seal rum (or other good rum)
3 -3 1/2 lbs fresh light meat fish (like Wahoo, Bonito, AmberJack or even frozen cod)
2 ounces crushed garlic
1/2 ounce leaf oregano
1/2 ounce dried leaf basil
1/2 ounce crushed black peppercorns
salt, to taste
granulated sugar, to taste

Steps:

  • Saute the onions, carrots and the celery with the fish until the fish until the fish is cooked to the point that it breaks up.
  • Add the rum, the sherry peppers sauce, the peppercorns, the garlic and the herbs and stir. Let it simmer for 2 minutes.
  • Then add the tomato products and the fish bouillon.
  • Simmer for about 30 minutes.
  • While you are simmering it helps to mix with a whisk to ensure all the fish breaks up.
  • (That is of course optional for the people that would like larger pieces of fish).
  • Bermuda fish chowder is traditionally served with more black rum and sherry pepper sauce to be added to suit the taste of the individual eating it.

  • In a heavy bottom stock pot, render fat from bacon or salt pork over low heat for about 5-7 minutes. When a few TBSPs renders out, raise heat to medium and brown the salt pork or bacon, stirring frequently to prevent burning. Remove the pieces and reserve but leave the rendered fat in the pot.
  • Add the onions and celery and saute 5 to 7 minutes. If more fat is needed, add 1 TBSP unsalted butter. Add garlic in the last minute.
  • Add the fish stock and potatoes. Make sure there’s enough stock to barely cover all the vegetables. Add a little more stock or water, if needed. Bring to a boil and then reduce the heat, cover the pot and simmer about 10-15 minutes or until potatoes are tender.
