BLUEBERRY PUDDING CAKE
My father-in-law has a number of blueberry bushes near his house, so I have an abundant supply every year. I'm always looking for new ways to use them. This blueberry pudding cake is one of my latest creations. -Jan Bamford, Sedgwick, Maine

- Preheat oven to 350°. Toss blueberries with cinnamon and lemon juice; pour into a greased 8-in. square baking dish. In a small bowl, combine flour, sugar and baking powder; stir in milk and butter. Spoon over berries. , Combine sugar and cornstarch; sprinkle over batter. Slowly pour boiling water over all. Bake until a toothpick inserted into the cake portion comes out clean, 45-50 minutes. Serve warm. If desired, top with whipped cream and additional blueberries.

Steps:
- Put blueberries, raspberries and lemon juice in an 8X8 baking pan.
- Combine flour, baking powder, salt, cinnamon, and 3/4 cup sugar.
- Beat in milk, egg, melted butter and vanilla. Spread over berries.
- Mix together 1 cup sugar and cornstarch.
- Sprinkle over the batter.
- Pour boiling water over it all, DO NOT STIR!
- Bake at 350F for 40-50 minutes or until done.

- Preheat oven to 350 degrees F. Grease a deep sided 8 inch baking dish. Put the berries in the dish and squeeze over lemon juice. Stir and set aside.
- In a medium mixing bowl, whisk together the flour, 1/2 Cup/100 grams of the sugar and baking powder. Add the melted butter and yogurt. Mix until a you have a thick batter consistency. Spoon over the berries. You will need to smooth it out evenly as the batter is quite thick. Don't worry if some of the berries are peeking through.
- In a separate bowl, whisk together the cornstarch and remaining sugar. sprinkle this evenly over the batter and pour over boiling water. Bake for approximately 30 - 35 minutes. A toothpick inserted in the cake part should come out clean.
