3 pounds lean ground beef
4 ounces blue cheese, crumbled
½ cup minced fresh chives
¼ teaspoon hot pepper sauce
1 teaspoon Worcestershire sauce
1 teaspoon coarsely ground black pepper
1 ½ teaspoons salt
1 teaspoon dry mustard
12 French rolls or hamburger buns

Steps:

  • In a large bowl, mix the ground beef, blue cheese, chives, hot pepper sauce, Worcestershire sauce, black pepper, salt, and mustard. Cover, and refrigerate for 2 hours.
  • Preheat grill for high heat. Gently form the burger mixture into about 12 patties.
  • Oil the grill grate. Grill patties 5 minutes per side, or until well done. Serve on rolls.

Be sure and use a good quality bleu cheese (we like Stella Brand). Ideal served with with Recipe #264984. Use pita bread and add sliced tomatoes for a '2Bleu style' gyro.

1 lb lean ground beef
4 ounces blue cheese, crumbled (Stella brand)
1 egg, beaten
1/2 cup seasoned bread crumbs
1/2 teaspoon black pepper
4 hamburger buns (or Pita Bread)
4 tablespoons blue cheese, Sauce (Creamy Bleu Cheese Sauce)
1 tomatoes, sliced (optional)

Steps:

  • Mix all meat ingredients into a bowl until combined. Form 4 patties. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Heat oil and butter in a large non-stick skillet over med-high heat. Add burgers and sear to brown (about 2 minutes on each side).
  • Place burgers onto cookie sheet and bake for 20 minutes until cooked throughout. Serve with Bleu Cheese sauce on warmed buns. NOTE: These burgers can also be cooked on the grill.

3/4-1 lb ground beef
1 teaspoon dried chipotle powder
2 roasted jalapenos (I get the jarred variety)
2 scallions
1/3 cup crumbled blue cheese (get a quality variety)
2 slices Italian bread, 2 inch thick slice
1 teaspoon mayonnaise

Steps:

  • Divide meat in two parts and make two hamburger patties. Sprinkle with chipotle chile powder.
  • Slice roasted jalapeños into strips.
  • Cut scallions into two inch pieces.
  • Spread mayo on bread slices.
  • Cook hamburgers on grill to desired doneness. Top with bleu cheese at final cooking time so it will melt.
  • Lightly toast bread with mayo on it. It should be crispy on the edges.
  • Top toasted bread with burger, roasted peppers, and scallions.

2 pounds ground chuck
1 pound ground sirloin
1/2 cup seasoned dry bread crumbs
1/4 cup steak sauce (recommended: Crosse and Blackwell)
3 extra-large eggs
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
8 to 10 hamburger buns
8 ounces blue cheese, sliced (recommended: Danish Blue)
Arugula and sliced tomatoes, for serving, optional

Steps:

  • Carefully mix the meats, bread crumbs, steak sauce, eggs, salt, and pepper with the tines of a fork, but do not mash them. Lightly form hamburger patties and press lightly into shape.
  • Prepare a charcoal or a stove-top grill.
  • Cook the hamburgers for 4 minutes on 1 side, then turn and cook 3 minutes on the other side for medium-rare. Remove to a plate and cover with aluminum foil. Allow the hamburgers to rest for 5 minutes. Meanwhile, grill the buns, cut side down, for 1 minute, until toasted. Place a hamburger and a slice of blue cheese in each bun, plus arugula and tomato, if desired, and serve hot.

2 tablespoons bleu cheese crumbles (recommended: Treasure Cave)
1 1/2 pounds lean ground beef
1/2 cup bleu cheese crumbles (recommended: Treasure Cave)
1/4 cup real bacon pieces (recommended: Hormel)
1 tablespoon Montreal steak seasoning (recommended: McCormick Grill Mates)
Salt and freshly ground black pepper
4 onion rolls, toasted
Lettuce, tomato, onion
Sliced avocado, optional

Steps:

  • For bleu cheese butter:
  • In a small bowl with a fork, smash together butter and 2 tablespoons bleu cheese crumbles; set aside.
  • In a mixing bowl, stir to combine ground beef, 1/3 cup bleu cheese crumbles, bacon pieces, and steak seasoning. Wet your hands to prevent sticking and shape into 4 patties slightly larger than the buns. Cover with plastic and set aside in refrigerator.
  • Set up grill for direct cooking over high heat. Brush and oil grate before cooking. Salt and pepper burgers and place on hot grill. Cook for 4 to 5 minutes per side for medium. Serve hot on toasted onion roll. Spread with bleu cheese butter, lettuce, tomato, onion, and sliced avocado, if using.
  • INDOOR: Follow instructions for preparing burgers. Preheat broiler. Place burgers on wire rack over foil lined baking sheet or broiler pan. Broil 6 inches from heat source for 4 to 5 minutes per side for medium.

4 kaiser rolls, split
3 tablespoons mayonnaise

4 slices sweet onions
4 slices tomatoes
4 ounces thinly sliced fresh parmesan cheese
1/2 cup fresh basil leaf

Steps:

  • Heat grill.
  • In medium bowl, combine ground beef, salt and pepper; mix well.
  • Shape mixture into 4 patties, 1/2 inch thick.
  • When ready to grill, place patties on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals.
  • Cook 11 to 13 minutes or until thoroughly cooked, turning once.
  • To toast roll, place cut side down on grill during last 1 to 2 minutes of cooking time.
  • Spread cut side of each roll with mustard mayo mixture.

I'm a college student with a limited budget and a limited space for cooking. I make these burgers on a Foreman grill and they're quick and delicious!

1 lb ground beef (I usually purchase 80-20 or 85-15 since most of the fat cooks out on the Foreman grill)
2 teaspoons extra virgin olive oil
2 teaspoons Worcestershire sauce
1/4 teaspoon fresh ground pepper
1/4 teaspoon salt
3 ounces crumbled blue cheese (to go inside burger)
2 ounces crumbled blue cheese (for topping) (optional)
hamburger bun

Steps:

  • In a large bowl, mix all ingredients except blue cheese. Make sure salt and pepper are distributed evenly throughout the mixture.
  • Divide beef mixture into 4 sections (these will eventually become 4 burgers).
  • Take approximately 2/3rds of a single section, form into a burger shape, and use your thumb to form a deep imprint in the middle.
  • Fill imprint with 1/4 of the blue cheese.
  • Take the remaining 1/3rd of the beef mixture from that section and cover the blue-cheese filled imprint in the burger, flattening around the edges to ensure that the ground beef stays together and the blue cheese does not leak out.
  • Repeat and then grill burgers to desired doneness.
  • Place grilled burger on bun and top with more crumbled blue cheese if desired.
  • Watch out when you bite into the burger - the blue cheese will be hot!

2 tablespoons mayonnaise
1 tablespoon Dijon mustard
2 tablespoons honey
1 teaspoon fresh dill, chopped
1 large vidalia onions, sliced or 1 large sweet onion
1 tablespoon olive oil
1 tablespoon butter
1/2 teaspoon brown sugar
salt, to taste
black pepper, to taste
1 lb ground sirloin or 1 lb chuck
salt, to taste

8 slices cheddar cheese, thick slices (a combo of yellow and white cheeses looks stunning)
4 hamburger buns, toasted (use good quality buns)
romaine lettuce
sliced dill pickle

Steps:

  • MAKE SAUCE: Whisk sauce ingredients together in a small bowl. Set aside, allowing flavors to meld.
  • MAKE VIDALIA: In a sauté pan over medium-low heat, heat butter and oil. Add sliced onion, sprinkle with brown sugar and simmer for approximately 20-30 minutes, stirring occasionally until caramelized. Set aside, keeping them warm.
  • MAKE BURGERS: Meanwhile, preheat grill or a cast iron skillet to high. Divide the ground sirloin into 4 burgers. Season on both sides with salt and pepper, to taste. Grill or cook in the skillet for 3-4 minutes on each side for medium-rare doneness. During last minutes of cooking add caramelized onion to each burger, then 2 slices of cheese. Cover grill or pan for approximately 1 minute to melt cheese.
  • ASSEMBLY: Spread Bistro sauce on bottom of the toasted buns. Place burgers on buns. Top with suggested toppings.
