Blueberry Breakfast Salad With Blueberry Vinaigrette image

I found this recipe on FruitandVeggieGuru.com. I haven't tried it yet but it sounds interesting. The dressing recipe is in the salad recipe. The cooking time is the chilling time for the dressing.

1 lb mixed baby greens
2 cups blueberry vinaigrette
2 cups fresh blueberries
2 cups fresh orange sections or 2 cups canned mandarin oranges, drained
1 cup granola cereal
blueberry vinaigrette, ingredients
1/2 cup olive oil
1/2 cup frozen blueberries, thawed
2 teaspoons Dijon mustard
1 tablespoon brown sugar
1 teaspoon minced shallot
1/3 teaspoon kosher salt
1/4 teaspoon white pepper
1/4 teaspoon paprika

Steps:

  • BLUEBERRY VINAIGRETTE DIRECTIONS.
  • In a food processor combine all dressing ingredients.
  • Process until mixture is smooth.
  • Chill at least 30 min to blend flavors.
  • BLUEBERRY BREAKFAST SALAD DIRECTIONS.
  • Toss salad greens with 3/4 cup of the previously made blueberry vinaigrette.
  • Divide the greens among 4 salad plates.
  • Arrange 1/2 cup orange sections and 1/2 cup blueberries on top of each salad.
  • Sprinkle each salad with 1/4 cup granola.
  • Drizzle remaining dressing on top, if desired-it depends on how "dressed" you like your salad.
  • Serve immediately.

Yummy vinaigrette dressing with a nice richness thanks to some balsamic vinegar and fresh blueberries! I prefer a little less oil for a thicker dressing and my husband prefers a little more oil for a thinner dressing.

Quick to put together, and extremely tasty. This delightful recipe was compliments of Taste of Nova Scotia and was created by Sean Laceby of the Blomidon Inn in Wolfville. My good friend Gail has also made this with strawberries as well as peaches (her favourite). This is one quarter of the original recipe, which was listed as serving 4 - 8. As Gail mentions, this would only apply if you planned to serve it as a beverage. ;) If you have issues with small seeds, it would be a good idea to strain before bottling. I don't know how long it keeps, but I would think you'd be safe if used within a week. I'm still breathing, so I guess that's a good indicator.

2 boneless skinless chicken breast halves (6 ounces each)
1 tablespoon olive oil
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon pepper
VINAIGRETTE:
1/4 cup olive oil
1/4 cup blueberry preserves
2 tablespoons balsamic vinegar
2 tablespoons maple syrup
1/4 teaspoon ground mustard
1/8 teaspoon salt
Dash pepper
SALADS:
1 package (10 ounces) ready-to-serve salad greens
1 cup fresh blueberries
1/2 cup canned mandarin oranges
1 cup crumbled goat cheese

Steps:

  • Toss chicken with oil, garlic, salt and pepper; refrigerate, covered, 30 minutes. In a small bowl, whisk together vinaigrette ingredients; refrigerate, covered, until serving., Grill chicken, covered, over medium heat until a thermometer reads 165°, 5-7 minutes per side. Let stand 5 minutes before slicing., Place greens on a serving plate; top with chicken, blueberries and mandarin oranges. Whisk vinaigrette again; drizzle over salad. Top with cheese.
