- Preheat oven to 350°. In a large bowl, beat butter until light and fluffy. Beat in cheese until blended. Combine flour, salt and cayenne; stir into cheese mixture until a dough forms. Roll into a 15x6-in. rectangle. Cut into thirty 6-in. strips. Gently place strips 1 in. apart on ungreased baking sheets., Bake until lightly browned, 15-20 minutes. Cool 5 minutes before removing from pans to wire racks to cool completely. Store in an airtight container.

- Preheat the oven to 400 degrees.
- Line several baking sheets with parchment paper or spray with nonstick cooking spray.
- In a small bowl, beat together the egg and water to make an egg wash; set aside.
- In another bowl, toss together the parmesan and blue cheeses; set aside.
- On a lightly floured work surface, roll out each puff pastry sheet into a 14-by-10-inch rectangle.
- Brush both of the pastry sheets to the edges with the egg wash and sprinkle with paprika.
- Sprinkle the cheese mixture over one of the pastry sheets and top with the other pastry sheet, egg wash side down.
- Roll out the pastry with a rolling pin to flatten slightly.
- Cut the pastry in half horizontally with a sharp knife and then lengthwise into 1/2-inch-wide strips.
- Carefully pick up a stick and, with both hands, twist to form a spiral (left hand counter-clockwise, right hand clockwise).
- Arrange cheese straws about 1 1/2 inches apart on the prepared cookie sheets, pressing ends onto the sheets.
- Bake until golden and puffed, about 12 to 15 minutes.
- Remove from the oven and cool before removing to a serving dish.
BLUE CHEESE STRAWS

- In a food processor, combine the blue cheese, flour, cornstarch, butter, salt and pepper and pulse until the dough just comes together.
- Transfer the dough to a sheet of plastic wrap and shape it into a 4-inch disk; wrap and refrigerate until firm, about 1 hour, or for up to 1 day.
- Preheat the oven to 375°. Line a baking sheet with parchment paper.
- On a well floured surface, roll out the dough to a 12-by-6-inch rectangle about 1/8 inch thick.
- Sprinkle the poppy seeds over the dough and press lightly to help them adhere. Cut the dough into 6-by- 1/2 -inch strips and transfer them to the baking sheet; twist the ends in opposite directions to make spirals.
- Bake the cheese straws for about 15 minutes, or until crisp and brown. Let the straws cool on the baking sheet before serving.
CHEESE STRAWS

- Preheat the oven to 325 degrees F.
- Put the softened cheese and butter in the bowl of a heavy-duty electric mixer. Using the heaviest mixer paddle attachment, beat until the mixture has the consistency of whipped cream, 15 to 30 minutes.
- In a large bowl, sift 3 cups of the flour with the salt, black pepper, cayenne pepper and garlic powder. Gradually add the seasoned flour to the cheese mixture by large spoonfuls, beating well after each addition. Add the remaining 1 cup unseasoned flour incrementally until the dough is somewhat stiff but still soft enough to be pushed through a cookie press; you may not need to add all the flour.
- Lightly spray 4 cookie sheets with cooking spray. Put a portion of the dough into a cookie press fitted with the star tube and press the dough onto a cookie sheet in long strips that run the length of the pan. Repeat until the pan is full. Bake until straws are golden brown and crisp, about 20 minutes.
- With your hands or a sharp knife, break or cut the long strips into 3-inch lengths. Use a flat, thin spatula or an egg turner to remove the cheese strips from the pan. Allow them to cool on a wire rack. When they are completely cool, serve or store in a tightly covered container.
CHEESE STRAWS

- Preheat the oven to 375 degrees F.
- Roll out each sheet of puff pastry on a lightly floured board until it's 10 by 12 inches. Beat the egg with 1 tablespoon of water and brush the surface of the pastry. Sprinkle each sheet evenly with 1/4 cup of the parmesan, 1/2 cup of the gruyere, 1/2 teaspoon of the thyme, 1/2 teaspoon of the salt, and some pepper. With the rolling pin, lightly press the flavorings into the puff pastry. Cut each sheet crosswise with a floured knife or pizza wheel into 11 or 12 strips. Twist each strip and lay on baking sheets lined with parchment paper.
- Bake for 10 to 15 minutes, until lightly browned and puffed. Turn each straw and bake for another 2 minutes. Don't overbake or the cheese will burn. Cool and serve at room temperature.
- Let the puff pastry thaw in the refrigerator overnight.
BLUE CHEESE STRAWS

- Preheat oven to 350 degrees F. Have 2 heavy baking sheets at hand.
- Cut chilled butter into chunks. Combine butter, salt, crumbled blue cheese, cayenne, and flour in a food processor. Pulse until a ball of dough forms. Add egg yolk if the dough does not come together, and process until incorporated.
- Lightly dust a work surface and rolling pin with flour.
- Divide the dough in half. Working with one portion at a time, roll out a rectangle to ¼" thick. Re-dust the rolling pin and work surface as needed. Fold and roll as many times (at least six) as needed to form a tidy 6 X 9 inch rectangle.
- Use a long, sharp knife to score the rectangle of dough, creating 18 straws (approx. 1/2" wide X 6" long). Arrange close but not touching on baking sheets. Repeat with remaining dough.
- Sprinkle lightly with kosher salt. Bake one sheet at a time for 20 to 25 minutes, or until the straws just begin to brown. Transfer to wire racks to cool.
- Store in airtight container.
