2 ounces white rum
1/2 ounce elderflower liqueur, such as St. Germaine
2 ounces pineapple juice
1 ounce fresh lime juice
1 ounce mango juice or mango nectar
Ice
Float of spiced rum
1/4 ounce grenadine
Lime wheel, for garnish
Orange wheel, for garnish
Pineapple wedge (unpeeled), for garnish

Steps:

  • To build the punch: In a shaker, combine the spirits and juices. Shake well, and then pour over ice in a tall island-style glass. Float the spiced rum and grenadine on top.
  • Garnish with the lime and orange wheels and the pineapple wedge.

Steps:

  • Mix all of the ingredients in a large bowl and whisk until smooth. Refrigerate until ready to serve. Serve chilled.

1 liter ice (or ice ring)
1 liter apple juice (chilled)
6 ounces orange juice concentrate
6 ounces lemonade concentrate
1 pint lemon sherbet
2 liters ginger ale (chilled)

Steps:

  • Pour the apple juice into a large punch bowl and dissolve the Orange and Lemonade concentrates inches Stir the ginger ale into the mix and then spoon in sherbet and add ice ring. Serve immediately.

The clam that Rhode Islanders call a quahog possesses an impressive variety of names, and even the word "quahog" has more than one spelling and a number of pronunciations: KO-hog, KWO-hog, and KWA-hog. Indians used quahog shells to make beads that were used as money (called wampum). Although quahogs can be found along the North American Atlantic coast from Canada's Gulf of Saint Lawrence to Florida, these clams are particularly abundant between Cape Cod and New Jersey. From the New England chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

1 quart quahog, shucked (reserve all of the liquor)
12 slices bacon or 12 slices salt pork, finely diced
1 onion, peeled and sliced
4 cups potatoes, peeled and cubed
3 cups water, boiling
1 quart milk
1/4 cup flour
salt and pepper, to taste
1 tablespoon butter or 1 tablespoon bacon fat
1 tablespoon flour

Steps:

  • Mince the clams.
  • Place bacon or salt pork in the bottom of a large kettle and fry for five minutes.
  • Add onion and cook until golden.
  • Cover potatoes in boiling water; parboil for five minutes.
  • Drain and reserve water.
  • Place a layer of potatoes and a layer of minced clams in the kettle with onion; sprinkle with flour and salt/pepper.
  • Add remaining potatoes, dredge remaining flour and salt/pepper.
  • Cover with 3 cups of boiling water (including the potato water) and simmer for 15 minutes or until potatoes are soft.
  • Add milk and bring up to boiling point.
  • Blend butter or bacon fat with the tablespoon of flour; add clam juice and stir until thickened.
  • Add slowly to chowder just before serving.
  • Serve hot with crackers.

Edinburgh used to be known as "Auld Reekie" (Old Smokie) in the days of coal fires - Robert Louis Stevenson, who was a sickly child, used to complain about it in the 19th century. Here is a recipe for a rich, sweet dessert which recalls those days. The original recipe used almond flavoured "ratafia" biscuits/cookies but as these are not easily available, almond flavoured cookies or macaroon biscuits or similar can be used. recipe from rampantscotland.com

1/2 pint double cream
1 ounce caster sugar (fine granulated)
2 ounces macaroons
almond essence
drambuie
1 ounce sliced almonds

Steps:

  • The cream should be whipped until it is stiff and the sugar added to your own preference. Crush the macaroon biscuits and mix well with the cream. Add a few drops of almond essence and Drambuie liqueur (or rum, whisky or brandy) to taste. Serve well chilled as a luxury dessert.

2 lbs fresh sea scallops
1/3 cup dry white vermouth
1 garlic clove, minced
2 onions, thinly sliced
1/4 cup olive oil, plus
1 tablespoon olive oil
2 cups peeled chopped Italian-style tomatoes
3 tablespoons butter or 3 tablespoons margarine
2 tablespoons minced fresh parsley
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
toasted French bread, slices

Steps:

  • Combine first 3 ingredients; stir well. Let stand 30 minutes.
  • Saute onion in olive oil in a Dutch oven until onion is tender. Add chopped tomatoes; cover and cook until tomatoes soften. Add scallop mixture, butter, minced parsley, salt, and pepper; cook, uncovered, until scallops are done, 7 to 8 minutes.
  • Serve stew over toasted French bread slices.

2 cups white sugar
1 (12 fluid ounce) can frozen lemonade concentrate
1 (12 fluid ounce) can frozen orange juice concentrate
1 pint Orange sherbet
1 liter ginger ale
1 liter carbonated water
1 (4 ounce) jar maraschino cherries
1 orange, sliced in rounds
4 cups ice

Steps:

  • Bring water to a boil. Add the sugar and boil until it becomes a syrup. Let cool.
  • In a punch bowl combine lemonade, orange juice, ginger ale, and carbonated water. Mix in the sugar syrup. Add ice and sherbet.
  • Just before serving add cherries and cherry juice and float orange slices on top.
