HOMEMADE EGGNOG
Once, I asked my mother how to make eggnog, and she showed me this recipe. After just one taste, folks will know this homemade holiday treat came from the kitchen, not from the store. -Pat Waymire, Yellow Springs, Ohio

Steps:
- In a heavy saucepan, whisk together eggs, sugar and salt. Gradually add 4 cups milk; cook and stir over low heat until a thermometer reads 160°-170°, 30-35 minutes. Do not allow to boil. Immediately transfer to a large bowl., Stir in vanilla, nutmeg and remaining milk. Place bowl in an ice-water bath, stirring until milk mixture is cool. (If mixture separates, process in a blender until smooth.) Refrigerate, covered, until cold, at least 3 hours. , To serve, beat cream until soft peaks form. Whisk gently into cooled milk mixture. If desired, sprinkle with additional nutmeg before serving.

Steps:
- In a saucepan, combine egg yolks, milk, sugar, and nutmeg; heat and stir constantly over medium heat until mixture coats a metal spoon.
- Remove from heat and place pan in a bowl of ice water.
- Stir for 2 minutes; mix in cream and vanilla.
- Cover and plastic wrap and chill at least 4 hours, or up to 24 hours.
- Place blackberries in a large glass pitcher; pour nog on top.
- Serve immediately.

Steps:
- in large pot fry bacon over medium heat.
- drain and set aside for later.
- pour off all but 3 Tbsp of fat.
- add onions to hot bacon grease.
- cook for 3 minutes.
- add the rice, 2 1/4 c of broth, tomatoes with juice, lemon juice, worcestershire and spices. lower to simmer, cover and cook for 20 minutes.
- Stir in the bacon and the shrimp and continue cooking, uncovered, for 10 minutes, adding a little more broth if the rice seems to be drying out.
- Stir the bog with a fork, taste for seasoning, sprinkle the parsley on top, and serve immediately.
NESTLES PUMPKIN NOG
A combination of pumpkin, evaporated milk, cinnamon and ice cream make up this scrumptious drink for your holiday meal. *This can be made more diabetic friendly be using Splenda in place of the honey and fat free evaporated milk for the regular and if you can get reduced or sugar free ice cream, go with that, and you'll be smiling.
