Grilling does wonderful things to fresh pineapple, so if you have never tried it, you must! I love the flavor contrasts in this recipe, which was adapted from License to Grill. The original recipe called for 'a small handful of black peppercorns (about 20)', which I find inconsistent. I have always just 'eyeballed' it and the measure given is just a guess, so please adjust according to your own tolerance for black pepper. Don't be afraid of using it with the pineapple, though, because it does compliment it nicely. This dish holds up well, so it's easy to serve to a crowd.

1 -2 teaspoon black peppercorns, finely crushed
1/4 cup light corn syrup
1/4 cup fresh lime juice (about 2 limes)
1 teaspoon dried mint
2 pineapple, peeled and cut into 1-inch-thick slices
1/4 cup roughly chopped of fresh mint

Steps:

  • In a small saucepan, combine pepper, corn syrup, lime juice, and dried mint; cook over medium heat, stirring occasionally, about 5 minutes or until just warm.
  • Remove from heat and let cool to room temperature.
  • Meanwhile, place the pineapple slices on the grill over a medium fire and cook until lightly charred, about 4 minutes per side; brush with the lime-pepper sauce during the last 30 seconds of cooking, then remove from grill.
  • Stir the fresh mint into the remaining sauce and serve 2 slices of pineapple per person, topped with several tablespoons of the sauce.

3/4 lb beef
2 teaspoons soy sauce
1/2 teaspoon sesame oil
1 egg yolk
1 1/2 teaspoons cornstarch
1/3 cup beef stock
2 tablespoons rice wine or 2 tablespoons dry sherry
2 teaspoons ground ginger
1 onion
1/2 cup pine nuts
1 teaspoon pepper
2 tablespoons hoisin sauce
2 green onions (to garnish)

Steps:

  • Slice beef 1/4 inch thick, then into 1 x 1/2 inch pieces. Place in soy sauce, sesame oil, egg yolk and starch. Set aside.
  • Mix stock, wine and ginger. Set aside.
  • Remove beef and stirfry until lightly browned, about 20 seconds. Add soy sauce mix, onion and pine nuts. Cook until pine nuts are slighly darkened.
  • Mix in hosin sauce and stock mix. Bring to a boil, cook 1 minute.
  • Scrape onto serving plate, garnish with chopped green onion.

1 lb ground sirloin
1 lb ground chuck
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
salt
6 extra-sharp cheddar cheese cubes (1-inch each)
1/4 cup fresh coarse ground black pepper (I used about 1/2 that amount)
2 tablespoons butter, softened
6 hamburger buns
6 slices cheddar cheese (thin slices)

Steps:

  • Combine ground meats in a large bowl.
  • Season with Worcestershire, dry mustard, 2 tsp salt and mix until combined.
  • Divide the meat into 6 equal portions and gently shape into a patty around a cube of cheese. Brush the patties all over with olive oil and make an imprint in the center of each patty with your thumb.
  • Spread the pepper on a shallow plate and roll the edge of each burger in the pepper until coated.
  • Preheat grill. Place burger on the cooking grate over direct medium heat.
  • Cover and grill for 4 minutes. Turn and continue grilling for 3 to 4 more minutes for medium rare burgers.
  • Top each burger with a slice of cheddar.
  • Butter both sides of buns and grill over direct medium heat until lightly toasted.
  • Serve burgers on rolls with desired toppings.

1 lb boneless skinless chicken thighs (skinless boneless breast substitution ok)
6 tablespoons cornstarch
1 large onion, diced
1 cup frozen peas and carrot
cooking oil
hot steamed rice
1/4 cup oyster sauce
1 teaspoon dark soy sauce
1 teaspoon black pepper
1/2 teaspoon white pepper
1 teaspoon rice wine or 1 teaspoon sake

Steps:

  • Note: This recipe calls for boneless thigh meat, which is preferred, but I tried using breast meat and the result was fine also.
  • Mix together sauce ingredients in a small bowl and set aside.
  • Cut chicken into a small dice, about 1/4-inch.
  • Heat 1-2 cups peanut or other cooking oil in your wok.
  • Place cornstarch in a small bowl and begin to dust chicken pieces, shaking off excess.
  • Fry in hot oil in small batches until crispy and golden, about 2-3 minutes; drain.
  • Remove oil from wok and discard.
  • Heat 1 tbsp oil in wok and stir-fry onion about 1 minute; add peas and carrots and cook another 30 seconds.
  • Add sauce mixture to wok along with chicken pieces and stir to coat everything evenly.
  • Serve at once with hot steamed rice.

Thankfully, I don't have a weight or heart problem...yet. ;o) I recommend using filet mignon and Italian cremini mushrooms as they are an integral part of the resulting flavor. 4 (8 ounce) center cut beef tenderloin steaks (can use sirloin steaks, but of course, it's not the same)
4 tablespoons cracked black pepper
1 tablespoon kosher salt
1 tablespoon olive oil
1 tablespoon soft butter
6 ounces cremini mushrooms (the Italian brown ones)
1 shallot, peeled and minced
1 garlic clove, peeled and minced
1/2 teaspoon kosher salt
1 teaspoon ground black pepper
1 tablespoon basil, chopped
1 cup heavy cream
2 tablespoons soft butter, unsalted

Steps:

  • While heating the oil and 1 T of butter in a large sauté pan over medium high heat, season the tenderloins with cracked black pepper and salt.
  • Place the tenderloins in the hot pan and sauté for 4 minutes, then turn and sauté for 3 minutes.
  • Cover with foil and set aside.
  • Slice mushrooms and set aside.
  • Heat 2 T soft butter in a large saucepan over medium high heat.
  • When hot, add shallots and mushrooms and sauté for 2 minutes.
  • Add the minced garlic and sauté until it becomes soft.
  • Add the heavy cream and steak juice from set-aside plate and reduce by one-third.
  • Season with salt and pepper.
  • Finally, add the basil and keep warm.
  • Have little hope of keeping your arteries open while enjoying this awesome dish.

1/2 teaspoon salt
1/4 teaspoon black pepper
1 lb flank steak, trimmed
cooking spray
1/2 cup onion, chopped
1 garlic clove, minced
2 cups shiitake mushrooms, casp thinly sliced
1 cup less-sodium beef broth
1/3 cup dry white wine
1 tablespoon blasamic vinegar
1/2 cup green onion, minced

Steps:

  • Preheat broiler.
  • Sprinlke salt and pepper evenly over both sides of steak. Place steak on a broil pan coated with cooking spray; broil 5 minutes on each side or until desired degree of donesness. Remove the steak from the oven; loosely cover with foil.
  • Heat a large non-stick skillet over medium-high heat. Coat pan with cooking spray. Add 1/2 cup onion and garlic; saute 2 minutes. Add mushrooms; saute 4 minutes. Add broth, wine, and vinegar. Bring to a boil; reduce heat to medium and reduce to 1 1/4 cups (about 6 minutes). Add green onions and cook for 1 minute.
  • Slice steak diagonally across the grain into 1/4 inch slices. Serve steak with mushroom sauce.

1/2 cup olive oil
2 garlic cloves, minced
12 basil leaves, minced
salt
2 tablespoons freshly cracked black pepper
4 (10 ounce) angus boneless strip steaks, 10 ounces each
2 idaho baking potatoes, 8 to 10 ounces each
1 1/2 lbs red potatoes, scrubbed and quartered
1/4 cup warm milk
1/2 cup sour cream, at room temperature
1/4 cup butter, at room temperature
6 tablespoons freshly grated parmesan cheese
nutmeg, to taste
salt and pepper
1/4 cup butter
8 large shiitake mushrooms, sliced
2 tablespoons finely minced shallots
1 cup white wine
1/4 cup Bourbon
1 cup heavy cream
1/2 cup beef stock
salt & freshly ground black pepper
2 teaspoons sliced chives, for garnish

Steps:

  • Pour the olive oil into a large glass dish or shallow bowl and combine with the garlic, basil, salt, and pepper. Rub this mixture into the steaks and marinate for 24 hours, turning occasionally.
  • Preheat the oven to 350 degrees. Bake the Idaho potatoes in the oven for about 1 hour, or until tender. Remove, split open lengthwise, scoop out the flesh, and reserve for another meal. Set the potato skins aside.
  • While the Idaho potatoes are baking, place the red potatoes in a large saucepan of salted water and bring to a boil. Turn down the heat and simmer for about 20 minutes, or until tender.
  • Drain the potatoes and return to the sauce pan, stirring them over medium high heat for 1 minute so they are dry. Add the milk, sour cream, butter, and cheese, and whisk or mash with a fork, leaving the potatoes a little chunky.
  • Season with nutmeg, salt, and pepper and fill the potato skins with the mixture. Keep warm.
  • Prepare the grill.
  • While the potatoes are cooking, prepare the sauce. Melt the butter in a skillet over medium heat, add the mushrooms, and sauté for 3 minutes.
  • Add the shallots and cook for 1 minute longer.
  • Add the wine and bourbon, and reduce the liquid until it has evaporated. Add the cream and stock, and reduce until the consistency is syrupy, 10 to 15 minutes. Season with salt and pepper.
  • Remove the steaks from the marinade and grill over high heat for about 4 minutes on each side for medium-rare, about 5 minutes on each side for medium, or to the desired doneness.
  • Transfer to warm serving plates and add a filled potato half to each plate. Spoon the sauce around each plate and garnish with the chives.
