This is from a Bisquick box - a great comfort dish after working all day. I make this with a Caesar salad and dinner is done!!

1 cup cooked chicken, cut into bite sized pieces
1 2/3 cups frozen vegetables, thawed
1 (10 ounce) can cream of chicken soup (I use low sodium)
1 cup Bisquick reduced-fat baking mix (regular Bisquick will work too)
1/2 cup nonfat milk or 1/2 cup milk
1 egg

Steps:

  • Preheat oven to 400°F.
  • Mix chicken, veggies and cream of chicken soup together and spread into bottom of non greased 9-inch round glass pie pan.
  • Mix remaining ingredients (Bisquick, milk and egg) and pour on top of chicken mixture.
  • Bake in oven for 30 minutes or until top turns golden brown.

Bisquick chicken pot pie is the easiest homemade chicken pot pie without soup that you can make! This layered chicken casserole is the ultimate comfort food.

1 medium Russet potato (diced, about 1 cup)
1 small carrot (diced, about 1/2 cup)
1/4 cup butter
1 medium yellow onion (diced, about 1 cup)
2 medium cloves garlic (minced)
1/4 cup all-purpose flour
2 cups whole milk
1 1/2 cups chicken broth
1 teaspoon fine sea salt
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried rosemary
1/2 teaspoon ground black pepper
2 1/2 cups cooked shredded or cubed chicken (I used rotisserie chicken)
1/2 cup frozen peas
1 cup Bisquick
1/2 cup whole milk
1 large egg
1/4 teaspoon dried thyme leaves
1/4 teaspoon dried rosemary
1/4 teaspoon fine sea salt
1 Tablespoon butter
Diced fresh parsley (optional, for garnish)

Steps:

  • Preheat the oven to 350 F (176 C). Lightly grease a 13 x 9 casserole dish.
  • Bring a medium pot of salted water to a boil. Once it's boiling, add the potatoes and carrots, and cook until they're tender (about 7 minutes). Drain and set aside.
  • While the potatoes and carrots are boiling, heat a large nonstick skillet over medium heat and melt 1/4 cup butter. Add the onions and saute until they are translucent (about 4 minutes), then add in the garlic and saute until aromatic (about 1 minute).
  • Sprinkle the flour over the butter and onions and stir to create a roux. Combine the milk and chicken broth then slowly pour into the pan while whisking constantly until you reach a smooth consistency.
  • Add in the fine sea salt, dried thyme, rosemary, and black pepper, and stir. Bring the sauce to a rapid simmer over medium-high heat. Simmer until the sauce has thickened (about 2-3 minutes).
  • Remove the sauce from the heat and stir in the shredded chicken, peas, potatoes, and carrots.
  • Pour the filling into the greased casserole dish.
  • In a medium mixing bowl, mix together the Bisquick topping ingredients and pour the batter evenly over top of the chicken pot pie filling. (This should be your final step, you don't want to make the topping ahead of time, or it will get too thick as it rests and it won't be the right consistency.)
  • Place the uncovered casserole dish into the preheated oven, and bake for 35 - 40 minutes (or until the top is golden brown).
  • Once the chicken pot pie is done, spread a Tablespoon of butter over top of the crust. Let it rest for 5 minutes, then garnish with diced fresh parsley, and serve.

1 2/3 cups frozen mixed vegetables (defrosted completely)
1 cup cut-up cooked chicken (rotisserie chicken gives this excellent flavor)
one 10.5 oz can condensed cream of chicken soup
1/4 cup milk or chicken broth
1 cup homemade Bisquick
1/2 cup milk
1 large egg
1/4 teaspoon poultry seasoning (EXCELLENT flavor boost )
pinch black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Steps:

  • Preheat your oven to 400°F. Get out a 9 inch pie plate and set aside.
  • In a medium bowl, combine the vegetables, chopped chicken, canned soup and milk/broth until combined. Spoon into the pie plate.
  • In a small bowl, combine the crust ingredients together until completely mixed. Pour on top of the vegetable filling in the pie plate.
  • Bake in the preheated oven for 30-40 minutes or until the topping is golden brown and the filling is heated through.

  • In a bowl, combine Bisquick mix, egg and milk. Stir till blended.

Leftover chicken or rotisserie chicken from the supermarket helps on the ease of preparation of this fabulous comfort style dinner. Fresh vegetables gives this a very special added flavor and is worth the effort. Everyone loves Mom's Chicken Pot Pie! Serve with a green salad.

¼ cup butter
1 small onion, chopped
3 celery ribs, chopped
3 carrots, chopped
⅔ cup frozen peas
3 tablespoons chopped fresh parsley
¼ teaspoon dried thyme
¼ cup all-purpose flour
2 cups lower-sodium chicken broth
⅔ cup half-and-half cream
salt and ground black pepper to taste
3 cups cooked chicken, cut into bite-size pieces
1 (16.3 ounce) can refrigerated flaky-style biscuits (such as Pillsbury Grands®)
1 egg yolk, beaten
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium-low heat, and cook the onion, celery, and carrots until the celery and carrots are tender, about 15 minutes, stirring occasionally. Stir in peas, parsley, thyme and flour, and cook, stirring constantly, until the flour coats the vegetables and begins to fry, about 5 minutes. Whisk in chicken broth and half-and-half, and cook until the sauce is thick and bubbling. Season to taste with salt and black pepper, and mix in the chicken meat.
  • Transfer the chicken, vegetables, and sauce into a 2-quart baking dish. Arrange biscuits on top of the filling. In a small bowl, beat egg yolk with water; brush egg yolk on the biscuits.
  • Bake in the preheated oven until the biscuits are golden brown and the pie filling is bubbling, 20 to 25 minutes. Let rest 10 minutes before serving.

4 1/4 cups uncooked wide egg noodles (8 oz)
2 cups shredded cooked chicken

1/2 cup half-and-half
2 tablespoons chopped Italian (flat-leaf) parsley, if desired

Steps:

  • In 4- to 5-quart Dutch oven, add chicken broth, egg noodles, chicken, mixed vegetables, thyme, salt and pepper (ingredients will sit above liquid).
  • Heat to boiling. Reduce heat to medium; simmer uncovered 8 to 10 minutes, stirring occasionally, until most of liquid is absorbed and pasta is tender.
  • Stir in half-and-half, and continue cooking 1 to 2 minutes or until heated through. Top with parsley.
