Steps:
- Slice the bread in half lengthwise, forming two flat halves. Spread the goat cheese on each section of bread. Layer arugula on the bottom half and then ham over the greens. Fold and crumple the ham as you layer it on the bread. Form piles of ham across the bread to create the best texture.
- Spoon the jam over the goat cheese on the top half of the bread. Close the sandwich and slice into smaller sections. Serve immediately.
PARTY HAM & EGG SALAD SANDWICHES
A fun twist on ham and eggs! I loved both these spreads. The egg salad is creamy and the ham salad has a touch of crunchiness thanks to the celery. The presentation is lovely too thanks to the two different breads. These would be great served at a luncheon or as an appetizer at a holiday party.

Steps:
- 1. HAM SALAD: Drain liquid from canned ham, and place into bowl. Separate, and smash with a fork.
- 2. Add remaining ingredients, increasing or decreasing mayonnaise to achieve a smooth spreading consistency while remaining stiff enough to not "run".
- 3. Refrigerate several hours or overnight to allow the flavors to blend!!!
- 4. EGG SALAD: Cook eggs with a pinch of salt to hard boiled stage.
- 5. Immediately drain hot water, crack eggs, and place in cold water. They should immediately peel with ease.
- 6. Using a hand grater, grate the eggs into a bowl, and add remaining ingredients, increasing or decreasing mayonnaise, as necessary to achieve a smooth spreading consistency while remaining stiff enough to not "run".
- 7. Cover and place in the refrigerator.
- 8. ASSEMBLE SANDWICHES: Remove the crusts from the bread.
- 9. Spread a thin layer of ham mixture on one slice of bread, and top the ham with a thin layer of egg mixture.
- 10. Place another slice of bread on top, lay flat on cutting board, and with an electric knife, diagonally slice the sandwich.
- 11. Make half the sandwiches with whole wheat bread and half with white bread, attractively place on platter, and garnish!!!! THE PERFECT PARTY SANDWICH ... that EVERYONE LOVES!!!!
HAM AND BEEF SLIDERS
I love sliders! There are so many different things you can do, sky's the limit! This particular version is a family favorite. Like a hot ham and cheese sandwich plus a cheeseburger all in one! I will sometimes bake the beef before hand, then when it's dinner time, assemble the sliders.

VEAL CORDON BLEU
Steps:
- If cutlets are thicker than 1/8 inch, pound them between sheets of plastic wrap with flat side of meat pounder. Using cheese plane, shave enough cheese to make a double layer for each of 4 cutlets.
- Pat dry 2 cutlets of the same shape and arrange 1 cutlet on a work surface. Put 1 slice of ham on cutlet, trimming ham to leave a 1/4-inch border of veal around the ham, then arrange a double layer of cheese on ham and top with second cutlet. Lightly pound 1/4-inch border around cutlets' outer edges to seal veal sandwich. Make 3 more sandwiches in same manner.
- Line a baking sheet with wax paper. Stir together bread crumbs, 1 teaspoon salt, and 1/4 teaspoon pepper in a large shallow baking dish. Stir together flour, 3/4 teaspoon salt, and 1/4 teaspoon pepper in another large baking dish. Whisk together eggs, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper in a third large baking dish.
- Dredge 1 veal sandwich in flour, knocking off excess, then dip in egg to coat, letting excess drip off, and dredge in bread crumbs, patting to help them adhere. Transfer coated sandwich to a rack set on a baking sheet. Dredge and coat remaining sandwiches in same manner. Chill, uncovered, 1 hour, and let stand at room temperature 30 minutes before cooking.
- Heat 1 tablespoon butter and 1 tablespoon oil in a 12-inch heavy skillet over moderately high heat until foam subsides. Add 2 veal sandwiches, then reduce heat to moderate and cook, turning over once, until golden, about 4 minutes total. Transfer to plates and wipe out skillet with paper towels. Cook remaining sandwiches in remaining butter and oil in same manner.

ROCKY MOUNTAIN OVEN TOASTED SUBS
Man, this is a sandwich! Layered with assorted meats and melted cheese and topped with mashed avocado, pickles, and cool ranch dressing, it's quite tasty. Since they serve two-three (depending on how big you cut the slices), these sandwiches would be great for a tailgate or game night. A delicious and beautiful sandwich.
