3 tablespoons vinegar
1 1/2 teaspoons salt
1/3 cup oil
1/8 teaspoon hot pepper sauce
2 garlic cloves, crushed
5 (16 ounce) cans black-eyed peas, rinsed drained well
1 (16 ounce) can chickpeas, rinsed, drained well
1/2 cup chopped pimiento
1/2 cup of chopped green onion
lettuce leaf

Steps:

  • In a large bowl beat vinegar and salt until salt is partially dissolved. Beat in oil, pepper sauce and garlic until well blended.
  • Add black-eyed peas, chickpeas, pimentos and green onions. Toss to coat.
  • Cover, stirring occasionally, chill several hours. Serve from lettuce lined bowl or platter.

1 large tomato, diced
1/2 medium red onion, finely chopped
1 small red bell pepper, finely chopped
1 jalapeno, finely chopped
2 tablespoons chopped green onions
2 tablespoons chopped fresh parsley leaves
1/4 cup unseasoned rice wine vinegar
1/4 cup canola oil
1/2 teaspoon sugar
Salt and freshly ground black pepper
Two 15-ounce cans black-eyed peas, drained

Steps:

  • Combine the first 6 ingredients in a bowl.
  • In a separate small bowl, whisk together the rice wine vinegar, canola oil, sugar, and salt and pepper.
  • Toss all together with the black-eyed peas and let marinate for at up to 8 hours in the refrigerator before serving.

4 15-ounce cans black-eyed peas, rinsed, well drained
4 cups diced peeled cored fresh pineapple (1 large pineapple)
1 7-ounce jar roasted bell peppers, drained, diced
1 1/2 cups minced celery
1 small red onion, minced
2/3 cup minced fresh cilantro
4 jalapeño chilies, seeded, chopped
1/4 cup country-style Dijon mustard
2 tablespoons cider vinegar
1/2 cup olive oil
Ornamental kale
Fresh cilantro sprigs

Steps:

  • Combine first 7 ingredients in large bowl. Whisk Dijon mustard and cider vinegar in small bowl. Gradually whisk in olive oil. Add to salad and toss to coat. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.) Line large bowl with kale. Fill with salad. Garnish salad with cilantro sprigs and serve.

Every time I make this, I am amazed at how delicious it is and wonder why I don't make it every night. I always get rave reviews for this simple salad. If you remove the seeds and ribs from the chilies there is really no heat.

The meat that's clinging to the hock gets chopped into bits and added back in for a toothsome texture and heartiness that'll satisfy the whole family. 1 tablespoon olive oil
1 medium onion, chopped
2 medium carrots, chopped
2 medium stalks celery, chopped
2 cloves garlic, finely chopped
1 teaspoon dried thyme leaves
1 carton (32 oz) Progresso™ reduced sodium chicken broth
3 cans (15.8 oz each) black-eyed peas, drained, rinsed
1 smoked ham hock or shank
2 tablespoons chopped fresh Italian (flat-leaf) parsley

Steps:

  • Spray 5-quart slow cooker with cooking spray.
  • In 12-inch skillet, heat oil over medium heat. Add onion, carrots and celery; cook and stir 5 to 6 minutes or until vegetables soften. Add garlic and thyme; cook and stir 1 minute. Transfer to slow cooker.
  • Add broth, black-eyed peas and ham hock to slow cooker.
  • Cover; cook on Low heat setting 7 to 8 hours or until meat on ham hock is tender and easily separated from bone.
  • Remove ham hock. Remove ham from bone; discard bone. Shred ham; return to slow cooker, and stir.
  • Skim off any excess fat from top of soup. Add parsley, and serve.
