3 oz. BAKER'S Bittersweet Chocolate
1 Tbsp. oil
1 can (15.5 oz.) black beans, rinsed
3 eggs, divided
1/2 cup maple syrup
1 tsp. baking powder
1 tsp. vanilla
1/3 cup semi-sweet chocolate chips

Steps:

  • Heat oven to 350°F.
  • Melt bittersweet chocolate in small microwaveable bowl as directed on package. Stir in oil.
  • Process beans and 1 egg in food processor until smooth. Add syrup, baking powder, vanilla, melted chocolate mixture and remaining eggs; process until well blended.
  • Spoon into 12 paper-lined muffin cups; sprinkle with chocolate chips.
  • Bake 20 to 25 min. or until toothpick inserted in centers comes out clean. Cool 10 min. Remove muffins from pan to wire rack; cool completely.

1 15 ounce can of black beans, rinsed and drained
3 - 4 eggs (or flax eggs. **1 tablespoon to 3 tablespoons of water. Let sit for 15 min. Equals 1 egg))
1/2 cup pure maple syrup (or sub honey)
2 tablespoons coconut oil (melted and cooled)
1 teaspoon vanilla extract (I prefer alcohol free)
1 tablespoon brewed coffee (optional to enhance chocolate flavor)
1/2 cup high-quality unsweetened cocoa powder (or use cacao powder)
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup dark chocolate chips (plus 2 tablespoons for sprinkling on top)

Steps:

  • Preheat oven to 350 degrees F. Line a 12 cup muffin tin with baking liners and spray the inside of each liner with nonstick cooking spray.
  • Place black beans and 1 egg in food processor and process until beans are well blended.
  • Add two other eggs, maple syrup, coconut oil, vanilla and coffee; process again until smooth.
  • Next add in cocoa powder, baking powder and salt; process once more until smooth. Next fold in 1/3 cup of chocolate chips.
  • Divide batter evenly among muffin cups. Sprinkle remaining chocolate chips evenly among the tops of each muffin batter.
  • Bake for 25 minutes or until toothpick inserted into the middle of a muffins comes out clean. Place on wire rack to cool for 10 minutes, then remove muffins from tin and transfer to wire rack to cool completely.
  • Keep muffins for a day at room temperature, then transfer to fridge and place in an airtight container.

3 eggs
½ avocado, mashed
1 teaspoon vanilla extract
½ cup brown sugar
⅓ cup unsweetened dark cocoa powder
½ cup miniature semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9-inch baking pan with nonstick cooking spray.
  • Hand whisk eggs, mashed avocado, and vanilla extract in a large bowl. Add black beans. Puree mixture with an immersion blender, until all of the black beans are mashed and batter is smooth.
  • Mix brown sugar and dark cocoa powder together in a separate bowl. Add to batter and blend by hand with a wooden spoon until completely mixed. Stir in chocolate chips. Pour batter into the prepared pan.
