A shortbread-like dough, studded with chopped nuts, bakes up to a texture that's beautifully sandy and tender, never dry or crumbling to bits. The classic finish for them is a roll through powdered sugar-just like dashing through the winter snow! Number Of Ingredients 7

1 cup butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla
2 1/4 cups Gold Medal™ all-purpose flour
3/4 cup finely chopped nuts
1/4 teaspoon salt
Powdered sugar

Steps:

  • Heat oven to 400°F.
  • Mix butter, 1/2 cup powdered sugar and the vanilla in large bowl. Stir in flour, nuts and salt until dough holds together.
  • Shape dough into 1-inch balls. Place about 1 inch apart on ungreased cookie sheet.
  • Bake 10 to 12 minutes or until set but not brown. Remove from cookie sheet. Cool slightly on wire rack.
  • Roll warm cookies in powdered sugar; cool on wire rack. Roll in powdered sugar again.

4 cups Original Bisquick™ mix
1 1/2 cups powdered sugar
3/4 cup butter or margarine, softened
1 teaspoon almond extract
2 eggs
1 cup granulated sugar

Steps:

  • Heat oven to 400°F. In large bowl, stir all ingredients except granulated sugar until soft dough forms.
  • Shape dough into balls, about 1 inch in diameter; roll in granulated sugar to coat. On ungreased cookie sheets, place balls about 2 inches apart. Flatten balls slightly with bottom of glass.
  • Bake 5 to 6 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling racks to cool. Store in airtight container.

1/2 cup butter, softened
3/4 cup granulated sugar
2 cups Bisquick
1/2 cup walnuts, chopped
1/2 teaspoon almond extract
confectioners' sugar, to coat

Steps:

  • Preheat oven to 375 degrees.
  • In a large bowl cream butter and sugar together until fluffy.
  • Stir in baking mix, chopped nuts and almond extract.
  • Shape dough by level teaspoons into balls.
  • Place on ungreased cookie sheet. (I still lightly spray cooking spray onto cookie sheets).
  • Bake 12 minutes.
  • Cool slightly before removing from sheets.
  • Roll each ball in confectioners sugar while still warm.

1 cup sweetened flaked coconut
1 cup all-purpose flour
1 1/4 cups confectioners' sugar
salt, pinch
6 tablespoons unsalted butter, softened
1 teaspoon vanilla extract
4 teaspoons milk

Steps:

  • Grind 1/2 cup of the coconut in food processor.
  • Chop remaining coconut and set aside.
  • Add flour, 1/4 cup of the confectioners' sugar and the salt.
  • Pulse to blend.
  • Add butter and vanilla; pulse until dough comes together.
  • Heat oven to 350 degrees.
  • Roll dough into 1-inch balls.
  • Place dough balls 1 inch apart on an ungreased baking sheet.
  • Bake cookies until firm but tender, 15 minutes.
  • Remove to rack, let cool completely.
  • In small bowl, stir together remaining 1 cup confectioners' sugar and enough milk until smooth but still thick.
  • Dip cookies in glaze (about 1/2 t for each), letting it drip down sides.
  • Dip in chopped coconut and set aside for glaze to dry.

1 cup butter, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
1-1/4 cups potato starch
1 cup cornstarch
1 teaspoon xanthan gum
1/4 teaspoon salt
3/4 cup chopped walnuts or pecans
Additional confectioners' sugar

Steps:

  • In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in vanilla. Combine the potato starch, cornstarch, xanthan gum and salt; gradually add to creamed mixture and mix well. Stir in walnuts. Cover and refrigerate for 1 hour or until easy to handle., Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets. Bake at 400° for 9-11 minutes or until set. Cool on pans for 2 minutes before removing to wire racks., Roll warm cookies in confectioners' sugar. Cool completely on wire racks. Reroll in confectioners' sugar.
