Creamy and smooth with just a little bit of heat, this Buffalo Chicken Casserole is an easy dinner recipe that the whole family can enjoy!

Number Of Ingredients 9

1 (10 ½ ounce) can condensed cream of chicken soup (NOT diluted)
4 ounces cream cheese, softened
½ cup milk
2 tablespoons buffalo wing sauce (or more, to taste)
1 (1 ounce) packet dry ranch seasoning and salad dressing mix
2 cups cooked, shredded chicken (I use a rotisserie chicken for this step)
6 ounces (about 2 cups) dry rotini pasta, cooked and drained
1 stalk celery, sliced (about ½ cup)
½ cup (about 4 ounces) grated cheddar cheese

Steps:

  • Preheat oven to 350 degrees F. Spray a 2-quart baking dish with cooking spray and set aside.
  • In a separate bowl, stir together condensed soup, softened cream cheese, milk, buffalo wing sauce, and ranch seasoning. Gently fold in chicken, cooked pasta and celery.
  • Transfer mixture to prepared baking dish. Sprinkle cheddar cheese over top.
  • Cover tightly with foil or a lid, and bake for about 20-25 minutes (or until hot and bubbly and cheese is melted).

If you like wings and blue cheese, you'll love this omelet! Also a great way to use up leftover wings or a rotisserie chicken. Drizzle with Frank's RedHot® and if you don't like blue cheese, you can easily swap for Cheddar. Garnish with chopped celery and carrots and blue cheese dressing if you like.

3 eggs
1 splash water
salt and ground black pepper to taste
1 tablespoon butter
3 Buffalo wings, meat removed and cut into small pieces
1 teaspoon Buffalo wing sauce (such as Frank's RedHot®)
¼ cup crumbled blue cheese

Steps:

  • Whisk eggs together in a bowl. Whisk in water, salt, and pepper.
  • Melt butter in a large skillet over medium-high heat. Cook and stir chicken pieces in the hot butter until heated through, 1 to 2 minutes. Mix in Buffalo wing sauce; cook and stir for 30 seconds.
  • Pour eggs into the skillet. Swirl eggs with a fork several times, working clockwise from the outside in, until slightly scrambled. Flatten eggs out into an even circle. Reduce heat and cook until set, 1 to 2 minutes. Sprinkle blue cheese over eggs; cook for 1 minute. Fold omelet in half and cook for 1 minute. Flip and cook on the second side, 30 seconds to 1 minute more.

Number Of Ingredients 13

1 pkg. PERDUE® Grilled Chicken Breast Strips, Fully Cooked (22 oz.)
2 1/2 cups chicken stock
3 tbsp. olive oil
2 tbsp. butter
2 cups celery, chopped
1 cup onions, chopped
1 cup carrots, diced
4 cloves garlic, minced
4 tbsp. flour
1/2 cup hot sauce
12 oz. macaroni, cooked
1 cup blue cheese
1/2 cup sour cream

Steps:

  • Preheat oven to 375°F. Spray a casserole or baking dish with cooking spray. In a large pot or Dutch oven, heat the olive oil and butter over medium high heat. Add the celery and cook for 2 to 3 minutes until slightly softened. Add the onions, carrots and garlic. Cook an additional 2 to 3 minutes. Whisk flour into the vegetable mixture. Cook about 1 minute to remove the raw flour taste. Whisk in chicken stock and red-hot sauce. Continue whisking until sauce comes to a boil and has thickened like a gravy (if sauce is too thick, add a little more chicken stock).
  • Remove Dutch oven from heat. Add in cooked macaroni, blue cheese and sour cream. Toss to coat. Fold in chicken strips. Transfer chicken and macaroni to a prepared baking dish. Bake in a preheated oven for 20 minutes until bubbly and golden on top. Let casserole rest for 10 minutes before serving.

1 small onion, finely chopped
1/4 cup panko bread crumbs
1/4 cup Buffalo wing sauce
1 teaspoon dried oregano
1/2 teaspoon pepper
1 pound ground beef
TOPPING:
1/4 cup Buffalo wing sauce
1/4 cup crumbled blue cheese

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first six ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in a greased 11x7-in. baking dish., Bake 20 minutes. Spread wing sauce over top; sprinkle with cheese. Bake until a thermometer reads 160°, 20-30 minutes longer. Let stand 5 minutes before slicing.

Steps:

  • Preheat oven to 350 degrees F.Spray 2-quart baking dish with cooking spray.Add 1 cup crumbled blue cheese.
  • Prepare rice according to package directions.
  • Melt margarine in a large,deep skillet over medium to medium-high heat.Add mushrooms and saute until they release some moisture and begin to brown,4 to 5 minutes.Stir in 1/2 cup wing sauce.Remove mushrooms from the skillet.
  • Heat 2 tablespoons olive oil over medium heat in the same skillet.Saute deboned chicken pieces until browned.Season with red pepper flakes,garlic powder and remaining wing sauce.
  • Combine the rice,chicken,mushrooms,sun dried tomatoes and whipped cream cheese.Mix well,and then spread blue cheese dressing over the top.
  • Sprinkle with crushed crackers and remaining crumbled blue cheese evenly over the casserole and drizzle with 1 tablespoon melted garlic butter.
  • Bake until heated through and topping is golden,about 30 minutes.
