2 tbsp. olive oil
1 lb. carrots
2 Yellow bell peppers
2 c. diced sweet onion
4 clove garlic
2 tsp. each ground cumin and sweet paprika
5 1/2 tsp. salt
1/4 c. fresh lemon juice
Garnish: fresh chives
- Heat oil in a medium pot over medium heat. Add next 6 ingredients, cover and, stirring occasionally, cook 15 minutes until vegetables are very soft but not brown. Add 4 cups water and the salt. Simmer covered 10 minutes to blend flavors.
- Purée in batches in food processor or blender until as coarse or fine as desired. Pour into a container, stir in lemon juice and refrigerate until cold, or up to 4 days.
- Garnish servings with chives.
