- Boil spinach (not too well done). Remove from heat, wash spinach in cold water, squeeze dry. Put through food grinder and set aside. Grind bacon and saute in a skillet. Grind onion and add to bacon with garlic, salt and pepper. Saute until all moisture is gone.
- Make a medium cream sauce with butter, flour and milk (see note above). Add ground spinach, onion, and bacon mixture to the cream sauce and bring to a slow boil. Remove from heat and serve. ***The instrructions say to make a medium cream sauce with butter, flour and milk. This is a béchamel (bay-shah-MEL) sauce, which is a French white sauce that can be made thin (1 tbsp each butter and flour to 1 cup milk), medium (2 tbsp each butter and flour to 1 cup milk), or thick (3 tbsp each butter and flour to 1 cup milk). You make the sauce by stiring the milk into a roux, which is made by slowly mixing the flour into the softened butter over very low heat.
CRITCHELL HOUSE PRIME RIB SOUP
I've been making this for a while, but had never written anything down. Needless to say, it was always a little different, depending on which vegetables I ended up using. My DH would always say "That was good, can we have it again?" To which I would reply....No! His obvious response was.... "Why don't you ever write anything down?" Okay, so this time I did. This is a great recipe to use up any fresh or frozen vegetables. Needless to say, as long as you start with a good base, you are almost always guaranteed to be successful. This is quite filling, and wonderful served with recipe #137007. You really won't have room for much else. I hope you enjoy this as much as we do. Cooking time does not include refrigeration time.

- In a medium saucepan, bring to a boil, water, beef bones, barley, carrots and garlic. Reduce heat and simmer, covered, for 1-1/2 hours.
- Remove from heat and allow to cool slightly. Remove bones, meat and carrots. (you won't find the garlic :) ) Shred the meat and return to the broth mixture. Discard the carrots, bones and any fat.
- Refrigerate the broth to allow any remaining fat to harden. This makes it easier to remove. At this point, you can either continue on with the recipe, or the broth may be refrigerated for up to 3 days. You could probably freeze it as well, but I never have.
- Once the fat has been removed, return the broth to the stove and heat to boiling.
- Add in the salt, pepper, Bovril, potatoes and onion. Reduce heat and simmer, covered, for approx 25 minutes, stirring occasionally.
- Add noodles and vegetables. Continue to simmer for about 20 minutes, or until the noodles are tender, stirring occasionally.

- In a large saucepan, mix together the Au Jus sauce, using all ingredients to taste. (I keep onion soup mix in an old spice jar to use as a seasoning) I start with 8 oz. of water, 2 teaspoons pepper, 1 tsp Worcestershire, 8 oz. Au Jus, 2 tsp soy sauce, 2 tbsp of onion soup mix and a dash of cayenne. Simmer.
- In a skillet, melt butter then combine chopped green peppers, onions and mushrooms with black pepper. Add soy sauce and Worcestershire. Sauté on medium heat until veggies are tender crisp.
- Slice the leftover prime rib so that it is at a 1/2 inch (or less) thickness, then set in the simmering Au Jus.
- Cut French bread diagonally, toast pieces in toaster.
- Spread french onion dip on both pieces (top and bottom).
- Layer on prime rib from Au Jus.
- Put sauteed mushroom, onion, green peppers on top of meat.
- Cover with pepper jack cheese.
- Broil sandwich open-faced for 2-3 minutes or until cheese is slightly golden.
- Serve with small bowl of Au Jus for dipping.

- 1. Remove standing rib roast from packaging and let stand at room temperature for 30 minutes. With a sharp knife, cut slits crosswise, about 1/4″ deep throughout the roast. In a small bowl, mix seasonings together and liberally rub the roast. Preheat oven to 450 degrees. Place roast in roasting pan and cook for 20 minutes to brown the outside. Turn heat to 325 degrees and cook 12 minutes per pound. Medium rare registers 120 degrees. Let stand for 10 minutes. Slice and serve.

- Preheat oven to 450°F Place the roast in a shallow roasting pan and allow it to rest out of the refrigerator for 30 minutes, to bring the meat to just about room temperature. Combine seasonings to make rub. Rub the meat all over with this mixture, patting it into the meat -- particularly on top. Place the roast in the oven for 15 minutes or until the meat starts to brow (the high heat will sear the roast, sealing in the juices.) Reduce the heat to 350°F and continue to cook 12-15 minutes per pound, depending on the desired degree of doneness. Remove roast from the oven and allow the meat to rest for 20 minutes. Before carving, slice a piece of the exterior rosemary-scented fat from the meat and rub it into the carving board to further season roast.
- Gravy (optional). For gravy, thicken the pan juices with enough flour to make a paste (start with 1/3 cup.) Cook over moderate heat for 10 minutes, stirring constantly until the flour has browned and thinned slightly. Whisk in enough stock for a smooth sauce (about 2 cups for the average roast.) Simmer 10 minutes and adjust seasonings with salt, pepper, rosemary and/or parsley.

- Preheat oven to 450-degrees Fahrenheit.
- Pull back the fat cap from the roast and brush the meat all over with some of the stock.
- Coat the meat all over with half of the pickling spice and rub it inches.
- Combine the black pepper and garlic powder with the salt, then divide this mixture in half and sprinkle half of it over the meat.
- Leave the onions in whole rings and layer them over the meat.
- Return the fat cap to its original place.
- Tie the roast back together with kitchen twine at 2-inch intervals.
- Place the meat in a large, deep roasting pan, making sure that fat cap is facing up. Pour the remaining stock into the pan.
- Season the outside of the meat with the remaining pickling spice and remaining spice-salt mixture.
- Roast for 20-25 minutes (at 450-degrees Fahrenheit). Reduce oven temperature to 350 degrees F and roast for an additional 1 hour 15 minutes - 1 1/2 hours or until a meat thermometer reads 130-degrees F for rare or 140-degrees F for medium-rare or longer if you prefer, but be careful not to over-cook so it won't be over-done and dry. (The best way to acquire perfect results is by using a reliable meat thermometer).
- Remove the meat from the oven and let sit in a warm place for 20 minutes before slicing (this will help the beef retain its juices, therefore resulting in juicy/moist meat. If it is sliced right away, the juices are released prematurely).
- Slice the roast, discarding the fat cap, and serve.
