BLACKCURRANT COCONUT SLICES
Cut this tasty traybake into bars with a layer of fruit jam in the middle - swap for raspberry, blackberry or gooseberry if you prefer

- Heat oven to 180C/160C fan/gas 4. Grease a 20 x 23cm traybake tin with a little butter and line the base with a long strip of baking parchment that extends above the rim of the tin at either end - this will make it easier to get the slices out of the tin later.
- To make the base, tip the flour, sugar and coconut into a bowl, mix everything together, then rub in the butter with your fingers to make coarse crumbs. Stir in the egg yolks with the blade of a knife, then bring the mixture together with your hands to make a dough. Press the dough into the base of the tin, smoothing it with the back of a spoon to make an even layer. Spread the jam over most of the dough, keeping it a little bit away from the sides of the tin.
- To make the topping, whisk the egg whites with an electric hand whisk until stiff, then gradually add the sugar to make a glossy meringue. Fold in the desiccated coconut, then spoon over the jam layer. Scatter with the coconut flakes, if using, and bake for 25 mins until golden.
- Leave to cool in the tin, then carefully lift out, using the parchment to help you, and cut into slices. Will keep in an airtight container for 2 days.

- Heat oven to 180C/160C fan/gas 4. Tip the flour, oats and sugar into a large bowl. Rub the butter into the flour mixture using your fingertips until only small pea-size pieces remain. Stir through the coconut, then fill a teacup with the mixture and set this aside.
- Stir the eggs into the bowl of mixture, then spread over the bottom of a lined baking tin (31 x 17cm), or a 21cm square tin. Smooth the surface with the back of a spoon, then scatter over the blackberries. Scatter over the reserved teacup mixture and bake for 1 hr-1 hr 15 mins until golden and cooked through (if you poke a skewer in, it should come out with moist crumbs but no wet mixture). Leave to cool, then remove from the tin and cut into squares. Serve with some extra berries, if you like. Great for teatime or to pop into a lunchbox.

- Melt the butter in a pan over a low heat. Put the biscuits into a plastic bag and crush with a rolling pin into fine crumbs (or whizz briefly in a food processor). Stir them into the melted butter with the coconut and demerara sugar. Press the mixture firmly into the base and up the sides of a 12cm x 35cm rectangular loose-bottomed tart tin. Chill.
- Whizz 200g of the blackcurrants and 50g of the golden caster sugar in a food processor until smooth. Rub through a sieve into a small bowl.
- To make the sauce, gently heat 100g of the blackcurrants in a pan with 40g sugar for 3 minutes until the berries burst. Rub through a sieve into a bowl, then cover and chill.
- Beat the cream cheese, lime zest and remaining 75g sugar in a bowl until smooth, then slowly beat in the lime juice. Fold in the crème fraîche, then the blackcurrant purée. Spoon the mix into the biscuit case and swirl the top. Chill for at least 2 hours.
