I got this from a Taste of Home recipe that was actually for chili. It looked good, but it took a lot of time to prepare. I had black beans on hand and not a lot of time, so I revised it and came up with this quick and simple meal. My husband loved it!

1 (15 ounce) can black beans
1/2 teaspoon garlic salt
1/2 teaspoon Worcestershire sauce
1/2 teaspoon chili powder, season to your taste
1 lb kielbasa, sliced
1/4 cup onion, chopped
1 garlic clove, minced
1 (15 ounce) can tomato sauce
2 teaspoons parsley
1/4 teaspoon salt
1/8 teaspoon pepper
cooked rice

Steps:

  • Drain and rinse beans. Place in pan. Add the garlic salt, Worcestershire and the chili powder; set aside.
  • In a large skillet, sauté the kielbasa until lightly browned. Remove and add to the bean mixture. Sauté the onion and garlic in drippings until tender; add the bean mixture back into the skillet. Stir in tomato sauce.
  • Cover and simmer for 15-20 minutes.
  • Stir in parsley, salt and pepper. Serve over hot cooked rice. You can cook your rice while your bean mixture is simmering.

2 tablespoons vegetable oil
2 links andouille sausage (6 ounces), cut into 1/4-inch-thick slices (1 heaping cup)
1 bunch scallions, sliced (1 cup)
1/4 cup thinly sliced celery (from 1 stalk), plus leaves for serving
1/2 teaspoon dried thyme
1 can (14.5 ounces) diced fire-roasted tomatoes with chiles, such as Muir Glen
2 cans (each 15 ounces) black beans
Kosher salt and freshly ground pepper
2 tablespoons sour cream, for serving
Watercress, for serving (optional)

Steps:

  • Heat oil in a medium saucepan over medium-high; add sausage and cook, stirring, until crisp, about 3 minutes. Transfer to a plate. Add scallions, celery, and thyme to pan; cook until tender, about 4 minutes. Stir in tomatoes; bring to a boil and cook 3 minutes. Drain and rinse one can of beans, leaving the second in its liquid; add both to pan with 1 cup water.
  • Return to a boil, then reduce heat to low and simmer 15 minutes. If desired, remove 1 cup of mixture and purée in a blender or food processor until smooth, about 15 seconds, then return to pan. Season with salt and pepper.
  • Top each serving with cooked sausage, a dollop of sour cream, and a small handful of watercress. Sprinkle with pepper and celery leaves; serve.

2 lb dry black beans,washed & picked through for sand pebbles
4 stalk(s) celery, chopped
2 large onions, chopped
6 clove garlic, minced or chopped
4 large carrots, peeled & chopped
2-4 small sweet peppers, chopped
2 1/2 lb smoked kielbasa sausage ( or choice of your favorite)
2 tsp coarse black pepper
1 1/2 tsp kosher salt, or to taste
1 Tbsp cumin
1 Tbsp mesquite fijata spice mix (or liquid smoke if desired)
garnish- chopped onion, salsa, sweet peppers, shredded cheddar cheese, sour cream, or jalapeno peppers as desired
2 bay leaves (remove before serving)

Steps:

  • 1. Pick through dry beans, for rocks or sand pebbles & debris, then wash and add to a large pot, cover with water, cover with a tight fitting lid, and bring to a rolling boil, and boil for about 15 to 20 minutes, then lower heat to a simmer and continue to cook until beans are soft and tender, about 3 1/2 hours to 4 hours till liquid is thick and rich. Add more water as needed to keep beans covered.
  • 2. As beans begin to come to a boil, chop all of the vegetables, you can also add jalapeno peppers if desired, but we do not care for spicy food in our household, so I didn't use them. I had almost 8 cups of chopped vegetables when I was done.
  • 3. Add the chopped vegetables to the pot, and continue to cook over low heat.
  • 4. Add all of the spices, stir and continue cooking. Stirring occasionally to prevent beans from sticking.
  • 5. During the last half hour or so of cooking, cut up the smoked polish Kielbasa, and add it to the soup pot. Cover with a lid and continue to cook for about 20 to 30 minutes, stirring occasionally.
  • 6. Ladle and serve with your favorite corn Bread or Tortillas, and add your favorite garnishes. Enjoy.

CURRIED KIELBASA AND BLACK BEANS



Curried Kielbasa and Black Beans image

I know this sounds like an odd combination, but I've had this recipe for years and it's become a standard at our house. Everyone enjoys it. I got the original recipe from a magazine years ago, perhaps Cooking LIght, but it was such a long time ago that I'm no longer sure. This is my adaptation. It can be on the table in 20 minutes.

1 tablespoon olive oil
1 onion, chopped
1 tablespoon curry powder (I use the Madras, hot curry powder.)
1 lb turkey kielbasa or 1 lb smoked sausage, thinly sliced
1/2-3/4 cup chicken broth
2 (15 ounce) cans black beans, drained and rinsed
1 tablespoon white vinegar
3 -4 cups cooked rice

Steps:

  • Heat olive oil in skillet over medium heat. Add onion and curry powder and cook about 3-5 minutes, stirring often, until onion is tender.
  • Stir in sausage and broth. Simmer 3-5 minutes. Stir in beans and cook until everything is heated through.
  • Remove from heat and stir in vinegar.
  • Serve over hot rice.

Originally from Bon Appetit I really like this recipe. You can sub any sausage you want, and I actually upped the amount of kielbasa to 2 pounds.

2 tablespoons olive oil
1 1/2 lbs kielbasa, quartered lengthwise, then cut into 1/2 inch pieces
2 onions, chopped (about two cups or so)
1 red bell pepper, coarsely chopped
1 green bell pepper, coarsely chopped
4 large garlic cloves, chopped
4 (15 ounce) cans black beans, drained
1 (14 ounce) can low sodium chicken broth
1 (14 ounce) can diced tomatoes with juice
3 tablespoons chili powder
2 tablespoons sugar
2 tablespoons red wine vinegar
3 small bay leaves
1 tablespoon dried oregano
2 teaspoons ground cumin

Steps:

  • Heat olive oil in heavy large pot over medium-high heat. Add kielbasa; sauté until beginning to brown, about 12 minutes. Using slotted spoon, transfer kielbasa to bowl. If necessary, add enough oil to pot to measure 2 tablespoons (or discard all but 2 tablespoons drippings). Add onions, both bell peppers, and garlic. Sauté until beginning to brown, about 10 minutes. Add beans, broth, tomatoes with juice, chili powder, sugar, vinegar, bay leaves, oregano, and cumin. Bring chili to a boil, stirring occasionally. Reduce heat to medium, cover, and simmer 30 minutes. Return kielbasa to pot. Reduce heat to low. Simmer, uncovered, until chili is thick, stirring occasionally, about 30 minutes. Season with salt and pepper. (Can be made 1 day ahead. Cool slightly; cover and chill. Rewarm before serving.).
  • Ladle chili into bowls. Top with sour cream and green onions if desired.

This sheet-pan dinner of roasted kielbasa, caramelized cabbage and white beans marinated in a dill-and-red wine vinaigrette comes together in about a half-hour. There are many different types of kielbasa, but the smoked version typically found at American grocery stores is horseshoe-shaped and, when roasted, tastes a little like pepperoni. Feel free to play around with substitutions: You can use green or red cabbage for the Savoy, though the leaves won't get quite as frizzled and golden. Instead of dill, chives or parsley can bring freshness. Instead of shallot, use scallions, red-pepper flakes or grated garlic for sharp heat. Instead of mustard, you could use horseradish, chopped pickles or sauerkraut for briny acidity.

Steps:
