1 cup blueberries
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups flour

Steps:

  • Mash bananas in a large mixing bowl.
  • Add sugar and egg.
  • Add butter and blueberries.
  • Combine dry ingredients and gently stir into banana mixture.
  • Pour into 12 well-greased muffin cups.
  • Bake at 375 degrees for 20 minutes.

1/2 teaspoon baking soda
1 tablespoon baking powder
1 cup sugar
3 cups flour
3/4 cup milk
3/4 cup butter, melted
2 eggs
1 teaspoon vanilla extract
2 cups fresh blueberries
1 large banana, ripened and mashed

Steps:

  • Creating the Gift in a Jar:
  • Wash and thoroughly dry a 1-quart wide-mouth canning jar.
  • Layer the ingredients in the jar as listed above starting with the baking soda, baking powder, sugar and then flour - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.
  • Secure the lid and decorate as desired; attach the instructions for making these cookies found below.
  • BLUEBERRY BANANA MUFFINS GIFT TAG:
  • Additional ingredients to be added by the recipient: 3/4 cup milk, 3/4 cup butter, melted, 2 eggs, 1 tsp vanilla extract, 2 cups fresh blueberries and 1 large ripe banana, mashed.
  • BLUEBERRY BANANA MUFFIN INSTRUCTIONS:
  • Preheat oven to 375.
  • In a large bowl, combine the milk, butter, eggs and extract.
  • Add the contents of the jar, and stir just until mixed; do not overstir.
  • Gently fold in blueberries and banana.

  • Bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool for 10 minutes in the tin, then transfer to a wire rack and cool completely.

2-1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup packed brown sugar
1 cup M&M's minis or miniature semisweet chocolate chips
ADDITIONAL INGREDIENTS:
1 cup mashed ripe bananas (about 2 large)
1/2 cup butter, melted
2 large eggs, room temperature
1/2 teaspoon vanilla extract

Steps:

  • In a small bowl, combine the flour, baking powder and salt. In a 1-qt. glass jar, layer the flour mixture, brown sugar and M&M's. Cover and store in a cool, dry place for up to 3 months. Yield: 1 batch (about 4 cups mix)., To prepare muffins: Place muffin mix in a large bowl. Whisk the bananas, butter, eggs and vanilla; stir into dry ingredients just until moistened. Fill 48 greased or paper-lined mini-muffin cups three-fourths full. Bake at 400° until a toothpick comes out clean, 9-10 minutes. Serve warm.

1 cup blueberries
3 ripe bananas, mashed
2/3 cup unbleached cane sugar
1 egg
1/2 cup butter
1 teaspoon vanilla
1/3 cup milk
1 teaspoon baking powder
1 1/2 cups all-purpose flour
1 teaspoon cinnamon
3 teaspoons unbleached cane sugar

Steps:

  • Heat oven to 375 degrees. Grease 12 muffin tin or line with cupcake liners.
  • In a medium bowl, mash bananas and set aside.
  • Rinse blueberries and set aside. If using frozen blueberries, let stand for 10 minutes so that they thaw.
  • Combine cane sugar and butter in a large bowl. Beat well for 2 minutes on high. Add egg and vanilla. Beat for another minute.
  • Combine flour and baking powder in a small bowl. Add to batter alternately with milk. Beat well together.
  • Stir in mashed banana. Stir in blueberries. Mix well.
  • Fill muffin tins to the top.
  • Bake at 375 for 18 to 20 minutes or until toothpick inserted in center comes out clean.
  • While muffins are baking, combine cinnamon and the 3 teaspoons of cane sugar.
  • Sprinkle tops of muffins with cinnamon/sugar.

2 cups all-purpose flour
3/4 teaspoon baking soda
1/8 teaspoon salt
1 cup fresh/frozen blueberries

Steps:

  • Heat oven to 350°.
  • In large mix bowl, combine sugar, buttermilk, butter, bananas, eggs and vanilla.
  • Beat at medium speed, scraping bowl often until creamy (1-2 min).
  • Add flour, baking soda and salt.
  • Beat at low speed until moistened (1-2 min.).
  • By hand, stir in blueberries.
  • Spoon into paper-lined muffin cups.
  • Bake for 25-30 min.
  • or until toothpick inserted into center comes out clean.
  • Remove from pan, cook and sprinkle with powdered sugar.
  • Makes 6 Texas-size muffins with a little left over to freeze and bake later.
  • When I make these, I just sprinkle granulated sugar on top prior to baking, and omit the powdered sugar.

1 1/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup granulated sugar or 1/4 cup light brown sugar
1/2 cup dried blueberries
2 tablespoons unsalted butter, plus
2 teaspoons unsalted butter
1 egg, beaten
1 1/4 cups milk

Steps:

  • Combine flour, baking powder and salt in a medium bowl.
  • Pour into 1 pint wide mouth jar with tight fitting lid and pack down lightly. Layer maple sugar and dried blueberries attractively. Pack down lightly before adding each layer.
  • Seal jar.
  • Cover top of jar with fabric. Attach gift tag/recipe with raffia or ribbon. Attach large spatula if desired.
  • Add instructions - melt butter in large heavy bottomed skillet or griddle over medium heat.
  • Pour into medium bowl leaving thin film of butter on skillet.
  • Mix beaten egg and milk into butter in bowl; set aside.
  • Pour Blueberry Pancake into large bowl.
  • Stir well.
  • Add liquid mixture and stir to mix (Do not beat).
  • Pour 1/4 cup portions of batter into skillet.
  • Cook over medium heat 2-3 minutes on each side or until golden.
  • Dust with powdered sugar (optional).
