MAMA'S BLACKBERRY COBBLER

Alabama has some tasty fresh blackberries. Decades ago, my mama was heading out to pick blackberries to make a cobbler, but she ended up going to the hospital to have me instead. This is her mama's recipe. The blackberries start on top, but then end up tucked under a golden brown crust after it's baked. -Lisa Allen, Joppa, Alabama

1/2 cup plus 2 tablespoons melted butter, divided
1 cup self-rising flour
1-1/2 cups sugar, divided
1 cup 2% milk
1/2 teaspoon vanilla extract
3 cups fresh blackberries or frozen unsweetened blackberries

Steps:

  • Preheat oven to 350°. Pour 1/2 cup melted butter into an 8-in. square baking dish. In a small bowl, combine flour, 1 cup sugar, milk and vanilla until blended; pour into prepared dish. In another bowl, combine blackberries, remaining 1/2 cup sugar and remaining 2 tablespoons melted butter; toss until combined. Spoon over batter., Bake until topping is golden brown and fruit is tender, 45-50 minutes. Serve warm.

1/2 stick butter, melted, plus more for greasing pan
1 1/4 cups plus 2 tablespoons sugar
1 cup self-rising flour
1 cup whole milk
2 cups fresh (or frozen) blackberries
Whipped cream and/or ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with butter.
  • In a medium bowl, whisk 1 cup sugar with the flour and milk. Whisk in the melted butter.
  • Rinse the blackberries and pat them dry. Pour the batter into the baking dish. Sprinkle the blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the blackberries. Bake until golden brown and bubbly, about 1 hour. When 10 minutes of the cooking time remains, sprinkle the remaining 2 tablespoons sugar over the top. Top with whipped cream or ice cream . . . or both!

An easy blackberry sangria made with fresh blackberries for the perfect summer sangria!

2 cups blackberries
1 cup sugar
2 cup water
750 ml bottle red wine
1/2 cup pineapple juice
1/4 cup Chambord
1/4 cup orange curacao ((can substitute orange juice))
2 cups lemon-lime soda (like Sprite, Sierra Mist, etc.)
1/2 cup blackberries
2 limes (sliced)
2 lemons (sliced)

Steps:

  • In a medium saucepan over medium-high heat, add fresh blackberries, sugar and water. Stir and bring to a boil. Use the back of a wooden spoon or muddler to press on the blackberries to release their flavors and juices.
  • Turn off heat and allow to sit for 10-15 minutes.
  • Remove from stove and strain mixture through a fine mesh sieve to remove any blackberry pulp and seeds. You should have roughly 1 cup of blackberry simple syrup.
  • In a large pitcher, combine the blackberry simple syrup, red wine, pineapple juice, Chambord, and orange curacao. Add extra garnish to the serving pitcher. Stir well and keep refrigerated until ready to serve over ice. You can also serve it at room temperature.
  • Top with lemon-lime soda just before serving.
  • Garnish with fresh lemon and lime slices and top with fresh blackberries.

2 1/2 cups fresh or frozen (thawed and drained) blackberries (do not use blueberries)
1 cup sugar
1 cup Gold Medal™ All-Purpose Flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup butter, melted
Cream, whipped cream or ice cream, if desired

Steps:

  • In medium bowl, stir together blackberries and sugar. Let stand about 20 minutes or until fruit syrup forms. Heat oven to 375°F.
  • In large bowl, stir together flour, baking powder, salt and milk. Stir in melted butter until blended. Spread in ungreased 8-inch square pan. Spoon blackberry mixture over batter.
  • Bake 45 to 55 minutes or until dough rises and is golden. Serve warm with cream.

1 cup sugar plus more for dusting
3 tablespoons instant tapioca
1 tablespoon lemon juice
1 (7.75-ounce) packet butter biscuit mix (recommended: Bisquick Complete)
3/4 cup cream soda, divided

Steps:

  • Preheat oven to 350 degrees F. Spray 8 (4-inch) ramekins with butter flavored cooking spray and set aside.
  • In a bowl combine thawed blackberries, tapioca, lemon juice, 1/4 cup of cream soda and sugar. Transfer to ramekins.
  • In a large bowl combined biscuit mix and remaining cream soda. Mix until well blended. Sprinkle biscuit mix over berries. Dust with sugar. Bake for 30 to 40 minutes. Serve warm.
