SUNNY 'S CRANBERRY MOJITO PITCHER

Number Of Ingredients 7

2 cups cranberry juice
1/2 cup agave syrup or honey, or more as needed
1/4 cup packed fresh mint leaves, plus more for garnish
2 1/2 cups white rum, such as Cruzan Aged Light Rum
1/2 cup fresh lime juice
1/2 cup fresh or frozen cranberries
1 cup sparkling water or ginger ale

Steps:

  • Combine the cranberry juice, agave and mint in a medium saucepan over medium heat just until it comes to a boil. Whisk to combine, then cover and steep until the cranberry juice tastes like mint, 3 to 5 minutes. If not sweet enough for your liking, add a bit more syrup. Strain out the mint and pour the liquid into a pitcher.
  • Stir the rum and lime juice into the pitcher and refrigerate until cold.
  • To serve, add 3 to 4 mint leaves, a few cranberries and ice to lowball or wine glasses. Pour in the chilled drink, then top off with a splash of sparkling water or ginger ale. Enjoy!

1 cup fresh lightly packed mint leaves
2 limes, sliced in wedges
8 ounces white rum
Blood Orange Soda (San Pellegrino makes a great one)
1 cup unsweetened pure cranberry juice
ice cubes
mint leaves, lime wedges and fresh blueberries for garnish
Ginger Simple Syrup,
1 knob of peeled raw ginger, about 2" long
½ cup water
½ cup sugar
sugar rim:
lime wedge
brown sugar
Garnish: fresh mint, cranberries and slivers of candied ginger

  • For the Sugar rim:
  • Rub the rims of the glasses with a lime wedge and then gently coat them in brown sugar. Let them dry as you get together the ingredients for the drinks.
  • To make the Mojitos:
  • In the bottom of four heavy highball glasses, divide the mint and lime wedges evenly between the four glasses, 2 tablespoons simple syrup to each glass and use a muddler to smash them all together and release the mint oil and lime juice.
  • Add ice cubes, rum and blood orange soda to fill the glass most of the way. Put a floater of cranberry juice on the top (a couple tablespoons) You could serve as is (I love the look of the floater and the two different colors) or stir them together.
  • Garnish with fresh mint, cranberries and candied ginger.

1/2 orange, cut into 3 wedges

2 teaspoons sugar
1 or 2 sprigs fresh mint
2 1/2 ounces white rum
1 cup crushed ice

Steps:

  • Put the oranges, limes, sugar, and mint in a large rocks glass. Muddle the leaves and citrus by pressing them with a pestle or a wooden spoon until juicy and fragrant. Add the rum and ice. Cover with a cocktail shaker and shake vigorously, or stir, until combined and chilled, about 30 seconds. (In general, by the time the shaker mists up the drink is ready.) Serve.

This cranberry and ginger mojito is the perfect festive cocktail and can be made in big jugs and served during your Christmas festivities.

2 cups cranberries (I used frozen)
1 cup sugar
2 cups water
1-2 tablespoons grated ginger (to taste)
Juice of 1 lemon
2 parts cranberry & ginger syrup
1-2 parts white rum
1 tablespoon lime juice
soda water/club soda
frozen cranberries
lime wedges
fresh mint leaves
ice cubes

Steps:

  • For the syrup, combine all the ingredients in a saucepan and bring to a boil.
  • Allow to simmer for 5 minutes then remove from the heat and allow to cool slightly.
  • Blend the mixture until smooth then strain to remove all the fruit pulp.
  • Allow to cool completely.
  • To make the mojito, pour syrup into the bottom of a tall glass, add ice, cranberries, mint leaves and lime wedges. Add the rum and top with soda water/club soda.
  • Serve.

4 shots white rum
1 (12-ounce) can club soda or seltzer water

Steps:

  • Divide the citrus fruit, mint leaves and sugar between 4 glasses. Muddle the fruit until the juice has been extracted. Add a shot of rum to each glass and stir. Fill each glass with ice. Top with club soda, stir and serve garnished with a mint sprig.
