Time 40m

Yield 4 servings

Number Of Ingredients 14

2 tablespoons extra-virgin olive oil
2 bell peppers (1 red, 1 green), cut into 1/2-inch pieces
3 scallions, sliced (white and green parts separated)
3 scallions, sliced (white and green parts separated)
2 stalks celery, diced
2 cloves garlic, finely chopped
2 tablespoons tomato paste
Pinch of cayenne pepper
Kosher salt
1 cup quinoa
2 15-ounce cans black and/or kidney beans, drained and rinsed
4 cups baby spinach (about 3 ounces)
1/2 cup shredded cheddar or pepper jack cheese
Hot sauce, for serving (optional)

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, scallion whites and celery and cook, stirring, until soft, about 5 minutes. Add the garlic, tomato paste, cayenne and 1/2 teaspoon salt and cook, stirring often, until the tomato paste turns brick red, about 2 minutes. Stir in the quinoa, then add 2 cups water and the beans. Bring to a simmer and cook, stirring often, until most of the water is absorbed and the quinoa is cooked through, about 15 minutes. Add up to 1/4 cup more water if necessary.
  • Remove the skillet from the heat and stir in the spinach until just wilted. Stir in 1/2 teaspoon salt and half each of the scallion greens and cheese. Divide among bowls and sprinkle with the remaining scallion greens and cheese. Serve with hot sauce.

Provided by James Briscione

Categories     main-dish

Time 1h20m

Yield 4 servings

Number Of Ingredients 12

1 cup quinoa, well rinsed
Kosher salt
2 tablespoons olive oil, plus more for oiling and drizzling
4 garlic cloves, chopped
2 cups chopped yellow onion
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh parsley
1/2 cup sun-dried tomatoes, cut into pieces
One 15-ounce can black beans, drained
Suggested toppings: arugula, avocado, chopped cilantro, mayonnaise

Steps:

  • Combine the quinoa, 1 teaspoon salt and 2 cups water in a small sauce pot. Bring the water to a boil, cover the pot and reduce the heat to a simmer. Cook until the water is all absorbed, 12 to 15 minutes. Transfer the cooked quinoa to a large bowl and set aside to cool.
  • Heat the olive oil in a large saute pan, add the garlic and onions and cook over medium heat until tender and lightly browned. Stir in the coriander, cumin and a pinch of salt; cook 1 minute more. Remove from the heat and set aside to cool.
  • Combine the cooled onion mixture, cilantro, parsley and sun-dried tomatoes in a food processor and pulse until finely chopped. (Do not puree.) Add the black beans and pulse again. Add the mixture to the bowl with the cooked quinoa and mix well.
  • Line a baking sheet with foil and lightly oil it. Preheat the oven to 425 degrees F.
  • Form small golf-balls from the mixture, then flatten into patties and place them on the prepared baking sheet. When all of the patties are on the tray, drizzle with additional olive oil, then roast until lightly browned on the edges, about 12 minutes. Serve with the suggested toppings.

  • Place all of the ingredients, except the oil, in a food processor fitted with the “S” blade. Alternate between the machine running constantly and pulsing, stopping to scrape the sides, until the mixture is all uniform in size. You want the consistency to be grainy not smooth.
  • Use a small ice cream scoop or a tablespoon measure to scoop up a small amount of the mixture. Roll it in between the palm of your hands to make a compact, round ball. Proceed with the rest of the batter, lining all of the falafel on a parchment paper lined baking sheet until there is no black bean mixture remaining in the food processor.
  • Pour the oil into a high sided skillet or dutch oven to a depth of 3 inches and place it over medium high heat. Place a thermometer in the oil and heat the oil until it registers between 360°F and 375 °F.
  • Meanwhile, line another baking sheet with paper towels or brown paper grocery bags to drain the cooked falafel after they have cooked.
