Biscuits for Dressing image

Use this recipe in our Cornbread and Biscuit Dressing.

Yield Makes 30 (enough for 1 recipe of cornbread and biscuit dressing)

Number Of Ingredients 4

2 1/4 cups all-purpose flour, plus more for dusting
1 tablespoon plus 1 teaspoon baking powder
1/2 teaspoon salt
2 cups (1 pint) heavy cream

Steps:

  • Preheat oven to 450 degrees. Whisk together flour, baking powder, and salt in a medium bowl. Add cream, and stir just until a dough forms.
  • On a generously floured surface, pat dough into a square, about 1/2 inch thick. Let rest for 5 minutes.
  • Cut out rounds with a 2-inch biscuit cutter. Pat together scraps, and cut out more rounds. (You should have about 30 biscuits.) Space biscuits 2 inches apart on a parchment-lined baking sheet.
  • Bake until tops are golden, 12 to 14 minutes. Let cool on sheet on a wire rack. Biscuits can be stored in an airtight container at room temperature for up to 3 days. For dressing, let stand overnight, uncovered, to dry out before crumbling.

RANCH BISCUITS

I jazz up biscuit mix with ranch salad dressing mix, then brush the golden bites with garlic butter after baking. I bake several dozen at once and store them in the freezer. The parsley-flecked biscuits go well with any entree.-Christi Gillentine, Tulsa, Oklahoma

2 cups biscuit/baking mix
4 teaspoons dry ranch salad dressing mix
2/3 cup milk
2 tablespoons butter, melted
1 teaspoon dried parsley flakes
1/8 teaspoon garlic powder

Steps:

  • In a large bowl, stir the biscuit mix, salad dressing mix and milk until combined. Drop 2 in. apart onto a greased baking sheet. , Bake at 425° for 10-15 minutes or until golden brown. In a small bowl, combine the butter, parsley and garlic powder; brush over warm biscuits. Serve warm.

8 cups dried, crumbled Cornbread for Dressing
8 cups dried, crumbled Biscuits for Dressing
2 cups coarsely chopped pecans, toasted
1/2 cup finely chopped fresh sage
1 stick (8 tablespoons) unsalted butter, plus 2 tablespoons, melted, plus more for baking sheets
1 large onion coarsely, chopped (about 2 1/4 cups)
5 celery stalks, finely chopped (about 1 3/4 cups)
4 fresh serrano chiles, minced (about 1/4 cup)
6 cups homemade or low-sodium store-bought chicken stock
2 cups whole milk
2 large eggs, lightly beaten
1 tablespoon plus 1 1/2 teaspoons coarse salt
1 teaspoon freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Butter 2 rimmed baking sheets. Toss cornbread, biscuits, pecans, and sage in a large bowl.
  • Melt 1 stick butter in a skillet over high heat. Add onion, celery, and chiles, and cook until softened, about 7 minutes. Add to cornbread-biscuit mixture, and stir in stock, milk, eggs, salt, and pepper (mixture will be liquidy).
  • Divide among prepared baking sheets, and bake for 45 minutes. Brush dressing with melted butter, and bake until crusty, about 15 minutes more.

HOMEMADE DRESSING



Homemade Dressing image

This dressing recipe has been passed on from generation to generation. Our Thanksgiving would not be complete without this dressing! Throughout the years, we have added mushrooms. But when kids came into the picture again, we had to take them out. This dressing is so good that we would make 2 pans of it, one with onions and one without for the relatives that couldn't tolerate onions any longer (usually the older generation). Regardless, we always have this dressing!

Number Of Ingredients 9

5 -6 cups homemade cornbread, cubed
4 -5 cups homemade biscuits, cubed
1/4-1/2 cup butter, melted
1 cup celery, chopped
1/2 cup onion, chopped
2 eggs, well beaten
5 -6 cups chicken stock, equal to cornbread
poultry seasoning, to taste, at least 1/2 tsp
salt and pepper, to taste

Steps:

  • Saute the onion and celery in the butter until tender. Add mushrooms if you would like!
  • Combine all ingredients in a large bowl; mix well. I use a healthy sprinkling of poultry seasoning -- that is what makes it smell soooo good while cooking!
  • Place into a 13x9x2 inch baking dish.
  • Bake at 350 degrees for 25 to 30 minutes.
  • If dressing begins to look too dry, add more chicken stock. (While waiting on the turkey to finish, you might leave the dressing in the oven -- in this case, add more chicken stock!).

1 package (8-1/2 ounces) cornbread/muffin mix
1 tube (7-1/2 ounces) refrigerated buttermilk biscuits
2 medium onions, chopped
4 celery ribs with leaves, chopped
1/4 cup butter
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon curry powder
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1 can (14-1/2 ounces) chicken broth
1/2 cup water
3/4 cup egg substitute

Steps:

  • Prepare cornbread according to package directions; cool on a wire rack. Crumble into a large bowl. Prepare biscuits according to package directions; cool on a wire rack. Crumble biscuits over cornbread; stir gently to combine., In a large skillet, saute onions and celery in butter. Stir in the salt, pepper, curry powder, basil and thyme. Add to cornbread mixture. Stir in broth and water (mixture should be the consistency of cornbread batter). Let stand for 1 hour. , Stir in egg substitute. Pour into a greased shallow 2-qt. baking dish. Bake, uncovered, at 350° for 1 hour or until golden brown and a knife inserted in the center comes out clean.
