This cake is so moist and easy! It is delicious served as a coffee cake or as a dessert. The blueberry glaze makes it a very pretty cake, too.

1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant vanilla pudding mix
¼ cup white sugar
¼ cup water
¾ cup vegetable oil
3 eggs
1 (8 ounce) package cream cheese, room temperature
1 (16.5 ounce) can blueberries, drained, juice reserved
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
  • In a large bowl, stir together cake mix, pudding mix and sugar. Make a well in the center and pour in water, oil, eggs and cream cheese. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Stir in the blueberries. Pour batter into prepared pan.
  • Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  • Make Glaze: In a small bowl, combine confectioners' sugar with 2 tablespoons reserved juice from the blueberries. Drizzle over cooled cake.

1 ½ cups butter
3 cups white sugar
6 eggs
3 cups all-purpose flour
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F (160 degrees C) grease and flour a 10 inch tube pan.
  • In a large bowl, cream butter and cream cheese until smooth. Add sugar gradually and beat until fluffy.
  • Add eggs two at a time, beating well with each addition. Add the flour all at once and mix in. Add vanilla.
  • Pour into a 10 inch tube pan. Bake at 325 degrees F (160 degrees C) for 1 hour and 20 minutes. Check for doneness at 1 hour. A toothpick inserted into center of cake will come out clean.

8 ounces cream cheese
1 1/2 cups butter
3 cups granulated sugar
6 eggs
3 cups all-purpose flour
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 cup frozen blueberries

Steps:

  • Cream together the cream cheese, butter and sugar.
  • Add the eggs, one at a time, beating well after each egg.
  • Add the flour, one-cup at a time, beating well after each cup.
  • Add vanilla and lemon extracts; beat well.
  • Fold in the blueberries.
  • Pour the batter into a greased and floured Bundt pan.
  • Bake at 350 degrees F for 30 minutes, and then turn the temperature down to 325 degrees F and bake for another 55 minutes.
  • Test the cake, and bake a little longer if needed.

1 pkg yellow cake mix
1/4 c sugar
3 eggs
1 pkg (8 oz.) cream cheese, softened
1/2 c oil
1 tsp vanilla
1 pt blueberries, rinsed and drained

Steps:

  • 1. Measure out 2 tbsps. of the cake mix and set aside.
  • 2. In a large bowl, mix cream cheese and sugar; then add eggs, oil, vanilla and cake mix. Beat on low speed for 1 minute. Scrape bowl and beat 4 minutes on medium speed.
  • 3. Toss blueberries with 2 tbsps. cake mix and then fold in blueberries.
  • 4. Spoon batter into greased and floured tube or Bundt pan.
  • 5. Bake at 325 degrees for 60-65 minutes.
  • 6. Cool in pan for 20 minutes, then take out of pan and cool completely on wire rack.

1 (8 ounce) package cream cheese
2 ½ cups white sugar
6 eggs at room temperature
1 teaspoon vanilla extract
1 teaspoon almond extract
3 cups cake flour (such as Swans Down®)
¼ teaspoon ground nutmeg

Steps:

  • Preheat oven to 325 degrees F (160 degrees C). Grease and flour a 10-inch tube pan.
  • Beat butter and cream cheese together with an electric mixer in a large bowl until smooth. Beat sugar into butter mixture until light and fluffy. The mixture should be noticeably lighter in color. Add the eggs two at a time, allowing each pair of eggs to blend into the butter mixture before adding the next. Beat in vanilla and almond extracts with the last eggs. Pour the flour and nutmeg into the bowl and beat until just incorporated. Pour the batter into the prepared tube pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 80 minutes. Check for doneness after 1 hour. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

Steps:

  • Preheat oven to 350 degrees F.
  • Lightly grease 9" spring-form pan.
  • For the cake: Cream together butter and sugar until creamy.
  • Add egg and vanilla, to creamed mixture and beat until combined.
  • Sift together flour, baking powder and salt. Add alternately with milk until combined.
  • Scrape batter into pan and spread evenly.
  • For cream cheese filling: Beat cream cheese until smooth.
  • Gradually add sugar, scraping the sides of the bowl well.
  • Add vanilla and blend.
  • Add egg and mix well.
  • Spoon cream cheese filling over cake batter.
  • Top with blueberries.
  • For the streusel: In small bowl blend sugar, flour and cinnamon.
  • Cut in butter until crumbly.
  • Sprinkle streusel on top of berries.
  • Bake 50-60 minutes.
  • Cool completely before slicing.
  • Note: I usually bake for 52 minutes.

1 teaspoon almonds extract

1 cup sour cream
1-1/2 cups fresh or frozen blueberries

Steps:

  • Let eggs stand at room temperature for 30 minutes. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. Add the extracts and butter flavoring. Combine flour and baking soda; add to creamed mixture alternately with sour cream, beating well after each addition. 1/2 cup packed brown sugar
1/2 cup chopped pecans, optional
