- For the puree: Add the blackberries to a medium saucepan with the sugar and lime juice. Cook over low heat, covered, 20 to 25 minutes. Strain using a fine mesh strainer, pressing the berries to extract as much juice/puree as possible. Place in the fridge to cool completely.
- For the lime sugar: Mix together the sugar and lime zest. Use a piece of lime to moisten the rim of each margarita glass, and then dip in the lime sugar.
- For the margaritas: In a blender, add 1 cup of the tequila, 1/4 cup of the triple sec, 1/4 cup of the sugar, and the juice of 1 lime. Fill the blender with ice and blend until smooth. Then add as much blackberry puree as desired, 1/3 to 1/2 cup. Pour into 4 rimmed glasses and serve immediately. Repeat with the rest of the ingredients for the other 4 glasses.

- Place 14 blackberries and 2 thyme sprigs in medium bowl. Press firmly on solids with muddler or back of wooden spoon until mashed. Mix in tequila, simple syrup, lime juice, and Cointreau, then 1 cup ice. Stir to blend well. Strain into large glass measuring cup. Mix in sparkling wine. Divide remaining ice between 2 tall glasses. Pour Margarita mixture over. Garnish each with 1 blackberry and 1 thyme sprig.

- For the Blackberry Simple Syrup: add 6 oz. of fresh blackberries, water, and sugar to a small saucepan. Bring to a boil. Using a fork or wooden spoon, smash the blackberries. Let simmer for 2-3 more minutes. Strain the mixture so as to remove the blackberry seeds. Place blackberry simple syrup in the refrigerator to cool.
- For the Blackberry Juice: add 6 oz. of fresh blackberries and fresh thyme leaves to a food processor. Blend until pureed. Add water to the mixture. Blend more until combined. Pour mixture through a mesh strainer and press juice through. Set aside.
- To a pitcher add, grand marnier, 1 cup blackberry simple syrup, tequila, fresh lime juice, 1 1/2 cups of blackberry juice. Stir.
- Pour mixture over ice and garnish with fresh thyme leaves (stronger encouraged to enhance the thyme flavor)

- Begin by making the simple syrup: add berries, thyme, water, and sugar to a saucepan and bring to a boil. Then, reduce heat to a simmer and simmer for 10 minutes, using a wooden spoon to break down the blackberries.
- Remove saucepan from the heat and pour the mixture through a strainer and into a pitcher; discard the blackberries. Allow the syrup to cool to room temperature before using it.
- For the margaritas: Salt the rim of 2 glasses (optional) and fill each one with ice. Add tequila, lime juice and 1/4 cup simple syrup to a cocktail shaker and shake for 15 seconds. Pour into the glasses, then top them off with sparkling water. Enjoy!
