Quickest Macaroni and Cheese Sauce image

A homemade macaroni and cheese sauce recipe that's ready in 5 minutes. It's super cheesy and delicious!

3 cups sharp cheddar cheese
2 Tbsp. all-purpose flour
1 tsp. salt
2 cups cold milk

Steps:

  • Measure cheddar into blender. Sprinkle with flour and salt.
  • Put lid on blender and shake to disperse flour.
  • Add milk and pulse until well blended. The cheese will be grainy.
  • Transfer to microwave-safe bowl and microwave on high 30 seconds at a time, stirring after each time, until very thick and hot, 3-4 minutes.
  • Stir well to make it smooth.

I just got a Blendtec and I'm truly impressed with it's capabilities. (I think this would work well in a Vitamix too?) This recipe lets you blend the ingredients and pour onto cooked macaroni and then into the oven to bake. No more chopping onions or melting cheese on the stove top!! You can even heat the milk in the microwave instead of the stove top if you want

2/3 lb lb elbow macaroni, uncooked
10 ounces oz cheddar cheese (any kind you like)
1 1/2 cups hot milk
1/4 cup all-purpose flour
1/2 small onion, cut into chunks
1 tablespoon Worcestershire sauce
1/4 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon mustard powder
1 pinch garlic powder
1/4 cup toasted wheat germ (optional)
1/4 cup grated parmesan cheese

Steps:

  • Pre heat your oven to 350˚.
  • Butter a 2 quart casserole dish.
  • Bring a large pot of salted water to a boil and add macaroni. Boil the macaroni until it al dente. Drain well and pour into the buttered casserole dish.
  • Next place the cheddar cheese, hot milk, flour, onion, worcestershire sauce, pepper, salt, mustard powder and garlic powder in the blender.
  • Blend until cheese is melted and onion is finely chopped.
  • Pour cheese mixture over macaroni. Sprinkle top with wheat germ and parmesan cheese.
  • Bake uncovered 30 minutes or until done.

i was looking for the ultimate mac n cheese recipe and found this old one i had forgotten about. even picky dd4 had 2 servings. it's wonderful.obviously this is not gluten free, since it uses macaroni, but there is no added flour in the cheese sauce.

1 cup milk
4 ounces yogurt or 4 ounces cream cheese
1/2 cup vermouth
2 eggs, beaten
1/4 teaspoon cayenne (to taste)
salt, to taste
pepper
16 ounces grated sharp cheddar cheese
12 ounces macaroni
4 tablespoons breadcrumbs
2 tablespoons butter
cooking spray

Steps:

  • heat oven to 350.
  • add macaroni to boiling water and cook for 7 minutes, drain and return to pot.
  • meanwhile heat milk, vermouth and yogurt in a saucepan until just about to simmer, remove from heat.
  • beat eggs in a bowl.
  • add milk to eggs, slowly, stirring to temper.
  • return to saucepan and cook on low heat until starting to thicken.
  • stir in 12 oz of cheese stirring to melt.
  • add to macaroni, mix well.
  • spray a 2 quart baking dish or an au gratin dish with cooking spray, add macaroni.
  • top with 1 cup cheese, bread crumbs and pieces of butter.
  • bake 35 minutes until bubbling.
  • you can stick it under the broiler for a few minutes if you like it browner.

But most people are delighted by any homemade macaroni and cheese. It is light years ahead of the boxed versions. This creamy version has one powerful advantage for the cook: There's no need to preboil the pasta. It cooks in the oven, absorbing the liquid from the dairy products.

Number Of Ingredients 10

2 tablespoons unsalted butter
1 cup cottage cheese (not low-fat)
2 cups milk (not skim)
1 teaspoon dry mustard
Pinch of ground cayenne
Pinch of ground nutmeg
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 pound sharp or extra-sharp Cheddar, grated
1/2 pound elbow pasta, uncooked

Steps:

  • Heat oven to 375 degrees and position an oven rack in upper third of oven. Use 1 tablespoon butter to grease a 9-inch round or square baking pan.
  • In a blender, purée cottage cheese, milk, mustard, cayenne, nutmeg and salt and pepper. Reserve 1/4 cup grated Cheddar for topping. In a large bowl, combine remaining grated Cheddar, milk mixture and uncooked pasta. Pour into prepared pan, cover tightly with foil and bake 30 minutes.
  • Uncover pan, stir gently, sprinkle with reserved cheese and dot with remaining tablespoon butter. Bake, uncovered, 30 minutes more, until browned. Let cool at least 15 minutes before serving.
