NO BAKE BLUEBERRY CREAM PIE
This No Bake Blueberry Cream Pie is the perfect easy treat for summer, or anytime! A graham cracker crust is topped with a blueberry and cream cheese filling, then finished with a whipped cream topping. You don't even need to turn on your oven for this one!

- Combine graham cracker crumbs, sugar, and melted butter together in a large bowl, mixing until crumbly. Press into the bottom and slightly up the sides of a 9 inch pie plate, pressing down firmly with your fingers. You can use the back of a spoon or the bottom of a round glass to help press the crust down as well. Chill the crust in the refrigerator for 30-45 minutes before adding the filling to help the crust set.
- In a medium sized bowl, beat together the cream cheese and powdered sugar with an electric mixer until smooth. Fold in the blueberry pie filling, then 1/2 cup of the whipped topping. Spread the filling over the prepared and chilled crust.
- Spread the rest of the container of whipped topping over the top of the pie. Cover the pie and chill in the refrigerator for at least two hours before serving. Cut into slices and enjoy!

MYSTERY INGREDIENT WILD BLUEBERRY PIE
I came up with this tasty twist on a classic blueberry pie recipe when I was searching the spice cupboard for nutmeg. My family loved it so much that I made two more pies the next day! Serve with whipped cream or ice cream.

- Preheat oven to 375 degrees F (190 degrees C). Press 1 pie crust pastry into the bottom and sides of a 9-inch pie pan.
- Stir blueberries, sugar, flour, and cinnamon together in a large bowl. Add almond extract; stir to coat. Pour blueberry mixture into the prepared pie crust. Dot the blueberry mixture with butter pieces. Top with second pie crust, crimping the two crusts together. Brush top crust with milk. Make a few incisions with a knife into the top crust to allow steam to escape during baking. Wrap the edges of the pie with aluminum foil to avoid burning.
- Bake in the preheated oven for 25 minutes. Remove foil, and continue baking until blueberry filling is bubbling and crust is browned, 20 to 25 more minutes. Cool before serving.

This is one of my favorite pies--not too sweet, good hot or cold, with or without ice cream. Plus, it's easy to make.

- Preheat oven to 350 degrees F (175 degrees C). Place the blueberries in the pastry shell and set aside.
- Combine 1 cup sugar, 1/3 cup flour, and salt. Add eggs and sour cream, stirring until blended. Pour the sour cream custard over the blueberries.
- In another bowl, combine 1/2 cup sugar and 1/2 cup flour. Cut in the butter with pastry blender until the mixture resembles coarse meal. Sprinkle the topping over the sour cream mixture and berries in the pie shell.
- Bake in the preheated oven for 50 to 55 minutes, or until lightly browned. Cool on wire rack.

CINNAMON WHIPPED CREAM
The inspiration for the whipped cream came from Bon Appetit December 2002 issue. I've changed the measurements to my own taste. This whipped cream is delicious on anything with apples such as pie, cobbler and apple bread (see recipe 76946 for a great combo). Also would be nice on top of hot chocolate or coffee!

- Pour heavy cream into chilled glass bowl (I use a small but deep glass bowl).
- Beat on high speed.
- Slowly add sugar, cinnamon and vanilla.
- Continue beating until stiff peaks form.
- Tip: When making whipped cream I dampen a paper towel with vinegar and wipe the inside of a glass bowl with it.
- Continue to wipe until dry and place inside freezer with beaters or whisk.
- Leave in freezer for 10 minutes to chill then use to make whipped cream.
BLUEBERRY PIE WITH CINNAMON WHIPPED CREAM
I got this recipe from a friend - wonderful pie with a crumb topping - the cinnamon whipped cream makes it over the top great. You can make your own pie crust or just buy one pre-made.

- Mix sugar, cornstarch, salt, lemon juice, and cinnamon - sprinkle over blueberries.
- Pour filling into pie crust.
- For the crumb topping, stir together the brown sugar, oats, flour and cinnamon.
- Mix in butter using a fork until crumbly. Spread the crumb topping evenly over the pie filling and bake the pie at 375 for 45-50 minutes, until the crust is golden brown.
- Cool.
- For the cinnamon whipped cream, whip the cream until slightly thick. Add powdered sugar, cinnamon, and vanilla extract and continue whipping until stiff peaks form.

- Combine the first four ingredients; press onto the bottom and up the sides of an ungreased 9-in. pie plate. Bake at 350° for 8-10 minutes or until crust just begins to brown. - Preheat oven to 325°F. In a large bowl, combine graham cracker crumbs, sugar, and salt. Add melted butter and stir until combined. Dump the mixture into a 9 ½ inch pie plate. Press it into the bottom and little more than halfway up the sides of the pie dish. I use the bottom of a drinking glass or measuring cup to help pack it in. Bake for 8-10 minutes, until golden and fragrant. Set aside to cool completely. Meanwhile, begin the blueberry filling.
- Place the blueberries in a medium sized saucepan. Whisk the orange juice and cornstarch and then add it to the blueberries. Add the sugar and lemon zest and stir to combine. Place the saucepan over medium-high heat and bring to a simmer, stirring frequently. Once simmering, reduce heat to medium-low (it should still be lightly bubbling) and cook, stirring frequently, for about 4 minutes, until the mixture has thickened and some of the blueberries have burst (it will thicken more as it cools). I recommend stirring with a rubber or silicone spatula and scraping the bottom and corners of the pan. Remove from heat and cool to room temperature.
- Using a hand mixer or stand mixer, beat cream cheese until smooth. Add sweetened condensed milk and beat until combined, scraping the bowl and beater as needed. Add powdered sugar and vanilla and beat until smooth.
- Scoop cream cheese mixture into cooled graham cracker crust. Spread into an even layer. Add cooled blueberry filling on top of cream cheese and spread it into an even layer. Cover and refrigerate for at least 5 hours. Serve chilled.
