Grilled Filet with Blue Cheese Butter image

1 stick unsalted butter, slightly softened
1/4 cup crumbled Cabrales blue cheese
2 teaspoons finely chopped fresh thyme
Salt and freshly cracked black pepper
4 (1 1/2-inch thick) filet mignons
Canola oil, as needed
1 teaspoon coarsely cracked black pepper

Steps:

  • Preheat a grill to high heat.
  • Combine the butter, cheese, and thyme in a bowl and season with salt and pepper, to taste. Cover the bowl and refrigerate for 30 minutes.
  • Brush the steaks with some canola oil, then season them with salt and cracked black pepper. Grill until the meat chars on both sides and is cooked to a medium-rare doneness. Transfer the steaks to a platter, top them with some of the butter and let them rest for 5 minutes before serving.

1 (2 pound) beef top sirloin steak, cut into 4 equal pieces
salt and ground black pepper to taste
12 drops liquid smoke flavoring
2 tablespoons minced garlic, or to taste

Steps:

  • Preheat Panasonic Countertop Induction Oven to Medium-High on the "Grill" setting.
  • Mix butter and blue cheese together in a mixing bowl. Refrigerate until ready to use.
  • Season steak pieces on one side with salt and pepper. Flip and add 3 drops liquid smoke, salt, and pepper to each piece of steak.
  • Place steak pieces on the grill pan. Close oven and set timer for 6 minutes. Flip steak pieces after 3 minutes and spread minced garlic evenly on top. Press "Start" again to continue cooking.
  • Allow steaks to rest for a few minutes before transferring to a serving plate. Garnish with blue cheese butter mixture.

Sunday Rib-Eye Steaks with Blue Cheese Butter, Mushrooms and Sherry image

Whether it's Sunday night or date night, this dish is sure to impress. Chef Richard Blais teaches us how to cook restaurant-quality steaks at home. We'll learn the chef trick of basting steaks with butter, plus two accompaniments that take this meal to the next level: mushrooms deglazed with sherry, and a super savory blue cheese butter to finish the steaks.

4 boneless rib-eye steaks (each about 1 1/2 inches thick)
Kosher salt and freshly ground black pepper
1 tablespoon onion powder
1 tablespoon garlic powder
Neutral oil
1 sprig rosemary
2 cloves garlic
2 tablespoons unsalted butter
Neutral oil
1 pound small button mushrooms
1/4 cup cooking sherry
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1 stick (8 tablespoons) unsalted butter, at room temperature
3 tablespoons blue cheese, at room temperature
2 teaspoons chopped flat-leaf parsley

Steps:

  • Season the steaks with salt and pepper, then sprinkle with the onion powder and garlic powder.
  • Heat a large skillet over high heat. Coat with a little oil, then add the steaks and cook on each side for 4 minutes or until seared. After the second flip, add the 2 tablespoons butter, the rosemary and garlic. Once the butter melts, tilt the skillet slightly to pool the liquid, then constantly spoon the butter over the steaks for 2 more minutes. Flip the steaks and baste again for 2 minutes. Remove the steaks from the skillet and let rest on a platter.
  • Meanwhile, cook the mushrooms: Heat a large skillet over medium heat. Add the mushrooms and cook, stirring occasionally, until golden, 4 to 5 minutes. Remove the skillet from the heat, add the sherry, then return to the heat and cook, scraping any browned bits from the bottom with a wooden spoon. Add the butter, swirl the skillet to coat, then season with salt and pepper. Set aside and keep warm.
  • For the blue cheese butter: Mash the butter, blue cheese and parsley together with a fork in a small bowl until combined. Use right away or refrigerate for up to 2 weeks. Alternatively, you can fill small cookie cutters with the blue cheese butter and refrigerate until firm enough to unmold and take on a decorative shape. A leaf-shaped cutter would be pretty.
  • Serve the mushrooms directly on top of the steaks. Or slice the steaks and serve the mushrooms in a side dish. Top each steak with a pat of the blue cheese butter, if desired.

WELL-DONE STEAK WITH BLUE CHEESE COMPOUND BUTTER



Well-Done Steak with Blue Cheese Compound Butter image

1 cup (2 sticks) unsalted butter, at room temperature, plus 2 tablespoons
6 ounces blue cheese
Kosher salt and freshly ground black pepper
4 New York strip steaks, 14 to 16 ounces each
1 tablespoon vegetable oil

Steps:

  • Combine the 1 cup butter, blue cheese, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a food processor. Process until well blended and smooth. Transfer to a sheet of plastic wrap and roll into a cylinder. Wrap tightly and place in the freezer to chill.
  • Remove the steaks from the refrigerator and let them come to room temp for 30 to 45 minutes. Meanwhile, preheat the oven to 450 degrees F.
  • Sprinkle the steaks with salt. Heat a cast-iron grill pan over high heat until starting to smoke, then add a small amount of oil to the pan. Place the steaks in the pan and cook for 4 minutes. Flip and cook for another 4 minutes. Turn off the oven and transfer the pan to the oven for 8 minutes, or until the steaks reach an internal temperature of 155 degrees F.
  • Place 1/2 tablespoon of the remaining butter on each steak and allow the steaks to rest for 5 minutes before serving; the internal temperature will climb another 5 degrees.
  • Serve the steaks topped with blue cheese compound butter.

1/4 cup cider vinegar
1/4 cup honey
1 tablespoon reduced-sodium soy sauce
1/2 teaspoon paprika
1 beef flank steak (2 pounds)
BLUE CHEESE BUTTER:
3/4 cup crumbled blue cheese
3 tablespoons butter, softened
1 green onion, finely chopped
1 tablespoon minced fresh cilantro
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a shallow dish, combine the first five ingredients. Add steak; turn to coat. Cover and refrigerate 2-4 hours., Drain beef, discarding marinade. Grill steak, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let steak stand 5 minutes before thinly slicing across the grain., In a small bowl, beat blue cheese butter ingredients until blended. Serve steak with butter.

Easy and very yummy Gorgonzola butter. Ideal for serving with a nice juicy steak. You can use any soft blue cheese for this that you fancy.

50 g unsalted butter, softened
50 g gorgonzola
25 g walnuts, chopped
2 tablespoons fresh parsley, chopped

Steps:

  • Make sure the butter is soft.
  • Put the butter, gorgonzola, finely chopped walnuts and chopped parsley into a bowl and beat well.
  • Season to taste.
  • Get yourself a square piece of greeceproof paper about 10 x 10 inches.
  • Make it damp by running your hand under a tap then smooth over the paper.
  • Now put the butter mixture along one side in a nice fattish log shape.
  • Carefully roll up into a sausage shape - keeping the mixture tight and like a sausage.
  • Twist the ends of the paper like your making a christmas cracker.
  • Put into the fridge to set - just before your steak is ready remove from the fridge and cut into slices - put a slice or a couple of slices on top of each steak.
  • Serve imeadiately.

6 oz butter at room temperature (softened)
1/2 lb bleu cheese of your choice, crumbled (try a fairly strong blue cheese, maybe a roquefort or stilton or if you want a milder blue cheese, try gorgonzola)
3/4 tsp worcestershire
3/4 tsp coarse black pepper

Steps:

  • 1. In a bowl, cream the butter until smooth Fold in the cheese, Worcestershire sauce and pepper (some chunks of the blue cheese should remain)
  • 2. Roll in plastic wrap or parchment paper and twist the ends to close
  • 3. If not using immediately, refrigerate (3 days maximum) or freeze (2 months, maximum) If frozen, thaw and cut into 1 1/2 ounce pieces and place on top of hot steaks

2 tablespoons red wine vinegar
2 cloves garlic, minced
1 tablespoon cracked black pepper
1 teaspoon dried rosemary leaves, crumbled
1 teaspoon dried oregano
¼ teaspoon kosher salt
¼ cup olive oil
1 ½ pounds flat iron steak
3 tablespoons softened unsalted butter
1 ounce crumbled blue cheese
1 tablespoon chopped fresh chives
⅛ teaspoon cracked black pepper

Steps:

  • Whisk together vinegar, garlic, 1 tablespoon black pepper, rosemary, oregano, and kosher salt in a bowl along with the olive oil. Place the flat iron steak into a resealable plastic bag, and pour the marinade overtop. Squeeze the excess air from the bag and seal. Marinate in the refrigerator 30 minutes.
  • Preheat an outdoor grill for medium-high heat and lightly oil grate. Remove steak from the marinade, shake off excess, and discard the remaining marinade. Allow the steak to stand at room temperature for 15 minutes as the grill warms.
  • Mash together the butter, blue cheese, chives, and 1/8 teaspoon of black pepper; set aside. Cook the steak on the preheated grill to desired degree of doneness, about 5 minutes per side for medium-rare. Allow the steak to rest in a warm place for 10 minutes before slicing thinly across the grain. Serve with a dollop of blue cheese-chive butter.

Steps:

  • Make the compound butter: In a medium bowl, mix together the butter, blue cheese, chives, salt, and pepper until well combined.
  • Transfer the butter to a piece of plastic wrap and roll into a log. Refrigerate for at least 1 hour, or until ready to use.
  • Make the fried onions: In a shallow bowl, combine the onions and buttermilk and let sit at room temperature for 1 hour.
  • In a medium bowl, whisk together the flour, paprika, salt, and pepper. Dip the buttermilk-coated onions into the flour mixture, shaking off any excess.
  • Fill a large skillet with high sides with the canola oil. Heat the oil over medium-high heat until it reaches 375˚F (190˚C). Once the oil is hot, add the onions in batches and fry for 3 minutes, until golden brown. Transfer the onions to a wire rack to drain and season with salt.
  • Generously season the steaks all over with salt and pepper.
  • Add the olive oil to a large cast-iron or stainless-steel pan over high heat. Once the oil begins to shimmer, add the steaks and cook, without disturbing, until a brown crust forms, about 7 minutes. Flip the steaks and continue to cook for 7 minutes more, until the steak is browned on both sides. Sear the sides of the steak to render any fat. Add the butter and thyme to the pan. Tilt the pan toward you and baste the steaks with the melted butter for 2 minutes, until the internal temperature reaches 135°F (60°C) for medium rare.
  • Serve the steak with the crispy onions and blue cheese compound butter.
