Fashioned after that delectable Butter Brickle Ice Cream - BUTTER BRICKLE COOKIES are buttery cookies full of toffee bits, chewy on the inside and light and a little crisp on the outside. They are sure to be an instant family favorite!

Number Of Ingredients 9

1 stick unsalted butter, softened
3/4 cup brown sugar
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons vanilla
2 eggs
2 1/4 cup Bob's Red Mill Organic Unbleached All Purpose White Flour
1 teaspoon baking soda
1 (8 ounce) package Heath Bits 'O Brickle Toffee Bits

Steps:

  • Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
  • Sift together flour, baking soda and salt, set aside.
  • In your mixer cream butter until fluffy, about 2 minutes. Add in sugars and vanilla, mix well. Add in eggs, mix until combined. Gradually add in flour mixture, mixing until incorporated. Fold in toffee bits.
  • Drop by rounded teaspoon full onto parchment lined cookie sheets. Bake 9-11 minutes or until slightly brown. Cool on wire racks.

This Heath Bits O'Brickle Cookie Recipe is melted toffee bits and milk chocolate chips make an incredibly delicious cookie!

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla (I always use Mexican vanilla extract-it's seriously the best!),
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons hot water
½ teaspoon salt
1 Cup milk chocolate chips
2 3/4 Cups (almost 2 80z bags) Heath Bits O'Brickle Toffee Bits
2 bags of Heathbits)

Steps:

  • Preheat oven to 350 degrees F
  • Cream together white sugar, butter, and brown sugar. Beat in eggs one at a time. Dissolve baking soda into hot water stir into batter. Stir in vanilla and salt.
  • Spoon flour into a measuring cup to avoid packing it down and adding too much. Pour in 1 cup at a time and stir well in mixer. Stir in Heathbits and Milk chocolate chips. Roll dough into walnut sized balls, place on cookie sheet (12 total per sheet).
  • Bake for 8-12 minutes, depending on altitude and oven type (gas or electric). At seven minutes begin checking the cookies. For super soft cookies, take them out around 8 minutes when they look puffy but not brown on the edges. Let them sit on cookie sheet for 1-2 minutes; then move them to a rack to cool. The toffee bits cause the cookies to bake faster than typical cookies.
  • They will turn out looking a tiny bit doughy. They will be soft and chewy.
  • For a more done and crisp cookie, bake for about 12 minutes or until they barely have light brown edges all the way around each one. Let them sit on cookie sheet for 1-2 minutes then move them to a rack to cool.
  • They will end up more crispy and crunchy.

1 box yellow cake mix
1/3 c butter
2 eggs
14 oz eagle brand sweetened condensed milk
8 oz bag, heath bits o'brickle toffee bits
8 oz bag, pecans, chopped

Steps:

  • 1. Preheat the oven to 350 degrees F.
  • 2. In the bowl of your stand mixer using the paddle attachment, pour in the cake mix.
  • 3. Add the butter and egg and whip until smooth.
  • 4. PAM a 13x9 pan.
  • 5. Pat the cake mix, butter, and egg batter into the pan.
  • 6. In a clean bowl, combine the sweetened condensed milk and one beaten egg.
  • 7. Fold in one-half package of the Bits O'Brickle Toffee Bits.
  • 8. Add one-half package of chopped pecans.
  • 9. Pour this mixture on top of the cake batter.
  • 10. Bake for 25 minutes.
  • 11. Remove from the oven and cut into bars while still warm.

1/4 cup vegetable oil
1 egg, lightly beaten
1/2 teaspoon vanilla extract
1/2 cup chopped pecans
1/2 cup almond brickle chips or English toffee bits

Steps:

  • In a bowl, combine the dry cake mix, vegetable oil, egg and vanilla; mix well. Stir in pecans. Refrigerate for 1 hour or until firm enough to handle., Roll into 1-in. balls; dip top of each ball into toffee bits and set 2 in. apart on greased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Cool for 3 minutes before removing to wire racks.
