HEART HEALTHY CORNBREAD
This recipe comes from the "Wild Wild West Cookbook" I was given by my wonderful friend Tammie in the Bi-Annual Cookbook Swap 2009. Ive adapted it slightly, but will list my changes as options as it would be great otherwise also. This makes for a grainy, only slightly sweet, but super tasty bread, which can be enjoyed either with a savoury meal oron its own spread with butter and jam/honey. This is a very versatile recipe, which can be changed easily to suit the meal youre making. Please feel free to play with it. I could think of adding some vanilla or cinnamon to the batter for a more cakey version or using some chili powder and other spices for a hearty one.

Steps:
- Combine flour, cornmeal, baking powder (spices if using, see description) and sugar in a big bowl.
- In a second bowl beat together egg whites (or egg), milk and oil. Stir into dry ingredients until just combined.
- Stir in corn kernels if using and fill into prepared tin (either a 8 inch pie plate or muffin tins).
- Bake at 400°F for about 20 minutes (until tester comes out clean).
- Enjoy!
LOW FAT CORNBREAD
Delicious cornbread that won't clog your arteries. I've adopted this recipe as it didn't have a loving owner. I have made it myself and you can read my comments in my review! I have updated the cooking time and added optional ingredients.

Steps:
- Preheat oven to 400 degrees F.
- In a medium mixing bowl, combine dry ingredients.
- Stir in yogurt and eggs. If using stir in corn and jalapeno peppers.
- Pour into 8 inch square pan sprayed with cooking spray (or use a cast iron skillet).
- Bake for approximately 20 minutes.
- Best served warm.

- Preheat oven to 400 degrees F.
- Grease a 9-inch cake tin.
- Combine the dry ingredients thoroughly.
- Add the mashed beans, sour cream and hot water to the dry ingredients, blend but do not beat.
- Bake for 25-30 minutes in a 400F oven, cool completely in tin.
- *Note* This is a very heavy bread, and as it has no fat it can dry out if overbaked!

LOW-FAT CORNBREAD
We love cornbread, but a lot of recipes are either too dry or too high in fat for my liking. I played around with one of our favorite recipes to try and come up with a balance between the two. I was pleased with the results. The family loves the cornbread, and I can eat it guilt free!

Steps:
- Combine all the dry ingredients in a mixing bowl. Add the remaining ingredients and mix just until moistened. Batter will be lumpy.
- Pour into a greased 8-inch square baking pan.
- Bake at 350°F for 35 minutes or until light golden brown on top. Serve warm or cool.

FAT FREE CORNBREAD
This is my own variation of a great healthy recipe published by Dr. Dean Ornish. I love this with bean soups. The 7x9 pan fits perfectly in the toaster oven. A jar of applesauce goes bad quickly in my home, so I started buying the 6 packed individuals.

Steps:
- Preheat oven to 425 degrees.
- Spray a 7 x 9 nonstick pan lightly with nonstick spray.
- In a medium bowl, stir flour, cornmeal and baking powder together.
- In a large bowl, whisk together milk, applesauce and egg whites.
- Preheat the pan 1 minute, not to burn the spray.
- Lightly stir all ingredients to a lumpy blend in the large bowl and pour into preheated pan.
- Bake 20 minutes or until top is lightly browned.
LOW FAT, SUGAR FREE CORNBREAD
This is a low cal modification of my mom's cornbread recipe. Using Splenda instead of sugar and "I Can't Believe It's Not Butter Lite" instead of butter or oil, makes a big difference in calories but not in taste. I just made some to serve with chili and it was great!

CORNBREAD (LOW FAT)
This is an adopted recipe and is a lowfat twist on southern cornbread. I still prefer my regular skillet cornbread, but if low fat is one of your requirements you might like this one.

- Beat egg whites until soft peaks form.
- Mix dry ingredients together in bowl.
- Stir in yogurt.
- Fold in the egg whites.
- Mix well.
- Bake at 400 degrees in 8" square or round pan. (I used a cast iron skillet sprayed with cooking spray) for about 20 minutes.
