This favorite of mine dates back to when I first came of age to order a cocktail in a restaurant. The sophisticated sound of the name made this drink fun to order ("I'll have a Kir Royale, please"), and made me seem like I knew what I was doing (I didn't). It was served in a tall, elegant flute, which made every occasion feel like a celebration, and still does. And, of course, the light effervescence of this drink -- i.e. the bubbles -- made me feel grown-up. It's still a favorite before-meal starter, pleasant accompaniment with a weekend brunch, or treat for a late afternoon visit with girlfriends. Though traditionally made with Champagne, I substitute prosecco. This Italian bubbly and the fresh berries dropped in the glasses, along with the cassis, provide a hint of currant flavor that trumpets your taste buds to attention, as is the duty of a first-class aperitif.

1 pint raspberries
1 1/2 to 2 tablespoons (3/4 to 1 ounce) creme de cassis
Prosecco, chilled

Steps:

  • Drop 1 to 3 raspberries in each of 4 Champagne flutes. Add 1 to 1 1/2 teaspoons creme de cassis to each glass. Top each glass with prosecco. Serve immediately.

4 tablespoons Chambord
1/4 cup fresh raspberries
1 bottle moderately priced French Champagne, chilled

Steps:

  • Place 4 Champagne flutes in the freezer for 15 minutes. Remove and add 1 tablespoon of the Chambord to each flute and a few raspberries. Fill each flute to the top with Champagne and serve immediately.

Chilled prosecco, for serving

Steps:

  • Drop 1 to 3 raspberries into 6 champagne flutes. Add 1 to 2 tablespoons creme de cassis to the bottom of each glass. Top off each glass with some prosecco. Serve immediately.

1 1/4 cups frozen unsweetened blackberries (about 5 ounces), thawed
4 tablespoons crème de cassis (preferably imported)
1 750-ml bottle chilled champagne or other sparkling wine

Steps:

  • Puree berries in processor. Press puree through sieve into small bowl; discard seeds. Spoon 1 tablespoon berry puree and 1 tablespoon crème de cassis into each of 4 champagne flutes. Fill each flute with champagne and serve.

Turn up the heat and bring everything back to a strong boil. Continue to boil vigorously for 1 minute. Turn off the heat and skim away any foam that rises to the surface.
